1 lb sliced mushrooms
2 heads broccoli
1 whole onion, sliced
1 fresh garlic clove
1/4 cup chicken broth
2 chicken breasts, cut into pieces
2 tablespoons soya sauce
salt
pepper
2 tablespoons vegetable oil

Steps:

  • Heat oil in wok over medium-low heat.
  • Cook chicken till golden brown.
  • Add onion and garlic, continue to cook till onions carmelized. Stir frequently.
  • Add mushrooms, broccoli, salt, pepper, chicken broth, and soya.
  • cover, and continue to cook till vegetables tender. NOTE: Tastier if broth left over, so do not overcook, cook on lower temperature.
  • Serve with a side of rice if you'd like.

This is a delicious alternative to beef stroganoff! Using the ever-popular boneless, skinless chicken breasts, this is a snap to make! This can be made in under half an hour! I usually serve this on top of wide egg noodles, or rice is another great choice.

2 teaspoons vegetable oil, divided
1 lb boneless skinless chicken breast half
12 ounces about 3 3/4 c. fresh white mushrooms, sliced
1 cup thinly sliced onion
1/2 cup reduced-fat sour cream
1/4 cup chicken broth or 1/4 cup water
2 tablespoons chopped fresh dill or 2 teaspoons dried dill
1 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • In a large nonstick skillet over medium heat, heat 1 teaspoons of the oil. Add chicken; cook until golden brown and cooked through turning once, 7 to 10 minute Remove chicken; cover to keep warm.
  • In same skillet heat remaining 1 teaspoons of oil. Add mushrooms and onion; cook, stirring occasionally, until tender, about 5 minute Reduce heat to low; stir in sour cream, chicken broth, dill, salt and black pepper. Add reserved chicken; cook until heated through, about 5 minute.

Makes a nice sauce/gravy so it is good served with rice, noodles or mashed potatoes. Adapted from a Campbell's recipe, it was called two step chicken..it has more steps and ingredients now but to my taste it improved the recipe.

1 tablespoon vegetable oil
4 boneless skinless chicken breast halves
2 cups sliced mushrooms
1 (10 3/4 ounce) can condensed cream of mushroom soup
1/2 cup water
1 teaspoon Dijon mustard
ground black pepper
2 tablespoons chopped fresh parsley (or basil)

Steps:

  • Heat the oil in a 10-inch skillet over medium-high heat.
  • Add the chicken and cook for 10 minutes until it's well browned on both sides. Remove the chicken and set aside, add the mushrooms to the skillet and fry for 2 minutes.
  • Stir the soup, water and mustard into the skillet. Heat to a boil, then return the chicken to the skillet and reduce the heat to low.
  • Cover and cook for 5 minutes or until the chicken is cooked through, taste and season with the black pepper.
  • Add the parsley and mix into the sauce.

QUICK CHICKEN AND MUSHROOM CASSEROLE

This recipe was given to me by a work mate. I used a cooked BBQ chicken which I brought from the supermarket; you can chop the chicken to what ever size you like. Broccoli, carrots and peas could be cooked on the stove top or in the microwave. Don't overcook vegetables they just need to still be semi crisp

1 roasting chickens (cooked, bones & skin removed then chopped, Use the whole chicken) or 1 roasted deli chicken (cooked, bones & skin removed then chopped, Use the whole chicken)
1 head broccoli, chopped to florets size
2 carrots, julienne
1/4 cup frozen peas
1 onion, diced
6 large mushrooms, sliced
420 g cream of mushroom soup (equals to one can)
1/4 cup thickened cream (optional) or 1/4 cup heavy cream (optional)

Steps:

  • Preheat oven at 150oC/300oF/Gas Mark 2.
  • Chop or pull apart cooked chicken and only place the flesh of the chicken into a large casserole dish (preferable with a lid) discard chicken bones, fat and skin.
  • To cook broccoli and carrots, chop them as directed, put them in a microwave proof dish add 1/4 cups of water, cover with microwave proof with lid and cook for three minutes on high.
  • Add broccoli, carrots, frozen peas, onion, cream of mushroom soup, mushrooms and cream in the casserole dish, mix well without mashing vegetables.
  • Cover and cook for 30 minutes.
  • Serve with rice or plain pasta.
