Steps:
- Note: You can use regular peanut butter - but of course, that will make your cookies reduced sugar rather than sugar free.
- Combine first four ingredients in a sauce pan and warm gently on stove top.*
- Next, add in the vanilla, oatmeal, and stir well.
- Drop by the spoonful onto a saran lined plate and let cool. Store in an airtight container in the refrigerator - if they last that long.

- For the ground almonds take 1/3 cup raw almonds and process in a food processor fitted with the S blade until finely ground.
- Place the almond butter, maple syrup, vanilla, and salt in a food processor fitted with the S blade and process until smooth.
- Transfer to a small bowl and freeze for 30 minutes.
- Form into 1-inch balls and flatten slightly. Roll each cookie in the ground almonds.
- Freeze for at least 2 hours before serving. Stored in a sealed container in the freezer, these cookies will keep for up to one month.

GRANDMA'S CLASSIC NO-BAKE COOKIES
This is the first cookie I ever learned to make as a child. They're very delicious with the peanut butter and oatmeal. You can eat them fresh out of the pan in a bowl with a spoon, which is delicious with a glass of milk besides. This no-bake cookie recipe was my grandmother's, and my mother taught it to her children, and I will to mine. I hope you have as much fun making this either by yourself or with your children, as I did with my mom. Separate cookies with waxed paper if putting in a tin or baggie to prevent sticking.

- Combine sugar, milk, butter, and cocoa powder in a large saucepan over medium heat; bring to a boil. Cook and stir until butter is melted and mixture is smooth, 2 to 3 minutes.

PEANUT BUTTER COOKIES WITHOUT BUTTER
So very easy to make, the recipe doubles very nicely. Made up a couple batches to freeze for Christmas gifts. Recipe came from an Amish Cookbook published in 1977.

- Combine honey, coconut oil, and cocoa powder in a small pot and bring to a boil; cook at a boil for 2 minutes and remove from heat. Stir oats, peanut butter, coconut, and vanilla extract into the hot honey mixture until the peanut butter melts and the mixture is smooth.
- Drop mixture by spoonful onto waxed paper. Set aside to cool until firm, about 20 minutes.
