For the Chipotle Ketchup:
1 cup tomato sauce
2 tablespoons light brown sugar
3 tablespoons chipotle in adobo paste, puréed
2 tablespoons cider or white wine vinegar
1 tablespoon Worcestershire sauce
12 slices bacon, 4 slices finely chopped
A drizzle of EVOO - Extra Virgin Olive Oil
1/2 small onion, chopped
2 jalapeño peppers, chopped
4 cloves garlic, chopped
1 1/2 pounds ground beef
1/2 tablespoon cumin, half a scant palmful
1/2 tablespoon ground coriander, half a palmful
1 tablespoon smoked sweet paprika, a scant palmful
1 teaspoon Mexican oregano
4 slices smoked or sharp cheddar
4 slices Pepper Jack cheese
4 crusty burger rolls, split and toasted
Lettuce and red onions, for topping

Steps:

  • Preparation Place ketchup ingredients in a small pot and simmer 20 minutes over low heat to thicken. Heat oven to 375ºF and bake 8 slices of bacon on slotted pan to crisp. Heat a drizzle of EVOO in a skillet, add chopped bacon and cook to crisp. Remove to a paper towel-lined plate to drain, leaving 2 tablespoons drippings in the pan. Cook onions, jalapeños and garlic in the drippings to soften, 7-8 minutes. Let cool. Place meat in bowl, add chopped bacon, cooled onions and jalapeños, cumin, coriander, paprika, oregano, salt and pepper. Form 4 patties and cook in the skillet over medium-high heat 8-12 minutes, turning once, for medium to well-done. Melt 1 slice of each cheese over each burger during the last minute or 2. Place burgers on buns, top with bacon slices, lettuce, onions and chipotle ketchup.

2 pounds ground sirloin
1 medium onion, peeled and cut in 1/2
2 tablespoons Worcestershire sauce, eyeball it
2 chipotles in adobo and 2 tablespoons of adobo sauce
2 tablespoons grill seasoning, a couple of palm fulls, (recommended: Montreal Steak Seasoning by McCormick)
1 tablespoon extra-virgin olive oil, plus some for drizzling
3 cloves garlic, finely chopped
3 tablespoons brown sugar
1/4 cup vinegar
1 (15-ounce) can crushed fire roasted tomatoes, about 2 cups
Salt and pepper
12 slices, 1/2-inch thick, brick-cut smoked Cheddar or sharp Cheddar, (recommended: Cabot), optional
12 small round rolls, split

Steps:

  • Preheat grill pan to high.
  • Place the meat in a bowl. Cut the onion in half. Grate half the onion into the meat using the small grate on a box grater. Chop and reserve the other half onion. Add Worcestershire, chipotles and sauce and grill seasoning to burgers. Drizzle a little extra-virgin olive oil over the bowl and mix meat. Score the meat into 4 sections. Make 3 mini-burgers, each 3 inches wide, 1-inch thick, from each half-pound of meat.
  • Heat a small sauce pot over medium heat. Add extra-virgin olive oil and garlic. Cook garlic 2 to 3 minutes then add sugar and vinegar, cook 2 minutes more and stir in tomatoes. Season sauce with salt and pepper and allow it to reduce 5 to 6 minutes more.
  • Grill meat 2 to 3 minutes on each side and top with cheese, if you like.
  • Place burgers on buns and top with raw chopped onions and warm fire roasted ketchup and serve.

Inside-Out Bacon Cheeseburgers with Grilled Green Onion Mayo image

5 slices bacon, chopped
4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce

Steps:

  • Preheat grill pan over high heat.
  • In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
  • Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
  • Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.
  • Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.
  • Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.
