1 cup butter, softened
1 1/4 cups granulated sugar
3/4 cup packed brown sugar
5 eggs
1 cup sour cream
1/2 cup brandy
2 1/4 cups all-purpose flour
1/2 cup cornmeal
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup chopped pecans
2 tablespoons butter
1 cup powdered sugar
1 teaspoon brandy
4 -5 teaspoons milk
pecan halves (to garnish)

Steps:

  • Preheat oven to 325°F Generously grease and sugar (Yes, I said SUGAR) a 10-inch tube pan. Pour amount of water in a 13x9 to come half way and place on bottom rack of oven. (This creates a steam in the oven and will make this dense cake really moist) Leave pan in oven during the cooking time as well.
  • Beat together butter and sugars in large bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in sour cream and brandy.
  • Sift together dry ingredients. Add to butter mixture, mixing until well blended. Stir in pecans. Pour into prepared pan, spreading evenly to edges.
  • Bake 65 to 70 minutes or until wooden toothpick inserted near center comes out clean. (Surface will appear slightly wet.)
  • Cool cake in pan on wire rack 10 minutes. Loosen edges and remove to rack to cool completely.
  • To Prepare Brandy Glaze, Heat butter in medium saucepan over medium heat until melted and golden brown; cool slightly.
  • Add powdered sugar, brandy and milk; beat until smooth.
  • Drizzle cake with Brandy Glaze. Garnish, if desired. Store tightly covered.

Although the addition of applejack to the filling is outside the diner world, it punches up the apple flavor and gives the filling a nice kick. 1/2 cup firmly packed light brown sugar
1 teaspoon ground cinnamon
1/8 teaspoon salt
6 tablespoons (3/4 stick) chilled unsalted butter, cut into 1/2-inch cubes
1/2 cup pecan halves
2 1/2 pounds Golden Delicious apples (6 or 7 medium apples), peeled, cored, and thinly sliced
1 tablespoon fresh lemon juice
1/2 cup granulated sugar
2 tablespoons all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons applejack
3 tablespoons unsalted butter, cut into 1/4-inch cubes
1 1/2 cups fresh or frozen raspberries (not in syrup)

Steps:

  • 1. To make the pecan topping, place the flour, brown sugar, cinnamon, and salt in a food processor and pulse until combined. Add the butter pieces and pulse a few times, just until the mixture resembles coarse meal. Add the pecans and pulse just until they are coarsely chopped.
  • 2. Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-13-inch glass baking dish.
  • 3. To make the fruit filling, in a large bowl, toss the apple slices with the lemon juice. Add the granulated sugar, flour, and cinnamon and stir to combine. Add the apple brandy and butter cubes and toss until combined. Gently toss in the raspberries. Evenly spread the apple mixture in the prepared pan. Sprinkle the pecan topping evenly over the filling.
  • 4. Bake the crisp for 40 minutes, or until the fruit is bubbling and the top is browned. Serve warm.

1/2 lb butter
2 cups sugar
1/2 cup brown sugar
6 eggs
3 cups cake flour
2 teaspoons baking powder

1/2 teaspoon cinnamon, ground
1 cup sour cream
1/2 cup brandy
1 cup pecans, chopped
1 1/2 cups powdered sugar
3 tablespoons raspberry preserves
1 tablespoon brandy
1 tablespoon honey
water

Steps:

  • Using a mixer, Combine butter and sugar until light and fluffy.
  • Beat in eggs.
  • Mix in a separate bowl flour, baking powder, salt, and cinnamon.
  • Blend sour cream and brandy.
  • Blend in half the sour cream mixture. Then half the dry mixture. Repeat.
  • Add chopped pecans.
  • Grease bottom and sides of pan and pour in batter. I use a bunt pan.
  • Bake at 325 degrees for about one hour and a half.
  • During the last 15 minutes, check to see if it is done. (everyone's oven is a little different).
  • Remove from oven, and let cool for 10-15 minutes. Turn upside down on a wire rack.
  • For topping, combine sugar and brandy.
  • Stir in preserves and honey.
  • If the topping is too thick, add small amounts of water to thin it to pour over cake.
  • Pour the topping over the cake, and allow to roll down the sides.
  • Serve and enjoy!

This is my aunt's recipe for Christmas Cake. I tried this many years ago and still remember how awesome it was! If sultanas are hard to find, you can replace them with raisins. Merry Christmas and a Happy New Year to all!

250 g sultanas or 250 g thompson seedless grapes
250 g currants
75 g cherries, halved
150 g whole wheat flour
150 g unsalted butter
150 g sugar
1/4 teaspoon cinnamon
1/4 lemon, zest of
3 eggs, beaten
1/4 cup brandy
25 g jam (I use Mixed-Fruit jam; use your favourite flavour) or 25 g jelly (I use Mixed-Fruit jam; use your favourite flavour)

Steps:

  • Combine fruits and brandy, dredge with half of the flour, and allow to stand 2 hours or overnight.
  • Preheat oven to 350 degrees F (180 degrees C).
  • In a large bowl, cream butter, sugar, lemon zest till fluffy.
  • Add beaten eggs slowly and whip to form peaks.
  • Now add the rest of the flour and mix well.
  • Fold in the brandy-fruit mixture.
  • Turn into a greased cake tin and bake at 180C (350F) for 1 1/2 hours, or until cake tests done with a toothpick.

