My Mom's Raised Doughnuts image

I used to make these with Mom as a little girl. She would make dozens a week and give to neighborhood kids. I would coat them with that ooey good frosting. I recently won a blue ribbon with this recipe. It was also featured and put in newspapers all over the U.S. Then it was voted as 1 of 100 top recipes to be put in the 2011 Members Choice cookbook. They are like eating a flavored cloud. So light and fluffy. Hope you enjoy them as much as we do.

½ cup warm water (100 to 110 degrees F/40 to 45 degrees C)
2 (.25 ounce) packages active dry yeast
1 teaspoon white sugar
¾ cup milk, lukewarm
⅓ cup vegetable shortening
¼ cup white sugar
1 teaspoon salt
2 eggs
4 cups sifted all-purpose flour
2 quarts vegetable oil for frying
1 tablespoon warm water
½ teaspoon vanilla extract
1 cup confectioners' sugar, sifted

Steps:

  • Pour 1/2 cup of warm water into a small bowl, and stir in the yeast and 1 teaspoon of sugar. Allow the yeast mixture to stand until it forms a creamy foam layer on top, 5 to 10 minutes.
  • Place milk and vegetable shortening into a small saucepan over medium-low heat and cook until the shortening has melted and the milk has tiny bubbles around the edge. Remove from heat.
  • Place 1/4 cup of sugar and the salt into the work bowl of a large stand mixer and pour the milk and shortening into the bowl. Mix on low speed just to dissolve sugar; and allow mixture to stand until warm.
  • Beat in the yeast mixture, eggs, and 1 cup of flour on low speed until smooth. Gradually beat in remaining flour to make a soft dough.
  • Continue beating the dough on low speed until dough leaves the sides of the bowl, 2 to 3 minutes.
  • Turn the dough out onto a well-floured work surface and knead until smooth and elastic, 2 or 3 more minutes.
  • Form the dough into a ball and place into a large greased bowl. Grease the top of the dough, and cover the bowl with waxed paper. Set the bowl into a warm place; let the dough rise until doubled in size, 1 to 1 1/2 hours.
  • Punch down the dough and roll out on a floured work surface to 1/2 inch thick. Cut doughnuts out of the dough with a 3 1/2-inch round doughnut cutter with a 1-inch smaller cutter in the center. Let the doughnuts rise on the work surface until very light and fluffy, 40 minutes to 1 hour.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Gently pick up and drop the doughnuts into the hot oil, working in small batches of 2 or 3 at a time, and cook until the doughnuts are light golden brown, turning once, about 2 minutes.
  • Drain the doughnuts on paper towels to absorb oil.
  • In a bowl, mix 1 tablespoon of warm water and vanilla extract, and stir in the confectioners' sugar to make a glaze. Spread a thin layer of glaze over the warm doughnuts.

1/4 cup butter or margarine
2/3 cup scalded milk
2/3 cup warm water (105 to 115 degrees F)
2 packets active dry yeast
3/4 cup sugar
5 cups sifted flour (approximately)
2 eggs, lightly beaten
1 teaspoon salt
1 teaspoon cardamom
1/2 teaspoon cinnamon
1/2 teaspoon mace
Vegetable shortening or cooking oil, for deep fat frying
1/2 cup superfine sugar mixed with 1 teaspoon cinnamon

Steps:

  • Melt butter in milk and cool to lukewarm. Place water in a warm large mixing bowl, sprinkle in yeast, and stir until dissolved; add milk mixture and sugar. By hand, beat 2 1/2 cups flour in until smooth; mix in eggs, salt, and spices. Mix in remaining flour, adding a little extra, if needed, to form a soft but manageable dough. Knead lightly 1 minute on a floured pastry cloth; shape into a ball, place in a greased large bowl, cover, and let rise in a warm, draft-free spot until doubled in bulk, about 1 hour.
  • Punch dough down, roll 1/2-inch thick on pastry cloth, using a floured, stockinette-covered rolling pin. Cut with a floured doughnut cutter and place 1 1/2-inches apart on un-greased baking sheets. Reroll and cut scraps. Cover with cloth and let double in bulk.
  • Meanwhile, begin heating fat in a deep fat fryer. When doughnuts have risen and fat has reached 375 degrees F, ease 4 doughnuts into fat, 1 at a time. Fry about 2 minutes until golden brown all over, using tongs to turn. Drain on paper toweling.
  • While doughnuts are warm, roll in topping.
  • Jelly Doughnuts: Prepare as directed, but roll dough 1/4-inch thick instead of 1/2-inch. Cut in 2 1/2-inch rounds and put 1 teaspoonful tart jelly in the center of 1/2 the rounds. Top with remaining rounds, moisten touching edges slightly, and pinch to seal. Let rise, then fry as directed. Roll in confectioners' sugar while still warm.
  • Crullers: Prepare as directed, but instead of cutting into doughnuts, cut in strips 8-inches long and 1/2 to 3/4-inch wide; let rise, then twist strips several times and pinch ends. Fry at once and roll in topping while still warm.

