1 cup white sugar
½ cup brown sugar
2 ¼ cups all-purpose flour
¼ teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
½ cup vegetable oil
2 eggs, beaten
1 cup sour milk
2 cups apples - peeled, cored and chopped
¼ cup brown sugar
¼ cup white sugar
½ cup chopped walnuts
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan. Make the topping by mixing together 1/4 cup brown sugar, 1/4 cup white sugar, chopped walnuts and 1/2 teaspoon cinnamon. Set aside.
  • In large bowl, mix together 1 cup white sugar, 1/2 cup brown sugar, flour, salt, baking soda and cinnamon. Make a well in the center, and pour in the oil, eggs and sour milk. Beat until smooth, then fold in chopped apples.
  • Pour batter into prepared pan. Sprinkle with topping mixture. Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.

APPLE CAKE:
1 1/2 cups all purpose flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1/2 cup canola oil
1 teaspoon vanilla
1 1/2 cups finely chopped apples
1/2 cup pecans or walnuts, chopped (optional)
BROWN SUGAR GLAZE:
1/2 cup packed light brown sugar
3 Tablespoons butter
1/2 teaspoon vanilla
1 Tablespoon heavy cream

Steps:

  • CAKE: Heat the oven to 350° F. Grease an 8-inch pan and set aside. In a medium bowl, combine the flour, sugar, baking soda, salt and cinnamon.Stir with a whisk to mix everything together. In a large bowl, mix the eggs with a hand mixer til light in color and foamy. Add the oil and vanilla and beat well. Stir in the flour mixture with a spoon and continue stirring the batter til the flour disappears. Add the apples and nuts (if using) and stir to mix them into the batter. Scrape batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Place the hot cake on a wire cake. While it's still hot, prepare the glaze. GLAZE: Combine all the ingredients into a saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil. Cook for 3-5 minutes. Spoon the hot glaze over the still hot-from-the-oven cake. Let the glazed cake cool completely before serving straight from the pan.

3 cups pancake mix (complete)
1/2 cup pecans (finely chopped)

  • Mix ingredients together until well combined.
  • Use a 9"x9" square baking dish.
  • Bake in 350° F oven for 50 minutes or until an inserted toothpick comes out clean.

A favorite at my house around the Thanksgiving and Christmas holidays, but we enjoy it anytime. One reviewer suggested the title was misleading because the apples are actually baked in the cake. This is what my mother called the cake and what I have always called it so I will let the recipe title stand as it is.

1 1/2 cups oil
2 cups sugar
3 cups plain flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
