Sweet Potato and Turkey Couscous image

After our Thanksgiving feast, we always have leftover turkey and sweet potatoes. I put them together in this quick, easy and nutritious main dish that satisfies with a simple green salad alongside. -Roxanne Chan, Albany, California

1 pound sweet potatoes (about 2 medium), peeled and cut into 3/4-inch cubes
1 tablespoon canola oil
1 package (8.8 ounces) uncooked pearl (Israeli) couscous
1/4 cup chopped onion
1/4 cup chopped celery
1/2 teaspoon poultry seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
2 cans (14-1/2 ounces each) chicken broth
2 cups chopped cooked turkey
1/4 cup dried cranberries
1 teaspoon grated orange zest
Chopped fresh parsley

Steps:

  • Place sweet potatoes in a saucepan; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 8-10 minutes. Drain., Meanwhile, in a large cast-iron or other heavy skillet, heat oil over medium-high heat; saute couscous, onion and celery until couscous is lightly browned. Stir in seasonings and broth; bring to a boil. Reduce heat; simmer, uncovered, until couscous is tender, about 10 minutes., Stir in turkey, cranberries, orange zest and potatoes. Cook, covered, over low heat until heated through. Sprinkle with parsley.

130g pack roast turkey slices
80g pack green salad leaves
200g tub fresh Moroccan couscous
100g tub pomegranate seeds

Steps:

  • Roughly tear the turkey slices and put in a large bowl with the salad and couscous. Add a drizzle of olive oil and toss well. Divide between two plates, then sprinkle each with the pomegranate seeds. Grind over pepper to serve.

Ground Turkey Enchilada Stir-Fry with Couscous image

An enchilada, by definition, is a corn tortilla filled with various ingredients and drenched in cheese and sauce. This recipe doesn't involve any rolling of tortillas, nor does it require copious amounts of cheese. However, every bite will remind you of the flavors of this popular comfort food.

Number Of Ingredients 10

1/2 cup whole wheat couscous
1 pound lean ground turkey
Salt and freshly ground black pepper
1 teaspoon olive oil
2 cups butternut squash, peeled, seeded and diced
1 cup broccoli florets
One 15-ounce can no-sodium-added black beans
One 10-ounce can enchilada sauce
1/2 cup salsa
Suggested toppings: chopped fresh cilantro, diced avocado, shredded cheese, lime juice

Steps:

  • Pour 1/2 cup of water into a small saucepan and bring to a boil over high heat. Pour the couscous into the saucepan and stir well. Turn off the heat, cover and let stand 5 minutes. Fluff with a fork and set aside.
  • Meanwhile, in a large skillet or wok, cook the ground turkey over medium heat, breaking it up with a wooden spoon, until cooked through and browned, about 5 minutes. Sprinkle with some salt and pepper. Transfer to a bowl and set aside. Drain the excess fat and wipe the pan clean. Heat the oil in the same pan over high heat, then add the squash and cook, stirring occasionally, until browned and softened, 8 to 10 minutes. Add the broccoli and cook, 3 to 5 minutes more. Add the turkey, beans, enchilada sauce and salsa and stir until all the ingredients are well combined.
  • Serve with the couscous and top with suggested toppings as desired.

seasoning (any kind)

Steps:

  • Preheat oven at 550 degrees.
  • After seasoning turkey, cook for 30 minute on 550.
  • Turn oven down to 450 degrees and cook for 1 1/2 hours.
  • Do not open the oven at all during this cooking time and the turkey is cooked complete (providing you follow the directions). It really doesn't matter how big or how small the turkey actually is. It will be fully cooked as long as the directions are followed and the oven door remains closed during the cooking process!
