1 Package refrigerator pie crust (or your favorite single pie crust recipe)
2 cups shredded Mozzarella cheese
3 Tablespoons fresh basil leaves (cut into chiffonade)
3 medium sized fresh tomatoes (cut into 1/4 - 1/2 inch slices)
1 1/2 Tablespoon olive oil
1/4 teaspoon sea salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 450 degrees Fahrenheit. Fit pie crust into 10-inch tart pan; trim along edge. Generously prick bottom and sides of pastry with fork. Sprinkle cheese evenly over pastry shell.
  • Sprinkle 2 tablespoons basil over cheese. Arrange tomato slices on top. Brush tomatoes with olive oil and sprinkle with salt and pepper.
  • Place on a baking sheet on lowest oven rack.Bake at for 25-30 minutes, or until crust is golden.
  • Remove from oven. Sprinkle with remaining basil. Let cool about 10 minutes before slicing into.

Pie Crust (store bought)
1 1/2 cups Mozzarella cheese (shredded)
4 Roma tomatoes (sliced)
1/4 cup pesto
1/2 cup mayonnaise
1/4 cup Parmesan cheese (shredded)
1/8 tsp. pepper
1/4 cup fresh basil (for garnish)

Steps:

  • Bake pie crust according to directions on crust.
  • Remove from oven and sprinkle 1/2 cup Mozzarella on bottom. Let cool.
  • While crust is cooling, cut tomatoes into slices (about 1/4" thick or thicker if preferred) and drain on paper towel.
  • Spread layer of pesto over cheese.
  • Place tomatoes over pesto layer.
  • Combine mayo, Parmesan, pepper and remaining Mozzarella and spread on top.
  • Bake at 375 degrees for 35 minutes or until browned.

1 sheet (400 g) puff pastry (, thawed)
4 tbsp (60g) cream cheese
1 garlic clove (, minced)
1 tsp Dijon mustard
3 tbsp fresh basil (, chopped)
1/4 cup (25g) Parmesan cheese (, grated)
1 cup (100g) Mozzarella cheese (, grated)
4 medium tomatoes (, sliced in about 1/4 inch slices)
Freshly ground black pepper

Steps:

  • Preheat the oven to 400F ( 200C).
  • Cut the tomatoes into 1/4 " (6 mm) slices and place on paper towels to drain for about 15-20 minutes. Cover with paper towels as well.
  • In a small bowl combine the cream cheese, Dijon mustard, garlic, basil and Parmesan cheese.
  • On a floured surface roll the puff pastry dough into a rectangle of 12×14 inches (30X35cm). Transfer the dough onto a parchment paper lined baking sheet. Prick pastry all over with fork but not up to the edges, as you leave about 1 inch as a border.
  • Spread the cheese mixture on puff pastry on a thin layer. Sprinkle Mozzarella cheese evenly on top.
  • Arrange the tomato slices on top.
  • Bake for about 20 to 25 minutes until the crust is golden, cheese melted and tomatoes cooked.
  • Sprinkle fresh basil on top and serve warm.

1 9 inch pie shell (Pillsbury is best)
6 medium fresh tomatoes, cut into wedges
1/4 cup fresh basil, chopped
1 clove garlic, minced
3/4 cup parmesan cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup mayonnaise
1/2 cup onion
1/2 cup mushroom
1 tablespoon parsley, chopped
pepper, to taste

Steps:

  • Preheat oven to 350.
  • Bake pie crust about 15 minutes.
  • Saute onion and mushrooms in one tablespoon of butter until onions are translucent, set aside.
  • Mix together cheeses, mayonnaisse, garlic, and basil; then, stir in cooled tomatoes and onions.
  • Place tomatoes into pie crust, with the skin down.

