1 qt rainbow sherbet
1 cup strawberry, halved
½ cup blueberry
1 lemon, sliced
½ cup raspberry
¼ grapefruit, sliced
3 cups lemon-lime soda
3 cups champagne, or lemon- or lime-flavored sparkling water
6 cups pink lemonade

Steps:

  • Arrange 8 scoops of sherbet on a parchment paper-lined baking sheet. Freeze for 30 minutes.
  • In a large punch bowl, combine the strawberries, blueberries, lemon, raspberries, and grapefruit.
  • Add the lemon lime soda, champagne, and pink lemonade. Stir to combine.
  • Remove the sherbet scoops from the freezer and use a spoon to place in the punch bowl.
  • Enjoy!

  • In a small pitcher, stir together the ginger ale, cranberry juice, and pineapple juice. Keep cold.
  • In a chilled punch bowl, scoop the rainbow sherbet out in balls in separate colors. Just before serving, pour the chilled punch carefully over the balls of sherbet.

4 cup(s) pineapple and orange drink mix
3 cup(s) rainbow sherbert

Steps:

  • Combine ginger ale and juice in a pitcher; stir to mix. Add ice to taste
  • Pour 1 cup juice in each of 8 glasses and top each with a rounded 1/3 cup of sherbert. (1 cup per serving)
  • For adults ... consider adding a little vodka or gin to the punch for a flavorful kick !
