QUINOA PILAF WITH PINE NUTS

2 cups low-sodium chicken broth
1 cup quinoa, rinsed
1/4 cup pine nuts
1 tablespoon olive oil
1/2 large onion, chopped
1/3 cup chopped fresh parsley leaves
Salt and pepper

Steps:

  • Put the broth and quinoa in a medium sized saucepan and bring to a boil. Reduce heat to a simmer, cover and cook for 15 to 20 minutes, until liquid is absorbed and grain is tender.
  • Meanwhile, toast the nuts in a large dry skillet over medium-high heat until golden brown and fragrant, about 2 minutes, stirring frequently. Remove nuts from pan and set aside. Heat the oil in the same skillet over a medium-high heat. Add the onions and cook stirring occasionally, until the onions soften and begin to brown, about 6 minutes.
  • When the quinoa is done, fluff with a fork and transfer to a large serving bowl. Stir in the pine nuts, onions, and parsley. Season with salt and pepper and serve.

1 1/4 cups whole grain quinoa (about 7 ounces)
1 3/4 cups low-salt chicken broth (preferably organic)
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh cilantro or Italian parsley
1/3 cup pine nuts

Steps:

  • Place the quinoa in a fine sieve. Rinse under cold running water 1 full minute. Set aside to drain.
  • Bring the broth, salt and pepper to a boil in heavy, medium saucepan over medium-high heat. Stir in the quinoa. Cover, reduce the heat to medium-low and simmer until the quinoa is tender and all the broth is absorbed, about 15 minutes. Turn off the heat. Let the quinoa stand, still covered, for 10 minutes.
  • Meanwhile, preheat the oven to 350 degrees F. Scatter pine nuts on a small rimmed baking sheet. Toast the nuts until golden, stirring occasionally, about 5 minutes. Cool on the baking sheet.
  • Mix the cilantro and pine nuts into the quinoa.

1 Cup Quinoa, toasted.
1 3/4 cup Chicken Broth.
1/4 cup toasted Pine nuts.
2 cloves thinly sliced garlic
2 Tbsp. olive oil
1/4 c. Raisins.
1/3 cup chopped fresh parsley.
Salt and pepper to taste

Steps:

  • In a med sized saucepan, add toasted Quinoa to chicken broth. Bring to a boil. cover and lower heat. cook for 10 to 12 minutes. Remove from heat and set aside. Toast the pine nuts, set aside. Brown garlic in the 2 Tbsp. olive oil. Fluff Quinoa with a fork, add the pinenuts, garlic, oil, 1/4 c. raisins, and the parsley. Toss Corrected seasonings and serve.

2 teaspoons minced garlic
1 cup quinoa, rinsed well and drained
2 cups water or 2 cups broth
1/4 teaspoon salt

  • Sauté onion in olive oil for 2-3 minutes; add garlic and continue sautéing for another 30 seconds or so.
  • Add quinoa, water and salt to pan; bring to boil then reduce heat then cover and simmer 15 minutes until liquid is absorbed.

I typically use a medium yellow onion instead of 2 shallots because that's usually what we have on hand. It's delicious either way! Also, it usually takes me a lot longer than 10 minutes for all the water to be absorbed, so just keep an eye on it and adjust the time accordingly. The recipe came from Vegan Planet.

1 1/2 cups quinoa
2 tablespoons olive oil
2 large shallots, minced
1 teaspoon fresh ginger, peeled and minced
1/2 teaspoon ground cardamom
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/8 teaspoon cayenne
3 cups vegetable stock, heated
salt & freshly ground black pepper
1/3 cup golden raisin
1/4 cup pine nuts, toasted
2 tablespoons fresh parsley leaves, minced

Steps:

  • Rinse the quinoa well to remove the bitter white coating. Drain thoroughly and set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the shallots and ginger and cook, stirring, until the shallots are slightly softened, about 1 minute. Add the quinoa along with the cardamom, coriander, cumin, and cayenne and stir to coat with the oil. Stir in the hot stock and bring to a boil. Reduce the heat to low and season with salt and pepper to taste. Cover the cook until all the water is absorbed, about 10 minutes.
  • Remove from the heat and stir in the raisins, pine nuts, and parsley. Serve hot.

½ cup sliced almonds
4 cups vegetable stock
2 cups quinoa
1 English cucumber, diced
15 grape tomatoes, quartered
1 bunch fresh flat-leaf parsley, stemmed and leaves finely chopped
1 orange bell pepper, diced
¾ cup crumbled feta cheese
½ cup raisins
¼ cup chopped black olives
4 scallions, white and light green parts, chopped
½ cup fresh lemon juice
½ cup olive oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread almonds onto a baking sheet.
  • Bake almonds in the preheated oven until lightly toasted and fragrant, 5 to 10 minutes.
  • Bring vegetable stock and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender and stock has been absorbed, 15 to 20 minutes. Transfer quinoa to a bowl and refrigerate until chilled, about 30 minutes.
  • Mix almonds, cucumber, tomatoes, parsley, orange bell pepper, feta cheese, raisins, olives, and scallions into quinoa.
  • Whisk lemon juice and olive oil together in a bowl; pour over quinoa mixture and stir until quinoa mixture is coated.