1 tablespoon tomato paste
1 cup loosely packed basil leaves
1/2 cup unsalted butter, cut into small pieces, at room temperature
1 egg
1 teaspoon sugar
2 teaspoons baking powder
1/2 teaspoon salt
Several grinds of black pepper
1 1/2 cups all-purpose flour
3 packages (1 ounce each) instant cream of wheat cereal
2 cups tomato juice
2 tablespoons freshly grated Parmesan cheese
3 tablespoons olive oil
1 1/2 tablespoons red wine vinegar
3 cloves garlic, peeled and minced
1 stalk celery, trimmed and diced fine
Salt and freshly ground pepper to taste
4 large tomatoes, halved through the stem and cut into 1/4-inch-thick slices
Salt and freshly ground pepper to taste
2 teaspoons olive oil
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped fresh basil

Steps:

  • To make the crust, place the tomato paste, basil, butter, egg, sugar, baking powder, salt and pepper in a food processor. Pulse until smooth, stopping to scrape down the sides. Add 1/2 cup of flour and process just until incorporated. Add the remaining flour and pulse just until dough is crumbly. Press the dough together with your hands. Divide in half and shape each piece into a rectangle that is 3 or 4 inches wide. Wrap in plastic and refrigerate at least 1 hour.
  • Line a large baking sheet with parchment. On a lightly floured surface, roll out each piece of dough to a rectangle slightly larger than 12 by 5 inches. Trim to 12 by 5, preferably using a fluted pastry cutter. Place side by side on the baking sheet. Cover with plastic wrap and refrigerate at least 1 hour before baking.
  • To make the filling, place the cream of wheat in a bowl. Bring the tomato juice to a boil and whisk into the cereal. Stir in the Parmesan. Mix in the oil, vinegar, garlic and celery. Season with salt and pepper.
  • Preheat the oven to 350 degrees. Uncover the baking sheet and bake the crusts until lightly browned, about 20 minutes.
  • To serve, preheat the broiler. Spread half of the filling over each crust. Overlap the tomatoes in rows over the filling. Season with salt and pepper and drizzle 1 teaspoon of olive oil over each one. Sprinkle with Parmesan. Place 4 inches under the heat source and broil until the cheese is browned and the tarts are heated through, about 5 minutes, watching carefully. Slice into 4 or 6 servings, sprinkle with basil and serve immediately.

Pastry for a single-crust pie (9 inches)
1-1/2 cups shredded part-skim mozzarella cheese, divided
5 to 6 fresh plum tomatoes
1 cup loosely packed fresh basil leaves
4 garlic cloves
1/2 cup mayonnaise
1/4 cup grated Parmesan cheese
1/8 teaspoon pepper

Steps:

  • Roll pastry to fit a 9-in. tart pan or pie plate; place in pan. Do not prick. Line pastry shell with a double thickness of heavy-duty foil. , Bake at 450° for 5 minutes. Remove foil; bake 8 minutes more. Remove from the oven. Reduce heat to 375°. Sprinkle 1/2 cup mozzarella over the hot crust. , Cut each tomato into eight wedges; remove seeds. Arrange over cheese. , In a food processor, process the basil and garlic until coarsely chopped; sprinkle over tomatoes. , Combine mayonnaise, Parmesan, pepper and the remaining mozzarella; spoon over basil. This is so easy, simple and fresh! I make this often with just a nice green salad. You can reduce the fat by using 2% mozzarella and using less than 8 oz.

pie crust (I use Pillsbury ready to bake pie crusts)
8 ounces shredded mozzarella cheese
2 tablespoons fresh basil, chopped
4 -5 ripe tomatoes (plum tomatoes are best)
1/2 teaspoon salt
1/4 teaspoon pepper
1 tablespoon olive oil

Steps:

  • Preheat oven to 400.
  • Slice the tomatoes into 1/2" slices.
  • Line a 10" loose bottom tart pan with the pastry (pie) dough.
  • Spread bottom of pastry with the mozzarella cheese and sprinkle with the basil.
  • Cover with tomato slices, arranging to cover as evenly as possible.
  • Sprinkle tomatoes with salt and pepper, then drizzle with the olive oil.
  • Bake 30-40 minutes.
  • Garnish with fresh chopped basil.
  • Serve warm or at room temperature.