1 cup whole candied red cherries
1 cup golden seedless raisins
1 cup kentucky Bourbon
2 1/2 cups flour
2 cups pecans or 2 cups walnuts, halves
1 teaspoon ground nutmeg
3/4 teaspoon baking powder
1/2 teaspoon salt
1 cup butter or 1 cup margarine, in room temperature
1 cup granulated sugar
1 cup firmly packed dark brown sugar
3 large eggs, separated
1 cup confectioners' sugar
4 teaspoons milk
1/4 teaspoon vanilla
candied red cherries, optional
pecans, optional

Steps:

  • In medium size bowl, mix cherries, raisins and bourbon.
  • Cover and refrigerate for 8-24 hour.
  • Grease and flour 12 cup fluted tube pan.
  • Heat oven to 325 degrees.
  • Drain fruits, reserving bourbon.
  • In small bowl, toss ¼ flour and pecans.
  • In medium size bowl, mix remaining 2 ¼ cups flour with nutmeg, baking powder and salt.
  • In large bowl with electric mixer at high speed, beat butter until light and fluffy.
  • Add sugar, ½ cup at a time, beating well after each addition.
  • Add eggyolks, one at a time, beating well after each addition.
  • Beat in 1 cup flour mixture.
  • With mixer at medium speed, add ¼ cup reserved bourbon alternately with remaining 2 cups flour mixture, beating well each addition.
  • Batter will be thick.
  • In another large bowl with mixer at high speed, beat egg whites until stiff peaks form when beaters are lifted.
  • Stir about ¼ beaten egg whites into batter and fold in remaining egg whites.
  • Fold in cherries, raisins and nuts.
  • Turn batter into prepared pan and bake about 1 ½ hours or until toothpick inserted comes out clean.
  • Remove cake from pan and brush remaining reserved bourbon.
  • Drizzle glaze down sides.
  • Cut candied cherries and pecans into quarters and garnish cake.
  • NOTE: For stronger bourbon flavor, saturate piece of cheesecloth with additional bourbon.
  • Wrap cake in cheesecloth then with foil or plastic wrap.
  • Store in refrigerator in tightly covered container for 2-3 weeks.
  • Unwrap cake, place on serving platter.
  • Drizzle with glaze and garnish as desired.
  • CONFECTIONER’S SUGAR GLAZE: In a small bowl, beat 1 cup confectioner’s sugar, 4 tsp milk and ¼ tsp vanilla extract until smooth.

1 cup raw cashews
1/2 cup honey
2 teaspoons egg substitute
1 teaspoon lemon flavoring
1/4 teaspoon salt
1 cup cold water
2 teaspoons baking powder
1 cup unbleached white flour
1/2 cup pecans, chopped
1/4 cup brown sugar
1 tablespoon lemon peel, finely grated
1/4 cup maple syrup

Steps:

  • Blend first 6 ingredients in blender until smooth.
  • Pour blended mixture into a large bowl and add flour and baking powder. Mix well.
  • In a small bowl, mix together brown sugar, pecans and lemon peel.
  • Pour maple syrup into the bottom of an oiled 8" x 8" cake pan.
  • Sprinkle pecan mixture over maple syrup. Then spoon cake batter on top of pecans. Bake at 350 degrees F for 30 minutes or until lightly browned.

Try this light, creamy raspberry cake for a sweet summer treat

200g caster sugar
200g softened butter
4 eggs , beaten
200g self-raising flour
1 tsp baking powder
icing sugar , to decorate
85g caster sugar
50ml Disaronno liqueur
284ml tub double cream
250g tub mascarpone
3 tbsp caster sugar
150g punnet raspberries

Steps:

  • Heat oven to 190c/fan 170c/gas 5. Butter 2 x 20cm sandwich tins and line each with a circle of baking parchment. In a large bowl, beat together all the cake ingredients until you have a smooth, soft mixture. Spoon the mixture equally into the two tins, smoothing over the top of each with the back of the spoon. Bake in the oven for 20 mins until golden and the cake springs back when gently pressed. Turn the cakes onto a cooling rack.
  • Heat the sugar, 2 tbsp water and Disaronno together until the sugar has dissolved. Leave to cool, about 10 mins. Use a large serrated knife to cut each cake in half. Brush the syrup all over all four pieces of cake with a pastry brush.
  • For the filling, whip the cream until it forms soft peaks. Beat the mascarpone and caster sugar in a large bowl to loosen, then fold in the cream and mix together until smooth.
  • Spoon a third of the cream mixture over one of the cake halves. Scatter over some of the fruit (you don't want to cover the cake), then sandwich another half on top. Spread with cream and fruit as before and top with another half of cake and more cream and berries. Lay the final cake half on top. Gently press down, then wrap tightly in cling film and leave in the fridge overnight. To stop the cream from melting, this cake needs to be transported to the picnic in a cooler box. At the picnic, carefully remove clingfilm and dust with icing sugar to decorate, if you like.

Make this summery cake with seasonal fresh raspberries. A dusting of icing sugar offsets the red of the raspberries, but you could also serve with a glaze.

125ml sunflower oil, plus extra for the tin
175g self-raising flour
175g caster sugar
125ml 10% fat Greek yogurt
3 eggs
1 tsp vanilla extract
1 lemon, zested
200g raspberries
icing sugar, to dust
100g raspberries (optional)

Steps:

  • Heat the oven to 180C/160C fan/ gas 4. Oil a deep, 20cm loose-bottomed cake tin and line with baking parchment. Combine the flour and sugar in a bowl. Set aside.
  • Mix the oil, yogurt, eggs, vanilla extract and lemon zest in another bowl. Tip in the flour and sugar mixture and fold in until smooth. Gently fold in the raspberries and bake for 30-40 mins, or until a skewer inserted into the middle comes out clean. Leave to cool in the tin for a few minutes, then cool completely on a wire rack. Dust lightly with icing sugar and serve topped with more raspberries, if you like. Will keep for up to three days in an airtight container.
