1 (3.9 ounce) container Mott's® Healthy Harvest Blueberry Delight Applesauce
½ cup all-purpose flour
½ cup whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
⅛ teaspoon ground cloves
2 large eggs, beaten
¾ cup granulated sugar
⅓ cup canola oil
1 Golden Delicious apple, peeled and cut into 1/4-inch dice
⅓ cup golden raisins

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil or coat an 8x8-inch baking dish with nonstick cooking spray and set aside. Whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, salt, and cloves in a large bowl.
  • Combine the eggs, applesauce, sugar, oil, and apple in a separate bowl, and whisk until well blended. Pour the liquid ingredients over the dry ingredients and stir until just moistened. Stir in the raisins. Pour the batter into the prepared baking dish. Smooth with a rubber scraper.
  • Bake 30 to 35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.

3/4 cup (1 1/2 sticks) unsalted butter, melted, plus more for pan
3/4 cup packed light-brown sugar
1/4 cup granulated sugar
1 large egg
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup all-purpose flour, (spooned and leveled)
2 cups old-fashioned rolled oats (not quick-cooking)
1 cup raisins

Steps:

  • Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.
  • In a large bowl, whisk together butter, sugars, egg, salt, and cinnamon until smooth. Add flour, oats, and raisins; fold in just until combined.
  • Spread batter in prepared pan, and bake until a toothpick inserted in center comes out with moist crumbs attached, 25 to 30 minutes. Cool completely in pan. Using paper overhang, lift cake onto a work surface; cut into 16 bars.

½ cup brown sugar
½ cup butter
½ cup all-purpose flour
¾ cup rolled oats
2 eggs
1 cup brown sugar
½ cup all-purpose flour
¼ teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla extract
¾ cup raisins
½ cup flaked coconut
½ cup pitted sour cherries, drained with liquid reserved

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, mix together 1/2 cup of brown sugar, butter, 1/2 cup of flour and oats until crumbly. Press into the bottom of a 9 inch square pan. Bake for 15 minutes in the preheated oven.
  • In the same bowl, mix together the eggs, 1 cup of brown sugar, 1/2 cup flour, salt, baking powder and vanilla until well blended. Stir in the raisins, coconut and cherries, adding a little bit of the cherry juice to keep it from becoming stiff. Spread over the baked crust in the pan.
  • Bake for 30 minutes in the preheated oven, or until firm and lightly browned. Cool and cut into bars.

2 cups all-purpose flour
½ teaspoon salt
⅔ cup shortening
¼ cup water
2 eggs
1 tablespoon lemon juice
6 apples - peeled, cored, and cut into 1/2-inch thick slices, or more to taste
1 cup white sugar
3 tablespoons all-purpose flour
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk 2 cups flour and salt together in a bowl. Cut shortening into flour mixture using a pastry blender or a fork until crumbly.
  • Whisk water, eggs, and lemon juice together in a separate bowl; stir into flour mixture until dough forms a ball. Split dough into halves; roll each half into about a 9x13-inch rectangle. Press 1 rectangle into the bottom of a 9x13-inch baking dish.
  • Place apple slices in a large bowl; add sugar, 3 tablespoons flour, and cinnamon. Toss apples to coat; spread over crust. Cover apple filling with remaining crust, piecing together any scraps to cover any holes. Cut several slits into top crust for ventilation while cooking.

This is my husband's favorite and he will request this dessert. It is from our St. Paul's Church Cookbook,1960. The seasoned cooks who contributed the recipes did not detail ... so it was a learning experience. Living in this small town, we could call the cooks for advice. I was married in 1957 so this cookbook was my teacher. I will give better instructions on this recipe but it read: "Mix ingredients as you would a pie crust. Line your 8x8 pan. Put filling in and cut top crust in circles and overlap on top of raisins. Bake moderate oven 375 30-40 minutes. No instructions for the raisins.