I was searching on this site for the Krispy Kreme original recipe so I could PinchIt! and couldn't find the right recipe. You can tell the original recipe because it has nutmeg in the recipe. I have also included the glaze recipe that dries and crackles and their marshmallow creme recipe.

2 c scalded milk
1/2 c salted butter (not margarine)
2/3 c white sugar (divided)
1 tsp salt
2 Tbsp active dry yeast or two packets
4 eggs beaten
1/4 tsp nutmeg
7 c sifted flour
GLAZE
3 Tbsp salted butter (melted)
1 1/2 c powdered sugar
1 tsp vanilla extract
2 1/2 Tbsp warm water
MARSHMALLOW CREME FILLING
1 c marshmallow cream
1 1/2 c powdered sugar
1/4 c salted butter softened
1/2 tsp vanilla extract
1/2 to 2 tsp warm water ( i used 2)

Steps:

  • 1. Scald Milk...add butter, 1 tsp. sugar, and salt ......... cool so you don't kill the yeast.
  • 2. Beat warm milk mixture, yeast, nutmeg, eggs, remaining sugar, 3 c. flour in mixer until smooth. Add remaining flour.
  • 3. Knead 5 min then cover and let rise for 1-1 1/2 hours or until double.
  • 4. Roll out dough about 1/2 inch thick or just under 1/2 inch, then cut into shape.
  • 5. Allow cut doughnuts to rise another 30-45 min.
  • 6. Fry 1-2 min. each side at 365 F. (I used brand new lard to fry them) Once golden brown on one side, turn and cook other side till golden brown. Place on paper towel to drain grease. Once cooled for a few min dip in Glaze and set on cooling rack or plate to cool.
  • 7. GLAZE and MARSHMALLOW CREME: Mix the ingredients together and whip till combined and smooth. Same directions for both glaze and marshmallow creme.

My goodness, these are so delicious HOT from the oil... or anytime, really! We doubled the glaze recipe for added ooey, gooey sweetness.

1/2 c water, warm (not hot)
2 pkg active dry yeast
3/4 c milk, lukewarm
1/4 c sugar
1 tsp salt
4 c all-purpose flour, sifted
1/3 c shortening
2 eggs
GLAZE
1 Tbsp water, warm (may need more to thin, but thicker is better)
1/2 tsp vanilla
1 c confectioners sugar, sifted

Steps:

  • 1. SOAK yeast in 1/2 cup warm (not hot) water - 5 minutes. TIP: I throw about 1 tsp. sugar in with this to kick it in the butt to get it going.
  • 2. SCALD the milk and melt shortening. (I always remember Mom melting the Crisco in the warm milk first, so that's how I do it.)
  • 3. POUR milk over sugar and salt in a bowl. Stir until dissolved. Make sure this mixture is warm, not hot.
  • 4. ADD 1 cup of flour, eggs and yeast mixture. Beat until smooth. ADD remaining flour to make a soft dough. When dough leaves sides of bowl, turn out onto lightly floured board. (Recipe calls for 4-4 1/2 cups flour, but every time I make it, it only takes me 4 cups to achieve the right consistency.)
  • 5. KNEAD until dough becomes smooth and elastic. Place in lightly greased bowl. Grease top of dough and cover with waxed paper. Allow to rise in warm place (80-85°) until doubled (1-1/2 hours).
  • 6. ROLL OUT dough to 1/2 inch thickness and cut-with a #2 can that has been opened with a tadpole can opener to leave a sharp cutting edge. Use a pill bottle or the center of doughnut cutter to make the center hole. Remove centers.
  • 7. LET RISE on the board until very light (40-60 minutes).
  • 8. DROP into deep hot fat (325° - 350°) and turn when doughnuts are just barely brown. Turn once again when browned sufficiently.
  • 9. DRAIN on absorbent paper. While still warm, glaze with glaze (ingredients above) or dust each doughnut with granulated or confectioners sugar. NOTE: This recipe is not recommended for use with self-rising flour.

