I had some leftover Easter ham and had some frozen broccoli in the freezer, so I based this recipe on Chef Lorac's Recipe #39087 (please try this when you get a chance its great). Be careful with this, it starts out as wonderfully mild sauce, but it sneaks up on you with the heat (at least it does for me :) Submitted on April 19th 2006.

8 ounces cooked ham (roughly chopped)
6 ounces angel hair pasta
1 1/2 cups frozen chopped broccoli
2 teaspoons cajun seasoning (used Low-Sodium Cajun Seasoning)
2 tablespoons margarine
1 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder
1/3 cup grated parmesan cheese

Steps:

  • In a large pot of water, add broccoli and pasta; cook until pasta is at desired doneness.
  • Drain and keep warm.
  • In a large skillet, melt margarine. Add ham and Cajun seasoning.
  • Stir until ham is well coated.
  • Lower heat and add rest of ingredients except grated parmesan cheese; heat through.
  • Pour over pasta and broccoli.
  • Sprinkle with cheese and toss until pasta is coated.

1 lb medium shrimp, peeled and deveined
1/2-3/4 lb smoked sausage, cut into 1/4 inch slices
1 small onion, chopped
1 celery rib, diced
1 large green bell pepper, cut into thin strips
2 cloves garlic, minced
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic
1 (14 ounce) can fat-free chicken broth
1 3/4-2 teaspoons cajun seasoning (I use Tony Chachere's)
1/8-1/2 teaspoon cayenne pepper
3/4 cup uncooked long-grain white rice

Steps:

  • In a large non-stick skillet, saute smoked sausage over medium-high heat for 3-4 minutes or until browned.
  • Add the onion, celery, bell pepper, and garlic; saute 2-3 minutes.
  • Add the tomatoes, chicken broth, cajun seasoning, and cayenne pepper; stir to combine.
  • Bring mixture to a boil; stir in rice; cover; lower heat and simmer 15-20 minutes or until liquid is absorbed.
  • Stir in shrimp; cook 3-5 minutes or until shrimp turn pink.

I love making food from things that come in cans, jars, or freezer packets, because... well, I'm lazy. This recipe is great because it calls for all of the above, requiring absolutely nothing fresh. (Note: It's an altered version of a recipe from a book called Betty Crocker's 4 Ingredient Dinners.)

12 ounces egg noodles
2 (10 ounce) packages frozen chopped broccoli
2 cups readymade alfredo sauce
2 (6 ounce) cans boneless skinless pink salmon
seasoning, to taste

Steps:

  • In a large stockpot, cook noodles as directed on package.
  • While noodles are cooking, flake and drain salmon.
  • Yes, this is necessary!
  • I was new to canned salmon, and so I didn't believe the instructions, but I soon discovered that salmon truly does come in huge, icky lumps.
  • When noodles are 2 to 4 minutes away from being done, add the broccoli to the water.
  • This will probably stop the water from boiling, so those 2 to 4 minutes might end up closer to 8 to 10 minutes instead!
  • This happened to me, but, amazingly, even with 8 extra minutes of cooking time the broccoli did not become mush.
  • Drain pasta and broccoli, reserving about a cup of the cooking water.
  • Return noodles and broccoli to pot.
  • Add Alfredo and seasonings to taste (I recommend lots of black pepper and--even better--Trader Joe's Sun-Dried Tomato Seasoning Splash, which is sold, not surprisingly, at Trader Joe's-- about 8 teaspoons of it).
  • If the sauce is too thick, and it likely will be, dribble in the reserved cooking water slowly until the consistency is right.
  • And you're done.
  • Woo hoo.
  • You just opened some cans, and a jar, and a box, and a package, and now you have yummy pasta.
  • Enjoy.

I searched for a long time to find a breakfast casserole that would give you a serving of veggies and still be delicious (it's the mom in me). The combination of ham, cheddar cheese & broccoli--YUM.

12 slices white bread, crusts removed, torn into small pieces
3 cups cooked cubed ham
2 (10 ounce) boxes chopped frozen broccoli, thawed, water pressed out
8 ounces shredded sharp cheddar cheese
3 cups milk
5 eggs, beaten
1 1/4 teaspoons salt
1 teaspoon dry mustard
2 -3 tablespoons melted butter

Steps:

  • In a 9x13x2-inch baking dish, put enough of the bread pieces into the bottom of the pan to make a thin layer.
  • Make a layer of ham, followed by a layer of broccoli, and then the cheese.
  • Whisk together milk, eggs, salt, and dry mustard. Pour over top.
  • Toss remaining bread with butter; sprinkle over the top of the casserole.
  • Bake at 325° for 45 minutes.
  • Let cool for about 20 minutes; cut into squares.

1 tablespoon salt
1/2 lb dry fettuccine
4 cups broccoli florets
4 tablespoons butter
1 cup parmesan cheese, freshly grated, good quality
1/8 teaspoon cayenne pepper (optional)
1/4 teaspoon nutmeg (optional)
1 1/2 teaspoons fresh ground black pepper

Steps:

  • Place the salt in a large pot of water and bring to a boil; add fettuccine and cook according to package directions for al dente; during the last 3 minutes of cooking, add the broccoli.
  • Drain in a colander, RESERVING 1 cup of the WATER; set aside.
  • Place the butter in the pot, reduce heat to medium-low ,and stir until melted; add 1/2 cup of the reserved pasta water, then stir in 1/3 cup of the Parmesan cheese. Add the fettuccine and broccoli and the cayenne and nutmeg, if desired; toss.
  • Remove from heat and sprinkle with another 1/3 cup of the Parmesan cheese and the pepper, toss again. Adding more pasta water if the fettuccine is too sticky; serve in bowls and sprinkle with the remaining Parmesan cheese, enjoy.
