Beef Stroganoff for Instant Pot® image

A truly one-pot meal! Fork-tender beef and mushrooms with egg noodles. This recipe is written using the Instant Pot®.

2 tablespoons canola oil
½ onion, diced
2 teaspoons salt, divided
2 pounds beef stew meat, cut into 1-inch cubes
1 teaspoon freshly ground black pepper
3 cloves garlic, minced
½ teaspoon dried thyme
2 tablespoons soy sauce
3 cups chopped mushrooms
2 tablespoons all-purpose flour
3 cups chicken broth
1 (16 ounce) package wide egg noodles
¾ cup sour cream, or to taste

Steps:

  • Turn on a multi-cooker (such as Instant Pot®) and select Saute function. Heat oil for 1 minute. Add onion and 1/2 teaspoon salt; cook and stir until onion begins to soften, 3 to 4 minutes.
  • Season beef with 1 teaspoon salt and pepper. Add to the pot. Cook and stir until browned evenly on all sides, about 2 minutes. Add garlic and thyme; cook until fragrant, about 30 seconds. Pour in soy sauce.
  • Stir mushrooms into the pot. Stir in flour until evenly incorporated. Pour in chicken broth and remaining 1/2 teaspoon salt. Close and lock the lid. Set timer for 10 minutes. Set to high pressure according to manufacturer's instructions, 10 to 15 minutes.
  • Release pressure carefully using the quick-release method. Open pressure cooker; stir in egg noodles. Seal and bring to high pressure again, about 5 minutes; cook for 5 minutes.
  • Release pressure naturally according to manufacturer's instruction for 5 minutes. Release remaining pressure using the quick-release method. Open pressure cooker; stir in sour cream.

1 pound extra-lean ground beef
1 small onion, chopped
1 rib celery, chopped
1 tablespoon chopped garlic
1 (10 ounce) can condensed cream of mushroom soup
1 cup beef broth
1 (6 ounce) can sliced mushrooms, drained
¼ cup white wine
¼ cup sour cream, or more to taste
salt and ground black pepper to taste

Steps:

  • Combine ground beef, onion, celery, and garlic in a skillet over medium heat. Cook and stir until beef is browned and crumbly, about 7 minutes. Drain and discard grease, if needed.

This is an easy variation of a favorite. I used to prepare it the traditional way, with sour cream, but I didn't have any one night, so I used cream cheese instead. My husband and I liked it even better! Serve over hot, cooked egg noodles or rice.

½ cup chopped onion

1 pound ground beef
1 (10.75 ounce) can fat free condensed cream of mushroom soup
1 tablespoon garlic powder
½ cup sour cream
salt and pepper to taste

Steps:

  • Prepare the egg noodles according to package directions and set aside.
  • In a separate large skillet over medium heat, saute the ground beef over medium heat for 5 to 10 minutes, or until browned. Drain the fat and add the soup and garlic powder. Simmer for 10 minutes, stirring occasionally.

1 ½ teaspoons salt
1 ½ teaspoons dried parsley
1 teaspoon garlic powder

1 ¾ cups milk

½ cup sour cream
¼ cup freshly grated Parmesan cheese

2 tablespoons vegetable oil
3 lbs beef, cut into bite-sized cubes
1/2 cup white flour
1 teaspoon salt
1 teaspoon pepper
2 garlic cloves, minced
1/2 cup onion, chopped
3 cups water
3 cups beef broth
1.5 (1 ounce) envelopes onion soup mix
1 (10 ounce) can cream of mushroom soup
2 teaspoons Worcestershire sauce
1 (16 ounce) package uncooked egg noodles
2 cups frozen peas
1/2 cup sour cream

Steps:

  • Heat oil in a large pot on low heat.
  • Place flour, salt, and pepper in a gallon sized zip-lock bag. Add the beef and toss until all pieces are well-coated.
  • Place all pieces of beef in hot oil and cook until browned on all sides.
  • Add onions and garlic and cook for 5 minutes on medium-low heat.
  • Add water, broth, soup mix, mushroom soup, and worcestershire sauce. Bring to a slow boil, stirring so nothing sticks to the bottom of the pan.
  • Add egg noodles and peas,stirring until well mixed.Liquid should almost cover the ingredients, if not, add a litle more water.
  • Bring to a slow boil, stirring occasionally, then reduce heat to low and simmer for 10 minutes or until noodles are tender.