1/2 cup whole milk, warmed to 110 degrees
1/2 cup granulated sugar
1 1/2 teaspoons active dry yeast
1 large egg, room temperature
2 tablespoons water
1 teaspoon pure vanilla extract
2 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon ground cinnamon
1 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1/2 stick (4 tablespoons) unsalted butter, melted, plus more for bowl
Vegetable-oil cooking spray
10 cups vegetable oil, for frying
1/2 cup granulated sugar
1 teaspoon ground cinnamon
Pinch of salt

Steps:

  • Combine milk, 2 teaspoons sugar, and the yeast in a small bowl, and let stand until foamy, about 10 minutes. Whisk egg, water, and vanilla in a bowl.
  • Combine flour, cinnamon, nutmeg, salt, and remaining sugar in the bowl of a standing mixer fitted with the paddle attachment. With mixer on low speed, add yeast mixture, egg mixture, and butter, beating until just combined. Switch to the dough hook, and beat on medium speed until dough forms a ball, 18 to 20 minutes. Place dough in a large buttered bowl, and cover tightly with plastic wrap. Refrigerate overnight.
  • Line a baking sheet with parchment paper, and coat parchment with cooking spray. On a lightly floured work surface, roll dough to 1/4 inch thick. Cut out rounds with a 4-inch cutter, then cut out centers with a 1 1/2-inch cutter. Space rings and holes 1 inch apart on prepared sheet. Coat another piece of parchment with cooking spray, and cover doughnuts. Let rise in a warm place for 1 hour.
  • For the topping: Combine sugar, cinnamon, and salt in a small bowl.
  • Heat oil in a large pot until a deep-fry thermometer registers 375. Meanwhile, line a baking sheet with paper towels. Working in batches so as not to crowd pot, lower doughnuts (both rings and holes) into hot oil. Fry, turning them as they cook, until golden brown, 1 to 2 minutes total. Drain on paper towels for 2 minutes, then roll warm doughnuts in topping to coat. Doughnuts are best the day they are made, but they can be stored in airtight containers overnight.

They attribute it to Edible Chesapeake - a beautiful quarterly that is part of a nationwide "Edible" community focusing on local sustainable produce - www.ediblecommunities.com/content/ . I'll be using good old eastern VA peanut oil for this recipe in place of the canola oil. They turn out to be the lightest, puffiest, tender non-greasy doughnuts - move over Krispy Kreme! You've been replaced. No Kidding! Next time I make I'll be adding some grated apple to the dough & using apple cider to make a glaze (not that there's a thing wrong with lots of cinnamon sugar that is LOL).

1/2 cup apple cider (1/4 cup of it warmed to about 110 degrees)
2 1/4 teaspoons active dry yeast (1 small packet)

4 tablespoons unsalted butter, at room temperature
3 large egg yolks
2 tablespoons sugar
1 teaspoon salt
2 cups sugar
2 tablespoons ground cinnamon
canola oil, for greasing the proofing bowl and for frying

Steps:

