Note: The quantity needed will depend on the size of the plate or platter.
Strawberries
Cantaloupe
Pineapple
Green grapes
Blueberries
Black grapes
Marshmallows
Wrapped Rolos candies

Steps:

  • Wash and dry the fruit. Cut into bite-size pieces if desired.
  • Arrange the fruit beginning with the strawberries along the edge of the plate.
  • Continue adding the fruit, row by row, in the order listed. If the fruit slides towards the center, gently push the fruit back towards the edge of the plate and continue adding rows until the rainbow is complete.
  • Add a small bowl on each side of the rainbow with one holding marshmallows and the other holding the Rolos candies. If prefered, place the marshmallows and candies directly on the plate.
  • Serve with bamboo skewers if desired to allow guests to create their own rainbow kabob.

2 cups fresh strawberries, halved
2 cups cut-up cantaloupe (1/2-inch pieces)
2 kiwis, peeled, sliced
1 cup blueberries
1 mango, cut into 1/2-inch pieces
1 cup fresh raspberries
1/4 cup PHILADELPHIA Strawberry Cream Cheese Spread
1 tsp. fresh lime juice
1 cup thawed COOL WHIP Whipped Topping

Steps:

  • Arrange fruit in arc shape on large platter to resemble rainbow.
  • Whisk cream cheese spread and lime juice in medium bowl until blended. Stir in COOL WHIP.
  • Serve fruit with cream cheese mixture.

1 avocado , stoned, peeled and halved
1 ripe mango , stoned, peeled and cut into chunks
1 apple , cored and cut into chunks
200ml almond milk
1 dragon fruit , peeled and cut into even chunks
100g mixed berries (we used strawberries, raspberries and blueberries)

Steps:

  • Put the spinach, avocado, mango, apple and almond milk in a blender, and blitz until smooth and thick. Divide between two bowls and top with the dragon fruit and berries.
