QUICK AND EASY GARDEN CHICKEN PASTA SALAD
An extremely easy pasta salad from Kraft Foods. You can substitute or add any other ingredients you like. I sometimes add cubed mozzarella, Parmesan and fresh chicken. I'm making it today with cheese tortellini. This is my potluck "staple" in the summertime. Time does not include chill time.

- Can be made up to 2 days ahead.
- Serve chilled or at room temperature.

QUICK GREEK GARDEN SALAD
I like to dress up this salad by serving it in a lettuce-lined bowl. But it's gorgeous as well as tasty just served by itself.

- In a bowl, combine the tomatoes, cucumber, peppers, cheese, green onions and olives. Cover and refrigerate until serving. , Just before serving, add salad dressing and oregano; toss to coat. Serve in a lettuce-lined bowl if desired.

QUICK GARDEN SALAD
Crunchy, herby and fresh- this green side salad is versatile, healthy and dressed with a light garlic and parsley vinaigrette

Steps:
- Wash and dry the lettuce, leaves and herbs. Tear larger leaves into bite-sized pieces and tip everything into a large salad bowl.
- To make the dressing, put the garlic, onion, parsley and watercress or rocket into a mini chopper or food processor, and blitz until finely chopped. Add the vinegar, mustard and some seasoning, and blend briefly. Slowly add the oil and blitz until thickened. Drizzle over the salad just before eating and toss until the leaves are just coated. (You might not need all the dressing, but it will keep in the fridge for a couple of days.)