  • Place the 1/4 cup of warm cider in the bowl of a stand mixer fitted with a dough hook. Sprinkle the yeast on the surface of the cider and let stand for about 5 minutes, until foamy.
  • Add the flour, the remaining 1/4 cup of cider, milk, butter, egg yolks, the 2 tablespoons of sugar and the salt. Beat on the lowest speed until the flour is incorporated, then increase the speed to medium and beat for about 5 minutes to form a soft, elastic dough that creates a ball around the dough hook.
  • (Alternatively, you can mix the dough by hand with a wooden spoon until it forms a wet, sloppy mass. Oil your hands and give the dough a few turns using the heel of your palm against the edge of the bowl.).
  • Use a little of the oil to lightly grease the inside of a large bowl and place the dough in the bowl. Cover with a clean dish towel and place in a warm spot. Let the dough rise for about 1 1/2 hours, until it has doubled in bulk.
  • Flour a clean work surface. Line a baking sheet with parchment paper and have a wire rack ready. Heat enough oil to fill about 3 inches in a large, heavy-bottomed pot over high heat.
  • Punch down the dough; it will be sticky. Place the dough on the floured surface, then roll it out to a thickness of 1/2-inch, adding flour as needed to keep the dough workable. Use a 3-inch doughnut cutter or two cookie cutters, in 3-inch and 1/2-inch sizes, to create 8 to 10 doughnuts. Do not reroll the dough; because it is leavened, it needs the rising action for structure. Rerolling will flatten the lift you've achieved. Save any scraps for frying.
  • Place the doughnuts on the prepared baking sheet. Cover with the clean towel and let the doughnuts and any scraps of dough rise for 15 to 30 minutes, until well puffed (they do not need to double in bulk).
  • Combine the remaining 2 cups of sugar and the cinnamon in a medium bowl.
  • Once the oil reaches 325 degrees, begin frying the raised doughnuts in batches of 2 or 3 at a time. Fry for 2 to 3 minutes on the first side until golden brown, then use tongs or long metal skewers to turn the doughnuts and fry on the second side for 2 to 3 minutes until golden brown.
  • Use a skimmer or skewer to transfer one doughnut at a time to the bowl of cinnamon sugar; immediately turn as needed to coat evenly on all sides. Transfer to the wire rack and repeat with the remaining raised doughnuts and any leftover scraps of risen dough.

3/4 cup milk
1/3 cup sugar
1tsp salt
1package granular or compressed yeast
1/4 cup water
4 1/4 cup flour - sifted
1tsp nutmeg
1/3 cup soft shortening
2 eggs

Steps:

  • 1. Scald milk.add sugar and salt. Cool to lukewarm.
  • 2. Sprinkle yeast over warm water; or crumble compressed yeast into lukewarm (85°) water. Stir til dissolved.
  • 3. Add milk mixture, 2 cups flour,and nutmeg.beat well.
  • 4. Stir in shortening, then eggs.
  • 5. Add remaining flour, kneading in last portion on lightly floured surface.
  • 6. Place in greased bowl, turning once to grease top. Let rise in warm place until doubled.

  • 8. Remove trimmings and form into ball. When doubled, roll out and cut.

  • For filling:
  • Whisk sugar, flour, and espresso powder in heavy medium saucepan to blend. Gradually add milk, whisking until smooth. Whisk in yolks and salt. Add butter. Cook over medium-high heat until pastry cream thickens and boils, whisking constantly, about 6 minutes. Whisk in vanilla. Transfer to small bowl. Press plastic wrap directly onto surface of filling. Chill until cold, at least 4 hours and up to 2 days.
  • For doughnuts:
  • Combine yeast and 1/4 teaspoon sugar in large bowl of heavy-duty mixer. Pour warm milk over and stir to blend. Let stand until yeast dissolves and mixture bubbles, about 10 minutes.
  • Meanwhile, whisk flour, cinnamon, salt, and 1/4 cup sugar in medium bowl to blend. Whisk butter and eggs in another medium bowl to blend.
  • Butter large bowl. Using dough-hook attachment, beat butter-egg mixture into yeast mixture on medium-low speed until well blended, stopping occasionally to scrape down sides of bowl, about 4 minutes. Beat in flour mixture by 1/4 cupfuls, then beat dough until smooth and beginning to pull away from sides of bowl, about 5 minutes. Scrape dough from hook into bowl. Let dough rest 5 minutes. Scrape dough into buttered bowl (dough will be sticky). Turn dough to coat with butter. Cover bowl with plastic wrap and refrigerate dough overnight. Sprinkle 2 baking sheets lightly with flour. Gently press dough to deflate. Roll out chilled dough on lightly floured surface to 1/3-inch thickness. Using 2 3/4- to 3-inch-diameter round cutter, cut out dough rounds. Transfer rounds to floured sheets, spacing 2 inches apart. Gather dough scraps. Roll out to 1/3-inch thickness; cut out more rounds. Repeat until all dough is used.   • Line 2 baking sheets with several layers of paper towels. Pour oil into large deep skillet to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 360°F to 370°F. Fry 3 dough rounds at a time until golden brown, adjusting heat to maintain temperature, about 1 1/2 minutes per side. Using slotted spoon, transfer doughnuts to paper towels to drain.   • Spoon filling into pastry bag fitted with 1/4-inch plain round tip. Push blade of small sharp knife into side of 1 doughnut about 3/4 of the way to opposite side; remove knife. YEAST- RAISED REFRIGERATOR DOUGHNUTS

