Number Of Ingredients 6

• 1 cup natural peanut butter
½ - ¾ cup honey
½ cup coconut oil (or butter if you prefer)
6 Tablespoons cocoa powder
2 teaspoons vanilla
2¼ cups gluten-free quick oats

Steps:

  • Note: You can use regular peanut butter - but of course, that will make your cookies reduced sugar rather than sugar free.
  • Combine first four ingredients in a sauce pan and warm gently on stove top.*
  • Next, add in the vanilla, oatmeal, and stir well.
  • Drop by the spoonful onto a saran lined plate and let cool. Store in an airtight container in the refrigerator - if they last that long.
  • Enjoy!

1/2 cup raw almond butter or 1/2 cup smooth cashew butter
1/4 cup pure maple syrup, agave nectar or 1/4 cup raw honey
1/2 teaspoon vanilla extract
1 dash salt
1/2 cup ground almonds

Steps:

  • For the ground almonds take 1/3 cup raw almonds and process in a food processor fitted with the S blade until finely ground.
  • Place the almond butter, maple syrup, vanilla, and salt in a food processor fitted with the S blade and process until smooth.
  • Transfer to a small bowl and freeze for 30 minutes.
  • Form into 1-inch balls and flatten slightly. Roll each cookie in the ground almonds.
  • Freeze for at least 2 hours before serving. Stored in a sealed container in the freezer, these cookies will keep for up to one month.

This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

So very easy to make, the recipe doubles very nicely. Made up a couple batches to freeze for Christmas gifts. Recipe came from an Amish Cookbook published in 1977.

1/2 cup vegetable oil
1 cup peanut butter
1/4 teaspoon salt
1/2 teaspoon vanilla
1 egg

  • Cream sugar, vegetable oil, peanut butter, salt, vanilla, egg and milk.
  • Add sifted flour and baking powder.
