RAISIN, DATE AND FIG FILLING (USE WITH 1-2-3-4 BAR RECIPE)
This is an alternate filling to the canned pie filling used in my 1-2-3-4 Bars recipe. I imagine it could be put to many other good uses, as well!!

DATE-FILLED COOKIES "MY AUNT DORIS'S RECIPE"
These require time and a couple of steps, as there is a filling to cook first, and then cooky dough to make.Dough is rolled and cut out into rounds,two or three inches in diameter. Then put them together with a bottom layer,the filling and a top layer, and pinched aroud the edge. You could make them round with a little filling...

- 1. Although they seem time consuming to make, there is something very special about them, soft and sweet!
- 2. Sift ingredients and mix together dough. Make the filling, stirring until quite thick, add a little more water if needed; and cool a short while. Roll the dough and cut rounds, as small as you like with 1/2 tsp.of the date filling on one layer of dough, cover and pinch the top layer to seal.
- 3. Grease a baking sheet, and preheat the oven to 350 degrees. They bake for 10 to 12 minutes. Watch them for the last couple of minutes, so they don't get too brown.

- In medium bowl, mix together flour, sugar, baking soda, salt and cinnamon. Set aside. In large bowl, mix together cereal and buttermilk. Let stand for 5 minutes or until cereal is softened. Add eggs and oil; beat well. Stir in flour mixture until combined. Stir in dates and raisins. Spread batter evenly in 23 cm (9-inch) square baking pan coated with non-stick cooking spray. Bake at 190ºC (375ºF) for 20 to 25 minutes or until wooden toothpick inserted in centre comes out clean. Let cool, cut into bars. Wrap individually in plastic wrap to store. ** To sour milk, add 15 mL (1 tbsp) vinegar.
GRANDMA'S DATE FILLED COOKIES
These cookies have two layers of delicious and light sugar cookies sandwiched with date filling. I even loved these as a kid, when dates weren't COOL!

Steps:
- Mix in a sauce pan the dates, sugar and TBSP of flour, water, and lemon juice. Cook this for about 5 minutes on a medium heat, until all are blended well.
- Mix together the shortening, sugar, and eggs.
- Stir in the 2 Tbsps. thick cream and l teaspoons vanilla.
- Sift together the 2 1/2 cups of flour, baking soda and salt. Add to shortening mix to form dough.
- Chill dough for at least 1 to 2 hours.
- Roll out dough in thin layers in small batches and cut with round cookie cutter.
- Put mixture (about a tbsp.) in the center between 2 thin cookies pressed together.
- Bake at 350 degrees on lightly greased sheet pan for 8-10 minutes or until bottoms are lightly browned.

Steps:
- Cream shortening and sugar; add eggs.
- Sift flour, baking powder, and salt together.
- Add milk and vanilla.
- Mix well; roll out dough 1/4 inch thick.
- Cut with a round cutter.
- Place on cookie sheet.
- Brush top of cookie with egg white.
- Top with filling.
- Bake at 400 degrees Fahrenheit for 15 minutes.
- FILLING:.
- Grind raisins, dates and candied cherries in a food processer.
- Cook on top of stove until thick, stirring constantly. This stuff will probably burn like no one's business.

Family and friends know I have a fondness for Christmas cookies. Each year after Thanksgiving, they begin asking when the cookies will be ready!

- In a large bowl, cream butter and sugars. Beat in egg and vanilla. Combine the flour, baking soda and salt; stir into the creamed mixture. Divide dough in half; cover and refrigerate for at least 3 hours., In a saucepan, combine the first eight filling ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 4-6 minutes or until the fruit is tender and liquid is absorbed, stirring occasionally. Remove from the heat; stir in pecans. Cool to room temperature., Roll out each portion of dough between two pieces of waxed paper into a 10x8-in. rectangle. Cut each into two 10x4-in. rectangles. Spread 1/2 cup filling down the center of each rectangle. Starting at a long side, fold dough over filling; fold other side over top. Pinch to seal seams and edges. Place seam side down on parchment-lined baking sheets., Bake at 375° for 10-15 minutes or until lightly browned. Cut each rectangle diagonally into 1-in. strips. Remove to wire racks to cool. Combine glaze ingredients; drizzle over cookies.
