AMY'S BEER & RANCH CHEESE BALL
I came across a recipe for "beer dip" a few years ago that I tweaked to turn into this wonderful cheese ball. It has since become my standard cheese ball, requested at family functions. It's rolled in cheddar cheese, because that's my family's preference-- I'm sure it could be rolled in chipped beef or nuts if you prefer. Cooking time includes time to chill and form the cheese ball.

Steps:
- 1. Set the cream cheese bars out to soften and warm to room temperature. Once they are softened put them in a medium sized bowl.
- 2. Add the dry ranch dressing packets to the cream cheese and mix until the dressing is completely integrated into the cream cheese.
- 3. Pour about half the bottle of Hot Shot pepper blend onto a sheet of wax paper and spread it out a little. Scoop out the cheese mixture and shape it into a ball. Try to make the surface smooth and pretty for serving later. Once it is in the shape you want, role the ball in the pepper blend. Place the cheese ball on a small plate and chill until you are ready to serve it.
- 4. Serve with Triscuits, Wheat Thins or your favorite crackers. Your family will love this recipe!

RANCH DRESSING CHEESE BALL
This is my sister's go-to appetizer for church socials, Super Bowl Sundays, and Christmas munchies. Several years ago, she put too much of the ranch dressing mix into the recipe, and it was hard to serve. My dad renamed it the "cheese wad." We think Ranch Dressing Cheese Ball sounds more appetizing, but at our house, it will forever be known as Cheese Wad!
Yield makes 2 cheese balls; serves 24
Number Of Ingredients 6
Steps:
- In a medium bowl, combine the dressing mix, mayonnaise, buttermilk, Cheddar, and cream cheese until thoroughly blended. Divide the mixture into two equal portions in two separate bowls. Cover the bowls and place them in the freezer for 30 minutes. When each portion is firm, use your hands to shape it into a ball. Place the nuts in a shallow bowl or on a piece of waxed paper. Roll each ball in the nuts to coat it on all sides. Serve with crackers or bagel chips.
- Let this sit at room temperature for about 30 minutes before serving for easier spreading.
