FRESH BERRIES & SWEET RICOTTA



Fresh Berries & Sweet Ricotta image

Homemade Ricotta (recipe follows)
2 tablespoons sugar
2 tablespoons liquid honey
1 1/2 teaspoons pure vanilla extract
2 cups fresh strawberries, hulled and halved or sliced, depending on size (see Cook's Note)
2 (6-ounce) packages fresh raspberries
2 (6-ounce) packages fresh blueberries
Fresh Raspberry Sauce (recipe follows)
Grated lemon zest, for serving
4 cups whole milk
2 cups heavy cream
1 teaspoon kosher salt
3 tablespoons good white wine vinegar
1 (6-ounce) package fresh raspberries
1/2 cup sugar
1 cup (12 ounces) seedless raspberry jam, such as Tiptree (see Cook's Note)
1 tablespoon framboise liqueur

Steps:

  • Place the Homemade Ricotta in a medium bowl and stir in the sugar, honey, and vanilla. Set aside at room temperature for up to 2 hours. In another bowl, combine the strawberries, raspberries, and blueberries.
  • When ready to serve, divide the berries among 6 bowls. With an ice cream scoop, place a large dollop of the ricotta in each bowl and drizzle with lots of the Fresh Raspberry Sauce. Sprinkle with the lemon zest and serve.
  • Set a fine-mesh sieve over a deep bowl. Dampen 2 pieces of cheesecloth with water and line the sieve with a double layer of the cheesecloth.
  • Pour the milk and cream into a medium stainless-steel or enameled pot, such as Le Creuset, and stir in the salt. Bring to a full rolling boil over medium heat, stirring occasionally. Turn off the heat and pour in the vinegar. Allow the mixture to stand for one minute, until it curdles. It will separate into thick parts (the curds) and milky parts (the whey).
  • Pour the mixture into the cheesecloth-lined sieve and allow it to drain into the bowl at room temperature for 20 minutes (for soft ricotta) to 25 minutes (for firmer ricotta), occasionally discarding the liquid that collects in the bowl. Transfer the ricotta to a bowl, discarding the cheesecloth and any remaining liquid. Use immediately or cover with plastic wrap and refrigerate.
  • The ricotta will keep, refrigerated, for 4 to 5 days.
  • Place the raspberries, sugar, and 1/4 cup water in a small saucepan over medium heat. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and the framboise into the bowl of a food processor fitted with the steel blade and process until smooth. Pour into a container and chill. The sauce can be refrigerated for up to one week.

1 (15-ounce) container whole milk ricotta cheese
1/2 cup raspberry jam
1 cup whipping cream
3 tablespoons powdered sugar
1 cup fresh raspberries

Steps:

  • In a food processor, blend the ricotta cheese until light and fluffy, about 20 seconds. Add the jam and pulse until combined. Transfer to a large bowl.
  • In a separate bowl, using an electric hand mixer, beat the cream until thick. Add the powdered sugar and continue to beat until the cream holds stiff peaks. Working in batches, carefully fold the cream mixture into the ricotta mixture. Spoon the mousse into serving bowls and refrigerate for 1 hour. Garnish with fresh raspberries and serve.

1 cup sugar
2 cups heavy whipping cream
1 cup half-and-half cream
2 teaspoons vanilla extract

Steps:

  • Place raspberries in a blender; cover and pulse until chopped. Transfer to a large bowl; stir in sugar until dissolved. Stir in remaining ingredients until blended., Pour mixture into cylinder of ice cream freezer; freeze according to the manufacturer's directions. Transfer ice cream to freezer containers, allowing headspace for expansion. Freeze 2-4 hours or until firm.

