1/2 lb wide egg noodles, cooked and drained
1/4 cup butter
1 1/2 cups mashed potatoes, prepared
5 slices American cheese
1/2 cup cheddar cheese, shredded
1/2 cup mozzarella cheese, shredded
1/4 large vidalia onion, minced
2 garlic cloves, minced
salt and pepper, to taste

Steps:

  • Cook noodles, drain.
  • Preheat oven to 350.
  • Melt butter and saute the onions and garlic until tender. Season with salt and pepper to taste.
  • Place half of the cooked noodles in the greased bottom of a casserole dish.
  • Layer with ½ of the cheese, all potatoes, the remaining noodles and top with remaining cheese.
  • Poke holes through the top layer of cheese; pour butter mixture over top, making sure it seeps through the holes.
  • Bake at 350 for 10 minutes.

12 lasagna noodles
2 cups cottage cheese
1 egg
1 teaspoon onion salt
1 teaspoon dill
1 1/2 cups grated cheddar cheese
1 1/2 cups mashed potatoes
1 teaspoon salt
2/3 cup butter
1 cup chopped onion
3/4 cup chopped bacon

Steps:

  • Preheat oven to 350F degrees.
  • Cook noodles until just soft.
  • Rinse, set aside.
  • Lay 4 noodles in bottom of greased 9x13 pan.
  • Combine cottage cheese, egg and 1 teaspoons onion salt.
  • Spread over the 4 noodles in pan.
  • Lay 4 more noodles over top.
  • Combine the dill,cheese, mashed potatoes and 1 teaspoons onion salt.
  • Spread on the noodles in the pan.
  • Lay final 4 noodles on top.
  • Heat butter in a skillet and saute the onion and bacon until onion is soft and bacon bits are nearly cooked.
  • Pour over top of final noodle layer.
  • Cover and Bake 1/2 hour and serve with sour cream.

Pierogies in a pan! This is a wonderful, rich casserole that tastes just like potato and cheese pierogies (without all the fuss!) Nice, hearty comfort food!! Can be served as a main dish with veggies or a salad, or as a side dish.

9 -12 lasagna noodles
1 1/4 cups butter (no substitutes!)
4 medium onions, sliced
10 -12 medium potatoes, peeled and cubed
1 dash salt and black pepper
1 (1 lb) box Velveeta cheese, cubed
grated parmesan cheese

Steps:

  • Saute onion in 1 stick butter until tender.
  • Cook noodles as directed on box.
  • Boil potatoes, then mash.
  • Add cubed cheese, salt, pepper, and remaining butter to potatoes and mix until well combined.
  • Put layer of noodles in 9x13-inch baking dish.
  • Layer 1/3 of sauteed onions over noodles, then 1/3 of potato mixture.
  • Repeat layers, ending with potatoes on top.
  • Sprinkle with Parmesan cheese.
  • Bake at 350°F for 30-35 minutes.

These pierogies are much better than store bought in my opinion. They take some time to prepare, but they are worth it. Experiment with different fillings...I have tried everything from sauerkraut to tuna salad! If you have never had pierogies, they are pasta pockets usually filled with a potato filling. My grandmother was Polish, and we have always had pierogies at Easter, New Year's and just as a side dish throughout the year. I am always so surprised when people ask what they are because I have always known and just assumed everyone else did :)

Yield 50 small pierogies

Number Of Ingredients 7

4 cups all-purpose flour
1 cup water
1 large egg
3 cups instant mashed potatoes, prepared according to direction on package
4 -6 ounces cheddar cheese
1 small onion, chopped fine and sauteed in butter
salt and pepper

Steps:

  • Place flour in a large bowl and make a well in center.
  • Add water and egg and stir to make a soft non-sticky dough, if dough is too sticky, add more flour, 1/4 cup at a time.
  • In a separate bowl, prepare filling by combining all ingredients.
  • Add about 2 tsp. of filling to dough and knead in.
  • Roll out dough about 1/8" thick.
  • Cut out large rounds, 3 to 4" (I use the widest glass I have).
  • Place about a tablespoon of filling on one side of each circle.
  • Moisten edges with water and fold over to close.
  • Pinch edges or use fork to seal.
  • After filling all pierogies, place in boiling water until they float.
  • Freeze for later use or fry in butter over medium heat and light brown both sides.

16 oz pkg egg noodles, cooked in salted water 8 mins,drain
6-8 cups instant mashed potatoes, prepared according to box directions
2 large yellow onions, peeled and sliced 1/8" thick
15 slices yellow american cheese
1 cup shredded cheddar cheese
1 1/2 stick margarine or butter

Steps:

  • 1. Cook egg noodles according to package directions for 8 mins. Drain. Return noodles back to saucepan. Add 1/2 sick margarine and stir. Set aside.
  • 2. In in microwave safe bowl add 1 stick of margarine and the sliced onions. Microwave on 60% power for 3-4 mins until onions are translucent. Add to noodles, stir. Pour noodles and onion mixture in the bottom of a large glass or metal 9x13" cake pan.
  • 3. Make 6-8 cups of instant mashed potatoes according to box directions. Then mix in 1 cup of shredded cheddar cheese into prepared instant potatoes. Immediately poor potatoe/cheese mixture over the noodle/onion layer. Smooth out to cover all noodles.
  • 4. Place yellow American cheese slices 3 rows across and 5 rows down. You should have enough cheese cover the whole top.
  • 5. Preheat oven to 350 degrees and bake till warmed through and cheese is melted. 20-30 mins Enjoy!

1 dozen frozen potato & cheese pierogi, thawed
1 (10 3/4 ounce) can cream of chicken soup
3/4 cup milk
1 (4 ounce) can sliced mushrooms, drained
1 cup frozen peas
2 cups cubed cooked chicken

Steps:

  • Preheat oven to 350ºF.
  • Butter a 2 qt casserole dish.
  • Place pierogies in bottom of dish.
  • In a large bowl, combine soup, milk, mushrooms, peas and chicken.
  • Pour over pierogies.
  • Bake for 45 minutes or until heated through.
  • Note: I have used unthawed pierogies and just added 15 additional minutes to the baking time.
