Zest and juice of 2 large oranges
Zest and juice of 1 lemon
3 pounds Granny Smith apples (6 to 8 apples)
3 pounds sweet red apples, such as Macoun (6 to 8 apples)
1/2 cup light brown sugar, lightly packed
4 tablespoons (1/2 stick) unsalted butter
2 teaspoons ground cinnamon
12 ounces fresh raspberries (2 packages)
Vanilla ice cream, such as Haagen-Dazs, for serving
Orange zest, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Place the zest and juice of the oranges and lemon in a large (11-inch) ovenproof pot or Dutch oven, such as Le Creuset. Peel, quarter, and core the apples and add them to the pot, tossing them with the juices as you go.
  • Add the brown sugar, butter, cinnamon, and raspberries, cover, and bake for 1 to 1 1/4 hours, until the apples are very soft. Stir vigorously with a wire whisk. The applesauce will be smooth but still have a lot of texture. Serve warm with a scoop of ice cream and a dusting of orange zest.

1 cup frozen raspberries
3 tablespoons brown sugar
2 tablespoons ground cinnamon
1 teaspoon ground nutmeg
3 tablespoons honey
1 tablespoon vanilla extract
1 tablespoon lemon juice
¼ cup water

Steps:

  • Place apples and raspberries in the rice cooker; add brown sugar, cinnamon, and nutmeg. Add honey, vanilla extract, lemon juice, and water, in respective order.
  • Set rice cooker to standard "cook" setting, about 30 minutes. Stir mixture halfway through cooking cycle, mashing apples a little bit.
  • Remove the applesauce from the heat and cool for 30 minutes. Transfer applesauce to a bowl and chill in the refrigerator for at least 1 hour.

18 ounces sugar
3/4 ounce powdered agar
15 ounces cold water
2 cups glucose syrup
15 ounces raspberry juice
2 ounces dry roasted peanuts
1/2 ounce canola oil
2 tablespoons agave nectar
6 tablespoons unsalted butter
2 ounces sugar
1 large egg
1 tablespoon applesauce
2 ounces heavy cream
5 ounces pastry flour or all-purpose flour
1 tablespoon vanilla extract
1/8 teaspoon salt
2 ounces dark chocolate, chopped

Steps:

  • For the raspberry jelly: Combine the sugar and agar in a medium saucepan fitted with a candy thermometer. Whisk in the cold water and add the glucose syrup. Cook at a gentle boil while stirring until the mixture reaches 223 degrees F, about 8 minutes.
  • Remove the agar mixture from the heat and allow to cool to 194 degrees F. Add the raspberry juice, stir to incorporate and pour into 2-inch round silicone candy molds. Allow to set for 45 minutes in the refrigerator.
  • For the handcrafted peanut butter: Process the dry roasted peanuts in a spice grinder until smooth. Add the canola oil and process again, then add the agave nectar and process until smooth, about 1 minute. Transfer the peanut butter to a piping bag and set aside.
  • For the applesauce shortbread: Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.
  • Cream the butter and sugar together with an electric mixer until light, about 3 minutes. Add the egg, applesauce and cream and mix to incorporate, about 1 minute. Add the flour, vanilla and salt and mix until the dough holds together, about 1 minute.
  • Transfer the dough to a pastry bag and cut a 1/4-inch opening at the end. Pipe out 2-inch circles of the dough onto the prepared baking sheet and bake until golden brown, about 10 minutes. Let cool.
  • Transfer the peanut butter to a pastry bag, pipe the peanut butter onto the cooled shortbread cookies and spread it out to the edges. Top each with the cooled and set raspberry jelly.
  • To decorate: Put the chocolate in a heatproof medium bowl. Fill a medium saucepan with a couple inches of water and bring to a simmer over medium heat. Remove from the heat and set the bowl of chocolate over the water to melt. Stir until smooth and transfer to a piping bag.
  • Cut a small opening at the end of the pastry bag and decorate the tops of each cookie with spider legs.

Steps:

  • Stir together topping ingredients; cover and refrigerate overnight (or long enough to soften and slightly melt the marshmallows, if you prepare this in the morning, it should be ready later in the evening) When the marshmallows are softened, beat the mixture with electric mixer until smooth, to create a topping for the jell-o.
  • Dissolve the jell-o and the sugar in boiling water; add in the raspberries, stirring until well dissolved and mixed.
  • Stir in the applesauce until well mixed.
  • Pour into a 13 x 9-inch pan.
  • Refrigerate until firm.
  • Spread the sour cream/marshmallow mixture on top.

1/8 teaspoon ground cinnamon
1 1/2 cups frozen raspberries
1 tablespoon chia seeds

Steps:

  • Heat apples, 1/2 cup water, and cinnamon in a medium pot over medium-high. Bring to a simmer, then cover, reduce heat to low, and cook until apples are tender, 25 to 30 minutes. Add raspberries; cook, stirring, until juicy, about 5 minutes. Remove from heat; sprinkle with chia seeds. Let cool slightly, then mash. (If too thick, add water, 1 tablespoon at a time.) Applesauce can be refrigerated in an airtight container up to 2 weeks.

I altered a basic applesauce recipe to come up with this flavored version. Other variations can be made by substituting another flavor of jam for the raspberry. Depending on how sweet your apples are and how you like your applesauce, you may need to add a little sugar in with the jam. I used a combination of Macintosh and Red Delicious with about 1/3 cup jam, and thought it was fine without added sugar.

1 cinnamon stick
3/4 cup water
1/4-1/2 cup raspberry jam (or to taste)
sugar (to taste) (optional)
2 teaspoons fresh lemon juice (optional, helps retain color)

Steps:

  • In a large saucepan, combine apples with 1 cinnamon stick, jam, and water; bring to a boil.
  • Reduce heat to low; cover and simmer, stirring occasionally, until apples are tender (about 30 to 35 minutes). Add more water if necessary to prevent sticking.
  • Remove from heat; remove cinnamon stick.
  • Stir in 2 teaspoons fresh lemon juice.
  • The sauce will be somewhat chunky. If you prefer it smoother, puree it in a blender or food processor.
