One of the women I worked with years ago made these for a bridal shower for another co-worker. I thought they were the best ham biscuits I had ever had but she would not give out the recipe. I came across a cookbook that had the recipe and bought it because this was in it. The recipe calls for grated onion but I have made them...

Steps:
- 1. Preheat oven to 400 degrees.
- 2. Leave the rolls in the pan. Slice off top half of rolls and place beside pan.
- 3. Combine the butter with the next 4 ingredients and spread on inside of top and bottom of the rolls.
- 4. Layer ham and cheese on bottom half of rolls, replace top half of rolls, and wrap in foil.
- 5. Bake 15 minutes or until cheese melts.
- 6. Using a sharp knife, separate rolls and serve warm.

- Mix butter, poppy seeds, mustard, onion, Worcestershire sauce, and ham if it's grated. If not, omit for now. Split the rolls by removing them from the tray and slicing them in half. Do not separate the individual rolls. Put the bottom back in the tray. Spread mixture on both sides. If using slices of ham, place small pieces on top of butter mixture. Sprinkle with grated cheese, and put top layer of rolls back on top. Cover the entire tray with foil and wrap tightly. Bake at 350°F until cheese melts, about 20 minutes. Slice in-between the rolls with a serrated knife and serve warm.

Steps:
- Preheat oven to 400°F.
- In a bowl whisk together flour, baking powder, salt and sugar and with a fork or pastry blender blend in lard until mixture resembles course meal. Add milk, a little at a time, stirring until dough just pulls away from side of bowl.
- Roll out dough 1/2 inch thick on a lightly floured surface. Cut out biscuits with a 1 1/2-inch round cutter and transfer to an ungreased baking sheet. Reroll scraps and cut out more biscuits in same manner.
- Bake biscuits in middle of oven until pale golden, 10 to 15 minutes. Makes 20 silver dollar-size biscuits.
- Split biscuits in half and spread lightly with mustard and horseradish. Put ham between biscuit halves.
BAKED HAM AND CHEESE PARTY SANDWICHES
These small, delicious sandwiches are perfect for any party. They are so good that even the pickiest of eaters will eat these.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- In a bowl, mix together butter, Dijon mustard, Worcestershire sauce, poppy seeds, and dried onion. Separate the tops from bottoms of the rolls, and place the bottom pieces into the prepared baking dish. Layer about half the ham onto the rolls. Arrange the Swiss cheese over the ham, and top with remaining ham slices in a layer. Place the tops of the rolls onto the sandwiches. Pour the mustard mixture evenly over the rolls.
- Bake in the preheated oven until the rolls are lightly browned and the cheese has melted, about 20 minutes. Slice into individual rolls through the ham and cheese layers to serve.

SPECIAL HAM BISCUITS
This was served at my boss' home when he had us over for the office Christmas party. His wife cooked everything that was served. She did an outstanding job! This is the recipe for her biscuits only it uses rolls, not biscuits. She made them the day before and just heated them when it was time for the party!!

- Saute onion in butter till tender.
- Add mustard, Worcestershire sauce and poppy seeds.
- Place in refrigerator until it reaches spreading consistency.
- Open the rolls, spread both sides with the mixture.
- Place small amount of ham and cheese on roll and replace the top of the roll.
- Cover with foil and heat at 425 degrees for 20 minutes.

SAVORY POPPY SEED HAM & CHEESE BUSCUITS
This recipe was given to me by one of my best friends who is a SUPER cook! EVERYONE loves them and they have become a staple at our get togethers. They are super easy (I describe things in too much detail so I hope it doesn't look TOO complicated...trust me it's not!) One of those definitely EASY, SURE FIRE, "go-to" recipes...

- 1. Preheat your oven to 350 degrees. Take out one group of the Martin's party rolls (there are typically two groups of 12 ea in a bag that are still all attached). I slice 1/2 way through one section, making a top and bottom but keeping everything still attached (so it's almost like a big sandwich).
- 2. Cover the bottom section with pieces of ham. The amount is really to your preference and how thick you would like the biscuits although typically I wouldn't do more than doubling it. Next place the slices of swiss cheese on top of the ham. Again somewhat to your preference but again typically no more than double.
- 3. Place the top of the rolls back on top of the ham and cheese. Repeat all steps for the second section of rolls. Place each group on an ungreased cookie sheet.
- 4. For sauce, melt butter (can either do in a small saucepan on the stove or I've even done in a coffee mug in the microwave and mixed everything in there). Add in all dry ingredients.
- 5. With some sort of basting brush, generously brush the mixture onto the top of the rolls. Be sure to keep mixing so as to get the poppy seeds and minced onion as they might settle on the bottom. Place in heated oven for 6-7 minutes.
- 6. Remove from oven and AGAIN generously brush the top of the rolls with the butter mixture. Return to the oven for approximately 6-7 minutes. Remove from oven and cut along the pre-cut lines of the rolls. Serve warm.