RICOTTA ICE CREAM WITH CANDIED FRUIT AND PISTACHIOS



Ricotta Ice Cream with Candied Fruit and Pistachios image

You don't need to use pistachios and other nuts can be swapped out, including lightly toasted chopped almonds or hazelnuts. Some chopped chocolate can be mixed in to the just-churned ice cream as well, and some might like to add a few drops of orange flower water or a splash of orange liqueur to the base, prior to churning. Or you can leave it as is; it's great served with cherry compote or fresh berries. I'd mentioned that originally I'd made a pine nut brittle for the ice cream, but since the price of pine nuts is very high right now, I thought I'd offer an alternative. If you want to make the brittle and use that, instead of the pistachios, caramelize 1/2 cup (100g) of sugar, and mix in an equal amount of lightly toasted pine nuts. (Avoid Chinese pine nuts). Stir them together, then spread the mixture on a lightly oiled baking sheet or marble counter. When cool, break the brittle into little pieces with a chef's knife or food processor and fold into just-churned ice cream along with the candied fruit.

1 cup (250ml) (half-and-half or heavy cream)
1/2 cup (100g) sugar
pinch of salt
5 large egg yolks
1/4 cup (80g) honey
2 cups (500ml) whole-milk ricotta cheese
optional: 1-2 teaspoon grappa or (kirsch)
1 teaspoon freshly squeezed lemon juice
1/4 cup (40g) finely diced candied lemon (orange, or citron)
1/4 cup (40g) coarsely chopped shelled pistachios ((untoasted, or very lightly toasted))

Steps:

  • Warm the half-and-half or cream with the sugar and salt in a small saucepan.
  • In a medium bowl, whisk together the egg yolks.
  • Make an ice bath by nesting a metal or glass bowl in a larger bowl that's partially filled with ice and some water. Set a mesh strainer over the top.
  • When the half-and-half mixture is very warm, gradually add it to the yolks, stirring constantly with a whisk as you pour (to avoid scrambling the eggs). Scrape the mixture back into the saucepan and cook over medium heat, stirring constantly with a heatproof spatula, just until the custard thickens and coats the spatula. (Do not boil.)
  • Immediately strain the custard into the bowl in the ice bath and stir until cool.
  • Pour the custard into a blender and add the honey, ricotta, and grappa or kirsch (if using). Puree in the blender until the mixture is very smooth, about 30 seconds. Pour the mixture into a container, cover, and chill thoroughly.
  • Add the lemon juice, then churn the ice cream in your ice cream maker according to the manufacturer's instructions. When done, stir in the candied citrus and nuts, and transfer to a container. Cover, and store in the freezer until ready to serve.

RASPBERRY RICOTTA CREME DESSERT

1 box(es) [3-oz] sugar-free raspberry jello
1/4 cup(s) boiling water
1/2 cup(s) ice water
2 cup(s) part-skim ricotta cheese
1 cup(s) frozen mixed berries, unsweetened
8 ounce(s) lite cool whip, thawed in refrigerator

Steps:

  • Mix jello and boiling water in a glass bowl; stir well until all jello is dissolved. Add the ice water, and stir well, to cool it down more quickly. Let cool to room temp., stirring to speed the cooling process. It does not need to congeal, just let it cool off so the ricotta doesn't melt when you mix it in.
  • Spoon the room-temp ricotta cheese into the slightly-cooled jello mixture. Use a whisk, and stir well, breaking up and smoothing the ricotta.
  • Gently stir in 1-cup (or more, to your liking) of frozen, mixed berries (comes in a bag of mixed strawberries, raspberries and blackberries).
  • Gently fold in the 8-oz. tub of cool whip. Stir well, incorporating all the jello/ricotta mixture into the cool whip.
  • Pour into individual serving bowls, or pour into a small jello mold and chill for several hours.
  • Garnish with berries. *Can substitute orange sugar free jello and a small can - DRAINED! - of mandarin oranges or small can of drained pineapple tidbits. Use the drained, chilled juice from the oranges or pineapple as a substitute for the 1/2 cup of ice water, above, if you desire.

  • Puree raspberries in a blender or food processor; pour mixture through a strainer to remove seeds.
  • Beat eggs and sugar together in a bowl until smooth. Stir raspberry puree, half-and-half, cream, corn syrup, and lemon juice into the egg-sugar mixture.
  • Transfer raspberry cream mixture to the ice cream maker. Freeze according to the manufacturer's instructions.
