MEXICAN GROUND BEEF PIE
Although this recipe is titled "mexican," it's more of an american creation. A good recipe when I'm looking for something easy and quick for dinner.

Steps:
- Heat oven to 375°F.
- Cook ground beef. Drain.
- Add to the cooked ground beef: onion, green chiles, chili powder, tomato sauce, and garlic powder. Simmer 8-10 minutes.
- Grease an 8 x 8 baking pan. Put meat mixture in pan.
- Beat together cheese, sour cream and egg white. Put on top of meat mixture.
- Bake 25-30 minutes.
SHEPHERD'S PIE MEXICANA
Great shepherd's pie with a kick. It's prepared with a blend of Mexican spices. Adjust seasonings according to your personal taste. You can also spice up the mashed potatoes if you like.

- Preheat oven to 350 degrees F (175 degrees C). Coat a 9 inch square baking dish with cooking spray.
- Bring a large pot of salted water to a boil. Add potatoes and cook until tender enough to pierce with a fork; drain. Mash by hand using a potato masher or sturdy whisk. Mix in butter, milk, garlic powder, and salt and pepper to taste. Set aside.
- Heat oil in a large skillet over medium heat. Add onions; cook and stir until softened, 8 to 10 minutes. Add garlic and ground beef and cook until meat loses its pink color. Season with seasoned salt and taco seasoning. Add peas and corn and stir until blended.
- Pour beef and vegetable mixture into prepared baking dish. Cover with mashed potatoes.
- Bake in preheated oven until potatoes are golden and beef and vegetable mixture is hot and bubbly, 30 to 35 minutes.

MEXICAN SHEPHERD'S PIE
A great use for left overs! Arrachera beef is a marinated meat used in Mexico for tacos. Left-over roast beef, or even ground beef is a good substitute, however I suggest adding some taco seasoning to the meat.

Steps:
- Preheat oven to 400 degrees.
- Prepare mashed potatoes, using sour cream instead of milk.
- In skillet over medium heat melt butter and saute onions, peppers until onions are almsot transparent, stir in garlic and saute another minute.
- Sprinkle flour over mixture and stir for approximately 2 minutes.
- Whisk in broth and Worcestershire sauce.
- Thicken gravy 1 minute.
- Stir in carrots and corn.
- Add meat and cilantro.
- Spoon mixture into small rectangular baking dish.
- Spoon potatoes over meat evenly.
- Bake for 30+ minutes or until potatoes are light golden brown.
- Serve immediately.
SEVEN LAYER TORTILLA PIE
Looks like a pie, cuts like a pie, and tastes like a little bit of Southwestern heaven. This casserole is made from pinto and black beans layered with tortillas and cheese. Picante sauce gives it just the right kick. You can replace the Cheddar cheese with Monterey Jack if you like.

- Preheat oven to 400 degrees F (200 degrees C).
- In a large bowl, mash pinto beans. Stir in 3/4 cup salsa and garlic.
- In a separate bowl, mix together 1/4 cup salsa, cilantro, black beans and tomatoes.
- Place 1 tortilla in a pie plate or tart dish. Spread 3/4 cup pinto bean mixture over tortilla to within 1/2 inch of edge. Top with 1/4 cup cheese, and cover with another tortilla. Spread with 2/3 cup black bean mixture, and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla, and spread with remaining pinto bean mixture and cheese.
- Cover with foil, and bake in preheated oven for about 40 minutes. Cut into wedges, and serve with salsa and sour cream.

- Lightly grease 10 inch pie plate.
- Cook and stir ground beef and onion in 10 inch skillet until brown; drain.
- Stir in seasoning mix.

QUICK CRESCENT TACO PIE
A quick meal the kids will love! Serve it in wedges topped with shredded lettuce and avocado slices. Delicious! Ground chuck is recommended for this recipe.

- In a large fry pan, brown the ground chuck. Drain off the oil. Stir in seasoning mix, water, and olives. Simmer for 5 minutes.
- Separate crescent dough into 8 triangles. Place triangles in an ungreased 10-inch pie pan, pressing to form a crust. Sprinkle 1 cup corn chips over the bottom of crust. Spoon meat mixture over crust and corn chips. Spread sour cream over meat mixture, and cover with cheese. Sprinkle remaining corn chips over the top.

- Heat oven to 425°. Grease 9-inch pie plate. Place mashed potatoes in a bowl; stir in egg and green onions. Spread and press potato mixture evenly against bottom and side of pie plate. Bake 20-25 minutes or until light brown. Cook ground beef and chopped onion in 10-inch skillet, stirring occasionally, until beef is brown; drain thoroughly. Stir in remaining ingredients except cheese. Cover and cook over low heat 5 minutes, stirring occasionally. Spoon into shell; sprinkle with cheese. Bake 2-3 minutes or until cheese is melted.
