6 slices bacon
4 boneless skinless chicken breast halves (cut into bite-size pieces)
2 tablespoons all-purpose flour
2 tablespoons dry ranch dressing mix
1 1/4 cups whole milk
3 cups dried medium noodles
1 tablespoon parmesan cheese, finely shredded

Steps:

  • Cut bacon into narrow strips.
  • In large skillet, cook bacon over medium heat until crisp.
  • Drain bacon on paper towels, discard all but 2 T drippings.
  • In same skillet, cook chicken in reserved drippings until tender and no longer pink, turning to brown evenly.
  • Sprinkle flour and salad dressing mix over the chicken in the skillet; stir well.
  • Stir in milk.
  • Cook and stir until thickened and bubbly.
  • Cook and stir for 1 minute more.
  • Stir in bacon.
  • Meanwhile, cook noodles according to package directions.
  • Serve chicken with noodles, sprinkle with Parmesan.

I found this on the back of a package of wide egg noodles I bought for Zelda's Amish Chicken Casserole. It sounded like something I'd be interested in and hope you might like to try also.

12 oz. package wide egg noodles
1/4 cup butter
16 oz. package frozen mixed vegetables
2 cups cooked ham, cubed
1 cup sour cream
1 cup ranch dressing

Steps:

  • 1. Prepare noodles according to package directions; drain.
  • 2. Melt butter in large skillet, over medium-high heat. Add veggies and cook, stirring frequently, until veggies are tender, about 6-8 minutes.
  • 3. Add ham and cook, stirring frequently, until ham cubes are hot, about 2-3 minutes.
  • 4. Stir in sour cream and ranch dressing.
  • 5. Cook over low heat, stirring frequently, until sauce is melted, smooth and hot.
  • 6. Pour hot noodles into a serving bowl.
  • 7. Pour veggies and ham mixture over noodles. Toss to combine.

Pasta BLT! You could probably use an Italian dressing mix in place of the ranch. I use Shirataki Tofu noodles to keep the dish lower-cal.

4 ounces pasta, any shape or 2 (8 ounce) packages tofu shirataki noodles
8 ounces boneless skinless chicken breasts, diced
4 slices lean turkey bacon
2 teaspoons olive oil
1/4 cup shredded parmesan cheese
10 ounces frozen chopped spinach, thawed and squeezed dry
1/4 cup chicken broth
2 teaspoons dry ranch dressing mix, divided
15 -20 grape tomatoes, halved
3 teaspoons minced garlic

Steps:

  • Cook pasta or prepare tofu noodles according to package directions and set aside.
  • Heat the olive oil in a large non-stick skillet over medium heat. Add garlic and cook 1 minute.
  • Add chicken and bacon. Cook, stirring until chicken is cooked through and no longer pink. Remove to a plate.
  • Add spinach, broth, and 1 tsp ranch to skillet. Stir and cook until liquid is absorbed, and spinach is heated through, about 3-4 minutes.
  • Reduce heat to medium-low. Add chicken, bacon, noodles, tomatoes, and remaining ranch seasoning to skillet, stirring and mixing until heated through.
  • Toss with parmesan and serve hot.

Steps:

  • Cook fettuccine according to package directions.
  • While pasta is cooking, sauté tenders in butter for 10-12 minutes, depending on thickness, or until no longer pink in the center and a thermometer reads 165°F.
  • Add the peas to the pasta water 1 minute before noodles are done, then drain all together.
  • Transfer pasta and peas to serving bowl and stir in ranch dressing and mustard.
  • Serve with chicken on top.