METHOD; L COMBINE THE WATER BROWN SUGAR, RAISINS AND BRING TO A BOIL.... SIMMER UNTIL THIE RAISINS AR SOFT AND THEN THICKEN WITH THE 2 TBSP OF FLOUR MIXED WITH A LITTLE WATER. BRING BACK TO A BOIL AND SIMMER UNTIL THICKENED.

  • CRUST RECIPE CREAM CRISCO OR SHORTENING OF CHOICE, WITH THE SUGAR; ADD THE EGG, AND VANILLA...... MIX,
  • COMBINE THE FLOUR AND THE BAKING POWDER AND SALT MIX DOUGH SOFTLY
  • USING HALF OF THE DOUGH, LINE AN 8X8 PAN WITH THE DOUGH. ADD THE FILLING; raisin, 1 can of apple or cherry pie filling; COVER WITH REMAINING DOUGH. I take a portion of dough and flatten it in the palm of my hand, and place it on top.... continue until done and if there are any spaces in between it does not matter as it will expand during baking. It also makes it look rustic
  • Using a pastry brush, add a little cream or milk on the top crust. NOTE: If using Cherry Pie filling, bake a little longer as there is more liquid than in the apple pie filling. Check the center for dryness like you would for a cake.
  • NOTE # 1: THIS DOUGH MAKES DELICIOUS COOKIES AS WELL. I ALWAYS KEPT A LITTLE OF THE DOUGH ASIDE FOR OUR DAUGHTER IF POSSIBLE TO MAKE COOKIES FOR HER. I made them in balls, rolled them in white sugar, FLATTENED WITH A FORK and baked them along with the square... She never ate any kind of pie with filling....She loved pastry dough, She enjoyed these cookes. When making pies, I always made her empty pie crusts and she added white sugar when she ate it it.
  • NOTE # 2: The following is the total directions in the cook book printed. These seasoned cooks thought everyone knew the basics of cooking. Too bad if you were a novice cook........ METHOD: MIX INGREDIENTS AS YOU WOULD A PIE CRUST... LINE YOUR 8X8 SQUARE PAN. PUT FILLING IN AND CUT TOP CRUST IN CIRCLES AND OVERLAP ON TOP OF RAISINS. BAKE in a MODERATE 375 OVEN FOR 30 - 40 MINUTES. My experience with the dough, is if it is mixed like a pie crust, the dough is altogether different and I much prefer my CAKE Method.

Steps:

  • Heat oven to 350 degrees.
  • Liberally coat a 13x9x2-inch baking pan with nonstick cooking spray; set aside.
  • In medium-sized bowl, whisk together flour, baking powder, cinnamon and salt; set aside.
  • In large bowl, with an electric mixer on medium speed, blend together sugar, eggs, butter and vanilla for 3 minutes or until smooth.
  • Reduce speed to low and gradually add flour mixture; mix for 2 minutes or until just incorporated.
  • Stir in diced apples and raisins and spread into prepared pan.
  • Bake at 350 degrees for 35 minutes or until toothpick inserted in center comes out clean.

2 cups all-purpose flour
½ cup white sugar
½ teaspoon baking powder
½ teaspoon salt
2 large egg yolks, beaten
1 cup unsalted butter, cubed
4 medium baking apples, peeled and sliced
¾ cup white sugar
¼ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup powdered sugar
1 tablespoon milk
¼ teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, sugar, baking powder, and salt for crust in a bowl. Cut butter into the mixture with 2 knives or a pastry blender until crumbly; do not overmix. Stir in egg yolks. Press 1/2 of the mixture into a 9x13-inch baking pan, and set the remainder aside for the topping.
  • Prepare filling: Mix apple slices with sugar, flour, and cinnamon until coated. Layer apples overlapping evenly on top of the crust. Drizzle any remaining juices from the apple mixture over top for added sweetness. Crumble the remaining crust mixture over the apples.
