Preserve the taste of summer in a bottle with this raspberry gin, perfect topped up with tonic. The gin will keep its lovely pink hue for a few months

350g raspberries
150g sugar
700ml bottle of gin

Steps:

  • Tip the raspberries and sugar into a 1.5L sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week. After 2-3 weeks, strain the gin through a sieve. Pour the gin into mini bottles, and label. The gin will keep its vibrant pink colour for a few months and will be drinkable for a year. Use the boozy raspberries in a cocktail or trifle, or turn them into a granita.

1/4 cup raspberries, plus a few more, for garnish
2 ounces gin
1 ounce lime juice, plus 1 slice lime, for garnish
4 ounces tonic

Steps:

  • Add the raspberries, gin and lime juice to a shaker with ice and shake to blend. Strain over a glass with ice, add the tonic and stir. Add a few whole raspberries and a slice of lime.

1 1/2 ounces (45 ml) Bombay Sapphire gin
1/2 ounce (15 ml) Bonny Doon Framboise
2 ounces (60 ml) fresh lemon sour
1 teaspoon (5 ml) egg white
4 to 5 red raspberries
Chilled seltzer water

Steps:

  • In a mixing glass, muddle red raspberries and framboise. Add Bombay Sapphire, egg white, and fresh lemon sour; shake with ice until well blended. Double strain into a Fizz glass and spritz with chilled seltzer water.

6 tablespoons fresh raspberries (about 10 raspberries)
1/2 teaspoon Truvia natural sweetener
1 tablespoon freshly squeezed lime juice
Ice cubes
6 tablespoons gin
Tonic water, to fill
1 lime wedge, for garnish

Steps:

  • Place a small fine strainer over a highball glass. Press raspberries through the strainer into glass; discard solids. Add truvia and lime juice; stir to dissolve. Add ice cubes to glass. Add gin and tonic water; stir to combine. Serve garnished with a lime wedge.

1 cup gin
1/2 cup sugar
1/2 cup fresh lime juice
1/4 teaspoon (scant) rose water
3 cups crushed ice
Ingredient info: Rose water is sold at some supermarkets and at specialty foods stores and Middle Eastern markets.

Steps:

  • Mix first 5 ingredients in bowl. Let stand 1 hour at room temperature, occasionally stirring and crushing some of berries.
  • Place 3/4 cup ice in each of 4 glasses. Top each with 3/4 cup raspberry mixture.

1 lb raspberries
8 ounces sugar
1 pint gin

Steps:

  • Put the raspberries and sugar in a pan and heat gently, until the berries are soft and release their juices and the sugar has dissolved.
  • Transfer the mixture to a glass bowl or jar and pour in the gin. Stir, then cover with plastic wrap and seal tightly.
  • Stir daily for 4-5 days, then strain into a clean bottle, seal and store in a dark pantry or the freezer. Taste after about 8 weeks, adding more sugar if necessary.
  • The gin is ready to drink after about 3 months, but is best left for 1 year.

1 bar spoon raspberry preserves

Steps:

  • Combine all the ingredients in a cocktail shaker filled with ice and shake until chilled, about 15 seconds. Strain into a chilled coupe.
