RASPBERRY CHIPOTLE CHEESE BALL
This is a "spicY' southwest recipe, but you can modify by putting in less cayenne. A simple version is to pour raspberry chipotle sauce on top of a block of cream cheese for a quick and easy appetizer.

- 1. Mix cheddar cheese, mayonaise, chopped green onions, cayenne pepper and 1/2 cup of chopped pecans in bowl.
- 2. Form into ball and roll in the balance of the pecans (1 cup) and refrigerate several hours or overnight
- 3. Pour Raspberry Chipotle Sauce over the top and serve with crackers on the side. Wheat crackers work well, but can use whatever is desired.

Steps:
- In a large bowl empty the package of shredded cheese.
- Add the 2 or 3 chopped green onions.
- Add the mayonaise (use whatever amount you like in order to form the cheese together).
- After everything is well blended, use your hands or a rubber spatula to form the cheese into a disc shape.
- Place the cheese disc on a platter and pour the raspberry chipotle sauce over the top (cover the entire cheese disc, you will not use entire jar).
- Most of this recipe is according to taste and how much onions and sauce you like.
- Eat with Fritos.

- Mix the beef, crushed tortilla chips, 1/3 Celsius cilantro, egg and spices together in a bowl.
- Form meat mixture into 30 (1 T.) balls.
- Heat skillet over medium heat (add small amount of oil if you're not using a non-stick skillet.).
- Add meatballs to skillet and cook over medium-high heat 5-7 minutes, turning frequently until browned and cooked through.
- Add sauce, zest, juice and remaining cilantro to skillet.
- Cook, tossing, over low heat until meatballs are coated.

- 1. If you are at home and it is just the two of you, you can put the raspberrry chipotle sauce and the cream cheese in two separate small dipping bowls, and then dip into the bowls with the crackers.
- 2. However, for a party or guests, I like to make it look a little fancy, and I make the appetizers ahead. They look so pretty on a serving tray. (I bought the crackers and the sauce at Costco) Choose a large platter or tray for serving. Take a Crunchmaster multi-seed cracker and top it with a teaspoon or more of whipped cream. Now top it with a dollop of Roasted Raspberry Chipotle Sauce and place it on the platter. That's it! How simple is that?