This is being posted in response to a request. It is from one of my favorite cookbooks "The Grass Roots Cookbook" by Jean Anderson. Oddly enough, it is the same contributor as another recipe I posted also by request. Rhe recipe contributor is a Mrs. McGraw. I don't know who she is, but MAN can this lady cook. Yield 2 1/2 dozen doughnuts (plus holes)

Number Of Ingredients 15

1/4 cup vegetable shortening
1/2 cup sugar
1 teaspoon salt
1/8 teaspoon mace (or nutmeg)
1 teaspoon lemon zest, finely grated
1 cup boiling water
1 cup evaporated milk
2 (1/4 ounce) envelopes active dry yeast
1/2 cup very warm water
2 eggs, lightly beaten
7 1/2 cups sifted all-purpose flour, divided (about)
vegetable oil (for frying)
1 1/2 cups confectioners' sugar
1/2 cup boiling water
1/2 teaspoon lemon juice

Steps:

  • place shortening, sugar, salt, mace, lemon zest (if using) in a small bowl and pour over boiling water.
  • Stir until sugar dissolves and shortening melts.
  • Mix in evaporated milk and cool until warm (110-115°F).
  • Sprinkle yeast over very warm water in large bowl.
  • Stir until yeast is dissolved.
  • Mix in the cooled shortening mixture into the yeast; beat in eggs.
  • Add 4 cups of flour and beat hard with electric mixer at high speed 1-2 minutes or until smooth.
  • SLOWLY beat in enough of the remaining 3 1/2 cups of flour to make a very soft dough (IT WILL BE STICKY).
  • Place dough in large, well-buttered bowl, then turn dough in bowl to grease all over.
  • Lay a piece of buttered wax paper on top of dough, then cover bowl with a lid.
  • Place in refrigerator for 4-5 hours or until needed (it will rise as it stands in refrigerator).
  • Add enough oil into deep fat fryer to a depth of 3 inches and heat to 360°F.
  • BE CAREFUL PLEASE.
  • Take out whatever amount of dough you need (1/3 of the dough should yield about 10 doughnuts) and roll out on floured board with floured rolling pin.
  • Cut with 3" doughnut cutter and let stand at room temperature for 15-20 minutes.
  • Fry doughnuts in oil, no more than 2-3 at a time (with their holes).
  • Cook for 1 1/2 minutes per side (the holes will cook faster) or until they are rich caramel brown.
  • Drain on crumpled paper towels as they come from the hot oil.
  • Cool to almost room temperature and if desired, dip quickly in glaze (for the glaze: blend together confectioners sugar, boiling water, and lemon juice).
  • Let them drip-dry on wire rack set over waxed paper.
  • •or roll in sugar or cinnamon sugar.
  • **if you don't have a doughnut cutter, use a 3-inch biscuit cutter and a smaller biscuit cutter to make the center hole.

5 cups all-purpose flour
1/2 cup sugar
1 teaspoon salt
1/2 ounce active dry yeast (2 packages)
1 3/4 cups warm milk (120-130deg F)
1/3 cup shortening
2 eggs
vegetable oil (for frying)
2 cups confectioners' sugar
1 teaspoon vanilla extract
4 -6 tablespoons milk

Steps:

  • FOR BREAD MACHINE:.
  • Place all ingredients into bread machine and press "dough".
  • Dough will rise very high and push up top of the machine. Do not be alarmed.
  • BY HAND:.
  • Mix 2 cups flour,1/2 cup sugar, salt, and yeast in a large bowl.
  • Add milk, shortening, and eggs.
  • Beat on low for one minute, scraping bowl frequently.
  • Beat on medium for one minute, scraping bowl frequently.
  • Stir in remaining flour until smooth.
  • Cover and let rise in a warm place for 50-60 minutes or until double.
  • (Dough is ready if indentations remain when touched.).
  • Turn dough onto generously floured surface.
  • Roll around lightly to coat with flour.
  • Flatten dough with hands or rolling pin to 1/2 inch thickness.
  • Cut with floured doughnut cutter.
  • Push scraps together and gently knead 2 or 3 times.
  • Flatten dough to 1/2-inch thickness.
  • Cut with floured doughnut cutter.
  • Cover doughnutes and let rise 30-40 minutes or until double.
  • Heat oil 1 1/2-2 inches deep in Dutch oven to 350°F.
  • Slide doughnuts into hot oil with wide spatula.
  • Fry about 1 minute on each side or until golden brown.
  • Remove carefully from oil. (Do not prick surface.).
  • Drain on paper towels.
  • Roll or shake in sugar, or dip the tops of doughnuts in glaze.
  • TO MAKE GLAZE:.
  • Combine all glaze ingredients in a bowl with a fork.
  • If the glaze is too thin, add more confectioners' sugar.
  • If it is too thick, add more milk.

MOM'S RAISED DOUGHNUTS

1 package yeast active dry
1/4 cup water warm (105° to 115°)
1 cup milk warm
1/2 cup butter or margarine, softened
1/2 cup sugar
1 1/2 teaspoons salt
2 eggs
1 cup potato warm unseasoned mashed
5 1/2 cups flour
vegetable shortening
Vanilla Glaze (see below) or sugar

Steps:

  • In a small bowl, dissolve yeast in warm water let stand until foamy, 5 to 10 minutes.In a large mixer bowl at low speed, beat milk, butter, 1/2 cup sugar and salt until sugar is dissolved. Add eggs, mashed potatoes and yeast mixture and beat at low speed until well blended.Beat in 3 cups of the flour until mixture is smooth. By hand, stir in enough remaining flour to make a sticky dough. On a well-floured surface, knead for 3 to 5 minutes or until dough is smooth and elastic. Place in a greased bowl turn to coat surface. Cover and let rise in a warm place, free from drafts, until doubled, about 45 minutes.On a lightly floured surface, roll dough to 1/2 -inch thickness. Cut with a 2 1/2 -inch doughnut cutter. Remove cut centers. Place doughnuts 1 inch apart on greased baking sheets. Cover and let rise in a warm place, free from drafts, until almost doubled, about 30 minutes.In a heavy saucepan or Dutch oven, heat 1 inch of melted shortening to 375°. Fry doughnuts, a few at a time, until golden brown, turning once. Remove with a slotted spoon and drain on paper towels. Dip into glaze or sprinkle with sugar while still warm.To freeze uncooked doughnuts and fry later, roll and cut as directed. Place on a greased baking sheet and place in freezer. When frozen, place doughnuts in plastic bags or freezer containers and store up to 2 weeks. To use, place doughnuts on greased baking sheets and place in a preheated 175° oven turn off oven. Allow to thaw and rise for about 30 minutes or until almost doubled. Fry as directed above.

RAISED DOUGHNUTS AND BISMARCKS

2 packages yeast active dry
1/2 cup water warm (105° to 115° F)
7 cups flour
2 cups milk lukewarm
1/2 cup vegetable shortening solid
1/2 cup granulated sugar
2 teaspoons salt
1 teaspoon vanilla extract
3 eggs beaten
Lard or vegetable oil for frying
Glazes and Icings (see Coffee Klatch chapter)
Powdered sugar or granulated sugar
Jelly or custard

Steps:

