Raspberry Chipotle Glaze for Ham image

Add something new to your traditional ham entree with this easy glaze. It covers an 8- to 10-pound ham and provides about 20 servings. -Mary Lou Wayman, Salt Lake City

Yield 1-2/3 cups (enough for an 8- to 10-pound ham).

Number Of Ingredients 5

1 jar (12 ounces) seedless raspberry jam
2 tablespoons white vinegar
2 chipotle peppers in adobo sauce, drained, seeded and minced
2 to 3 garlic cloves, minced
2 teaspoons coarsely ground pepper

Steps:

  • In a small saucepan, combine the jam, vinegar, peppers and garlic. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. , Brush over ham during the last 30 minutes of cooking. Sprinkle with pepper before serving.

Number Of Ingredients 5

1/4 cup apple juice or dry white wine
2 tablespoons lemon juice
2 teaspoons cornstarch
1/3 cup seedless raspberry jam, divided
1 tablespoon butter

Steps:

  • In a saucepan, combine the apple juice, lemon juice and cornstarch; stir until smooth. Stir in half of the jam. Cook and stir over medium heat until thickened and bubbly. Stir in butter and remaining jam. Cook and stir until the butter is melted. During the last 10 minutes of the ham's baking time, spoon glaze over the entire ham.

Number Of Ingredients 8

1 (12 ounce) package frozen unsweetened raspberries, thawed
1 (16 ounce) jar red currant jelly
1 (8 ounce) jar Dijon mustard
1 (10 -13 lb) precooked bone-in whole ham
1 1/2 cups firmly packed light brown sugar
1 cup water
kale leaf, to garnish
flat leaf parsley, to garnish

Steps:

  • Preheat the oven to 350°.
  • Purée the berries with their juices in a blender or food processor, and pass the purée through a fine-mesh sieve. You should have about 1 cup purée.
  • Stir together the raspberry purée, red currant jelly, and Dijon mustard in a saucepan over medium heat until the jelly dissolves. Boost the heat to high and bring mixture to a boil. Cook, stirring constantly, for 1 minute. Remove from the heat and set aside to use as a glaze. You should have just about 3 cups.
  • Place the ham, fatty side up, in a roasting pan. Peel off the skin and trim off most of the fat. Score the remaining fat in a diamond pattern. Rub the brown sugar over the surface.
  • Roast the ham for 30 minutes. Remove from the oven and pour the water over the ham. Spoon 1 cup of the glaze over the ham, and return it to the oven. Bake for 2 1/2 hours longer, basting every 15-20 minutes with the pan juices and adding 1/3 cup of the raspberry glaze in the process until it is all used up.
  • Line a large platter with the kale and parsley and place ham on it. Carve at the table.

Baked Ham with Raspberry Chipotle Ham Glaze is the perfect combo of sweet and tart, with a smokey kick from the chipotle. It makes a very juicy, tender ham!

Number Of Ingredients 6

1 and 1/2 cups seedless raspberry preserves
2 tablespoons white vinegar
1 to 3 canned chipotle peppers in adobo sauce, chopped small
3 cloves garlic, smashed and minced
5 - 6 pound cooked ham (rump half or shank portion)
24 whole cloves, for studding ham (optional)

Steps:

  • Preheat the oven to 325 degrees F.In a small saucepan combine raspberry preserves, vinegar, chipotle peppers and garlic. (If you are nervous about it being spicy, start with one chipotle and taste it. Add more if you like.)Cook and stir over medium high heat just until boiling. Reduce heat to medium and bring to a simmer. Cook, uncovered, about 10 minutes more. It will start to thicken up. (You will have about 1 and 1/2 cups glaze.) Set aside.Set a rack inside of a large roasting pan. If you don't have a roasting pan, set a large oven-safe cooling rack over a half baking sheet with raised edges. You want to keep the ham lifted from the liquids that will pool in the pan.Cut open the packaging on your ham and throw away the glaze packet than probably came with it. We have loftier plans for this ham.Set your ham flat side down on the rack.Use a sharp serrated knife to score the ham by making diagonal cuts in a diamond pattern. See photos. Make the cuts about a half inch deep.If you want, stud your ham with cloves. Push one clove into the crosses of the diamond cuts you made. I love the earthy undertones cloves add! But it's totally up to you and it will still be a great ham if you skip the cloves. I've done it both ways.Brush the ham generously with the glaze you made. Don't use all of it, we need to brush again later too.If you have an oven-safe meat thermometer, insert it into the center of the ham. The thermometer should not touch the bone. (Or use an instant-read one later.)Bake in a 325 degree oven for 1 and 1/2 to 2 and 1/4 hours or until thermometer registers 135 degrees F. (About 20-25 minutes per pound). Remember, the ham is pre-cooked, so you are just getting it nice and warm for serving, and crisping up the outside.About 20 minutes before your ham is going to be done, remove it from the oven and brush with more glaze. Return to the oven.When the ham reaches 135 degrees, remove from the oven and cover with foil until ready to serve. Serve with remaining glaze. Use your leftover ham bone to make Split Pea Soup! The chipotle flavor from the ham slays in this soup!
