3/4 cup whole milk greek yogurt (or light sour cream)
1/4 - 1/2 cup water
1 medium lime (juiced)
2 tsp ancho chili powder
1 tsp smoked paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp salt (or to taste)
1/2 tsp pepper
1/4 tsp cayenne (optional)
1 tsp dried cilantro (or 2 Tbsp freshly chopped cilantro)

Steps:

  • Combine the ingredients in a salad shaker or bowl.
  • Shake or whisk together until smooth.
  • Serve and enjoy!

A crisp and refreshing southwestern salad tossed in a delicious creamy avocado cilantro-lime dressing.

1 large head romaine
15 oz. can black beans
1 orange bell pepper
10 oz. cherry/grape tomatoes (about 1 pint)
2 cups sweet corn, cooked
5 green onions
1 cup loosely packed cilantro (stems removed and roughly chopped)
1/2 avocado (or 1/2 cup plain vegan yogurt)
2 Tbsp. fresh lime juice (about 1 lime, more to taste)
1-2 garlic cloves
3 Tbsp. olive oil (for oil-free, sub a little water to thin)
1 1/2 tsp. white wine vinegar
1/8 tsp. salt
Recommended: agave & cumin to taste

Steps:

  • Make the dressing: Blend all dressing ingredients in a food processor/blender until smooth. Taste and adjust seasonings if necessary. (I like the addition of a little cumin, and also agave to sweeten.)
  • Chop romaine, bell pepper, tomatoes, and green onions. Rinse and drain black beans.
  • Place all salad ingredients in a large bowl.
  • Toss with desired amount of dressing.*

1 tablespoon chives, minced
1 garlic clove, grated (or minced)

1 small jalapeno pepper, minced (can use less or omit)

Steps:

  • Use immersion blender to emulsify oil, lime juice and water.
  • Add rest of ingredients and blend again.

I have been preparing this salad for the past 6 or 7 years and I still love it just as much as the first time I made it. These ingredients just come together so beautifully in this dish you'll be amazed at the reactions each time you serve it. And unlike many salads, it is even great the next day as leftovers!

3 romaine lettuce hearts, shredded
1/2 cup red onion, diced
4 roma tomatoes, chopped
1 (15 ounce) can black beans, rinsed and drained
2 cups four-cheese Mexican blend cheese
1 (15 ounce) can whole kernel corn, drained
3 cups tortilla chips, broken and simply crushed between your hands
1/3 cup fresh cilantro leaves
1/2 cup fresh lime juice, usually about 4 limes
1/2 cup canola oil
1/2 cup sour cream
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Prepare dressing first by combining in food processor or blender fresh cilantro, lime juice, sour cream, sugar, salt and pepper.
  • Then slowly drizzle in oil until fully combined.
  • Pour dressing into container and chill in fridge for several hours for flavors to meld.
  • In large glass/acrylic bowl layer lettuce, then tomatoes, onion, black bean, cheese, and corn.
  • (At this point the salad can wait for up to 8 hours before serving if you wish to be a step ahead later on.).
  • Before serving sprinkle broken chips over corn layer. Then pour dressing over chips and toss completely.
  • Enjoy!