  • Dissolve yeast in warm water let set until foamy, 5 to 10 minutes. Combine with 3 cups flour and milk. Cover and let rise in a warm place, free from drafts, until light and bubbly, about 30 minutes. Cream shortening, 1/2 cup granulated sugar, salt and vanilla until fluffy add eggs and beat well. Stir into batter. Add remaining flour to make a soft dough. On a lightly-floured surface, knead until smooth and elastic. Place in a greased bowl turn dough to coat surface. Cover and let rise in a warm place, free from drafts, until doubled, about 90 minutes.To Make Doughnuts: Roll out dough 1/2 -inch thick on a lightly-floured surface. Cut with a floured doughnut cutter and place 1 inch apart on greased waxed paper. Cover and let rise in a warm place, free from drafts, until doubled, about 30 to 45 minutes. Fry in 1-inch deep preheated 375° F lard or vegetable oil until golden, turning once. Drain on paper towels glaze or sprinkle with sugar while still warm.To Make Bismarcks: Roll dough 1/2 -inch thick cut into 3-inch rounds. Let rise and fry as for Doughnuts cool. With a sharp knife, cut a short slit in side of each Bismarck through to the center. Put a teaspoon of jelly or custard in center and close tightly. Dust with powdered sugar or granulated sugar.To Fill Bismarcks with Bismarck Filler Tube: Attach tube to pastry bag. Fill with desired jelly or custard insert tube into side slit of Bismarck and squeeze gently to fill with about 1 to 2 teaspoons filling.

BAKED RAISED DOUGHNUTS

1 egg, at room temperature
1/4 cup superfine sugar
1 cup whole milk, heated to 110 degrees F
1 tablespoon active dry yeast
2 teaspoons vanilla extract
1 teaspoon kosher salt
2 1/2-3 1/2 cups all-purpose flour, divided, plus more for dusting
1/2 cup unsalted butter, cut into 1-inch cubes, at room temperature
1 tablespoon Vegetable oil for greasing

Steps:

  • In the bowl of a stand mixer fittend with the paddle attachment, beat the egg and sugar on medium speed until blended, about 1 minute. Add the milk, yeast, vanilla, and salt and mix on medium speed to blend. With the mixer on low speed, add 2 cups of the flour about 1/2 cup at a time, and beat until the dough is thick and pulls away from the sides of the bowl, about 2 minutes.
  • Switch to the dough hook attachment. With the mixer on medium spee, add the butter one piece at a time, and beat until no large chunks are left in the bottom of the bow, 3 to 5 minutes. Reduce the speed to low and add addtional flour until the dough gathers around the hook and pulls completely away from the sides of the bowl. It will be soft and moist, but not overly sticky. You may have flour left over.
  • Turn the dough out onto a floured surface and knead gently until the dough no longer sticks to your hands. LIghtly grease a large mixing bowl. Transfer the dough to the bowl and turn to coat. Cover with a damp tea towel or plastic wrap and let rise in a warm spot until doubled in size, about 1 hour.
  • Punch down the dough and roll out to 1/2 inch thick, lightly flouring the surface if the dough sticks. With a doughnut or cookie cutter, cut out 3-inch rounds with 1-inch holes (for filled doughnuts, don't out out the holes).
  • Preheat the oven to 400 degrees F and line a baking sheet with parhcment paper. Place the doughnuts at least 1 inch apart on the baking sheet. Cover with plastic wrap and let them sit in a warm spot until nearly doubled in size, about 20 minutes.
  • Bake until the doughnuts are a light golden brown, 5 to 8 minutes, being very careful not to overbake them. Immediately glaze them, or brush with butter and dust with superifne sugar, and eat while still warm.

3/4 cup whole milk
2 1/4 teaspoons active dry yeast
2 cups unbleached all-purpose flour
2 tablespoons unbleached all-purpose flour
1 cup cake flour (not self rising)
6 extra-large egg yolks
1/2 cup sugar
3/4 teaspoon kosher salt
1/2 cup unsalted butter
1 vanilla bean
1 tablespoon pure vanilla extract
6 cups vegetable shortening

Steps:

