1/2 cup stick margarine
1/4 cup reduced-fat stick margarine
1/3 cup packed brown sugar
1/4 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup chopped pecans
2/3 cup raspberry jam
2 tablespoons lemon juice
GLAZE:
1/2 cup confectioners' sugar
2 teaspoons fat-free milk

Steps:

  • In a large bowl, cream margarine and sugars. Beat in egg and vanilla. Combine flour, baking powder, baking soda and salt; add to creamed mixture. Stir in 1/2 cup pecans. , Spread half of the dough into a 13-in. x 9-in. baking pan that has been coated with cooking spray. Combine jam and lemon juice; spread over dough. Dollop remaining dough over top. Sprinkle with remaining pecans. , Bake at 325° for 30-35 minutes or until lightly browned. Cool. Combine glaze ingredients; drizzle over bars.

Juicy, seasonal fruit gives a fresh taste

Number Of Ingredients 7

200g plain flour
200g porridge oat
250g pack butter , room temperature, cut into small pieces
175g light muscovado sugar
finely grated zest of 1 lemon
100g pack pine nut
2 punnets raspberries (total weight 250g/9oz)

Steps:

  • Preheat the oven to fan 170C/ conventional 190C/gas 5. Butter a shallow 23cm square tin. Tip the flour, oats and butter into a mixing bowl and use your fingers to work the mixture together to make coarse crumbs. Mix in the sugar, lemon zest and three quarters of the pine nuts using your hands, then press the mixture together well so it forms large sticky clumps.
  • Drop about two thirds of the oat mixture into the base of the tin, spread it out and press down very lightly - don't pack it too firmly. Scatter the raspberries on top, sprinkle the rest of the oat mixture over, then the rest of the pine nuts and press everything down lightly.
  • Bake for 35-40 minutes until pale golden on top. Cut into 12 bars with a sharp knife while still warm, then leave to cool in the tin before removing. Will keep for 2-3 days.

These bars are a perfect combination of flavors and topped with slivered almonds, a perfect dessert for any occasion. Recipe created by Linda LaPlace of Nokomis, Florida.

Number Of Ingredients 10

2 c all purpose flour
1 c granulated sugar
1 c unsalted butter
1 large egg, beaten
1 tsp almond extract
3/4 c raspberry preserves, seedless
2 c semi-sweet chocolate mini morsels
1 c almonds, slivered (chopped)
1 c powdered sugar, sifted
1-2 Tbsp milk

Steps:

  • 1. Preheat oven to 350°F (175°C). Line a 13x9x2-inch baking pan with foil; grease foil.
  • 2. Combine flour and sugar in large mixer bowl. Cut butter into mixture with pastry blender or two knives until mixture is crumbly. Add egg and almond extract; stir with a fork until moistened (mixture will still be crumbly). Reserve 1 cup of the crumb mixture. Press remaining mixture in bottom of prepared pan. Spread preserves over crust, leaving 1/2-inch border.
  • 3. Combine reserved crumbs, morsels and almonds in same bowl. Sprinkle chocolate mixture over preserves layer, pressing lightly.
  • 4. Bake for 30 to 35 minutes or until top is golden brown. Cool slightly in pan on wire rack. While still warm, score into 4 dozen bars. Cool completely in pan.
  • 5. Combine powdered sugar and enough milk in small bowl to make drizzling consistency. Drizzle over bars; let stand until set. Cut bars along scored lines.
