4 Italian sausages
1 1/2 cups red peppers, wedges
1 1/2 cups green peppers, wedges
1 cup sliced onion, separated into rings
2 garlic cloves, crushed
1/4 cup balsamic vinaigrette
1 1/2 cups diced tomatoes, undrained
4 Italian rolls, split lengthwise, toasted
3/4 cup shredded cheese

Steps:

  • Heat large nonstick skillet on medium-high heat. Add sausages; cook 12 minute or until cooked through (170ºF), turning after 6 minute.You can also BBQ the sausages.
  • Remove sausages from skillet; cover to keep warm. Drain skillet.
  • Add peppers, onions,garlic and dressing to skillet; cook and stir 5 minute or until vegetables are crisp-tender.
  • Stir in tomatoes. Bring to boil; cook 5 min., stirring occasionally.
  • Cut sausages lengthwise in half, being careful to not cut all of the way through to bottom of each sausage.
  • Open sausages; place, cut-sides down, on bottom halves of rolls.
  • Top evenly with pepper mixture and cheese. Cover with top halves of rolls.
  • Optional:Place sausage on bun; spoon on sauce. Top with cheese and microwave or place under broiler until cheese is melted.

2 Italian sausage links (4 ounces each)
1/4 cup water
1 small green pepper, cut into strips
1 small onion, halved and thinly sliced
1 tablespoon olive oil
1 cup spaghetti sauce
1/4 teaspoon dried basil
2 brat buns, split and toasted
2 tablespoons shredded Italian cheese blend

Steps:

  • Place sausages and water in a large skillet; bring to a boil. Reduce heat; cover and simmer for 10 minutes. Uncover; cook 5-10 minutes longer or until meat is no longer pink; drain. Remove sausages and keep warm., In the same skillet, saute pepper and onion in oil until tender. Return sausages to pan. Stir in spaghetti sauce and basil; heat through. Serve sausages on buns with sauce and cheese.

8 johnsonville italian sausage ( i like the sweet or mild )
1 can(s) hunts pasta sauce of your choice (1 lb 10.5 oz can )
1 pkg fresh sliced mushrooms
1 large sweet vidalia onion
4 c mozzarella cheese
2 pkg hot dog buns

Steps:

  • 1. Grill your sausage till it's nice and brown. While your sausage is cooking on the grill you are going to slice your onions thin and place in a saute pan with your sliced mushrooms. In another small pan you should be heating up your favorite sauce. While all this is going on put your hot dog buns on a cookie sheet and open them up.
  • 2. When the sausage comes off the grill, place them on the buns, top with sauce, onions, mushrooms, and then cheese. Place in oven about 3-5 minutes. Just to let the buns warm and the cheese melt. It's like pizza on a bun and the kids will love it. Serve with your favorite salad.

Whenever we go to the farmers market in the big city, I have to have a sausage patty on a bun. Everything is fried, but I have tried to modify it a bit.

4 large lean pork sausage, any flavor
4 eggs
4 hamburger buns (I use the Italian type)
4 medium onions, sliced thinly
2 tablespoons butter
1 teaspoon sugar
salt and pepper
condiments

Steps:

  • Take sausage meat out of their casings and combine as one. Form 4 patties out of the meat.
  • At this point you can decide whether to fry (no fat needed) in a pan, bbq or broil them. I usually bbq or broil. Cook until done.
  • In the meantime sauté the sliced onions in the butter with sugar until soft and browned. Season with salt and pepper to taste.
  • Fry the eggs individually as you like them, breaking the yolks as you do. Flip and cook on other side.
  • Toast the buns lightly. Place a patty on the bun, top with egg and onions.
  • Add any condiments you like, however only mustard is required. I use the honey type.