  • In a small saucepan over medium heat, heat milk until warm to the touch. Transfer to the bowl of a mixer fitted with a dough hook, and add yeast. Let yeast soften 1 to 2 minutes, then stir to combine. Add 2 3/4 cups flour, without stirring. Cover bowl tightly with plastic wrap, and set aside in a warm place until surface of flour cracks, 30 to 40 minutes.
  • In a large mixing bowl, whisk together egg yolks, sugar and salt. Whisk in 1/4 cup flour, and set aside.
  • In a small saucepan over medium heat, melt butter. Split vanilla bean lengthwise, and scrape out pulp and seeds into butter. Swirl pan as butter heats, and cook 3 to 5 minutes, until bubbles subside and liquid is dark brown. Remove vanilla bean.
  • Whisk butter into egg mixture. Stir in vanilla. Add to yeast mixture. Return to mixer, and mix on low for 1 minute. Add remaining 2 tablespoons flour, and mix to combine. Turn mixer up to medium-high for 1 more minute. Dough should be very sticky.
  • Sift a light coating of flour onto a work surface. Scrape dough onto it, and gather into a ball. Clean mixing bowl, and lightly coat with oil. Add dough, cover and allow to rise for 1 1/2 to 2 hours, until doubled.
  • Turn dough out onto lightly floured surface, tuck edges to deflate and return to oiled bowl. Cover and allow dough to rise until doubled, about 30 minutes.
  • In a deep, heavy pan, heat shortening to 365 degrees. Turn dough out onto lightly floured surface, and gently pat into a rectangle about 1/2 inch thick, flouring surface of dough as necessary. Dip a 2 1/2-inch doughnut cutter in flour, and cutting as close together as possible, cut out doughnuts. Let doughnuts and holes rest 15 minutes. Gather scraps of dough together, gently roll or pat to 1/2-inch thickness and cut out remaining doughnuts.
  • Add doughnuts to pan, a few at a time. When they rise to surface, turn them over. Adjust heat to keep oil at 365°F Fry until browned, about 30 to 50 seconds, then flip once more and brown other side. Drain on paper towels. Fry remaining doughnuts. Fry holes separately; they will take less time. Cool, then sift powdered sugar over doughnuts. Or, dip them in one of the following coatings.
  • Topping variations:
  • Honey glaze: In a pan, heat 3/4 cup of honey until it is warm to the touch, and then dip the warm doughnuts in to coat.
  • Cinnamon sugar: Combine 1/2 cup sugar with 1 teaspoon sea salt and 1 1/4 teaspoons cinnamon, and dip the warm doughnuts in to coat.
  • White glaze: Combine 1/2 cup plus 2 tablespoons sifted powdered sugar in the top of a double boiler over simmering water with 1/4 cup heavy cream, 1/2 teaspoon vanilla extract and 1/8 teaspoon Kosher salt. Heat until just warm, stirring frequently, until thin and translucent. Use a pastry brush to coat doughnuts.

I'm posting this in answer to a request. I have added a few suggestions, based on my experience with yeast doughs, but the recipe is from Betty Crocker's Cookbook, 1969. I have made these and they turned out well, but it was a very long time ago. The cooking time is my guess for the total recipe, not for each doughnut. Both prep times and cooking times are approximations.

1/4 cup warm water
2 1/4 teaspoons dry yeast
3/4 cup lukewarm milk
1/4 cup sugar
1 teaspoon salt
1 egg
1/4 cup shortening
3 3/4 cups flour (about, divided)
1/3 cup boiling water
1 cup confectioners' sugar

Steps:

  • Place warm water in a large mixing bowl.
  • Sprinkle yeast over the surface of the water; wait a few minutes then stir to dissolve.
  • Mix in milk, sugar, salt, egg, shortening, and 2 cups flour and beat until smooth.
  • Mix in up to 1¾ cups more flour, until you get a dough that can be handled.
  • (Too soft is better than too stiff.) Turn dough onto lightly floured surface; knead until smooth and elastic, about 5 minutes.
  • Place in a greased bowl; turn greased side up and cover with oiled plastic wrap.
  • Let rise in a warm place until double, about 1½ hours; punch dough down.
  • (When the weather is warm, the dough will rise more quickly, do not let it rise past double.) Let rise again until almost double, about 30 minutes; roll dough 3/8 inch thick on lightly floured surface.
  • Cut with a doughnut cutter that has been floured.
  • Let rise, uncovered, on waxpaper until double and very light, 30 to 45 minutes.
  • Heat oil to 375°.
  • Drop doughnuts into hot fat.
  • Turn doughnuts as they rise to the surface.
  • Fry 2 to 3 minutes or until golden on both sides, being careful not to prick them.
  • Carefully remove from fat and drain.
  • Roll in sugar or glaze while warm.
  • To glaze, blend ingredients for glaze and dip warm doughnuts into it.
