This is not gourmet fare, but it is a filling main dish soup that can be made quickly using 3 cans of vegetables/soup. Posting for a quick and easy recipe, not a savor and gourmet recipe. This is great to feed the masses between getting home from work and rushing out to a soccer game! If reviewing this recipe, please consider that this was posted as a convenience meal, not a gourmet meal!!! Saying all that, with some added sour cream and grated cheese on top, it is really quite tastey! Cayene pepper or crushed red pepper flakes can be used to add spice...left out because I considered this a quick "out the door" family meal.

1 lb ground beef
1/2 cup green pepper, julienne-sliced
1/2 cup onion, chopped
1 garlic clove, minced
2 tablespoons chili powder
2 (11 1/4 ounce) cans chili beef soup, undiluted
1 (16 ounce) can whole tomatoes, undrained and chopped
1 (16 ounce) can kidney beans, undrained
1/2 cup water

Steps:

  • Brown ground beef in a large skillet, stirring until it crumbles.drain. Add green pepper, onion, garlic, and chili powder.
  • Cook, uncovered, over medium heat until vegetables are tender, stirring occasionally. Add soup and remaining ingredients. Bring to a boil. Reduce heat and simmer uncovered for 15 minutes, stirring frequently.

I recently needed a soup for my daughter who wasn't feeling well. There was leftover ham in the fridge but my usual ham and potato soup included milk or cream, which is not the best thing for a touchy tummy, so this quick soup was born. The amount of the various ingredients is very flexible so don't worry if you use more or less of any one ingredient. The name comes from the traditional mix for Mirepoix which includes onions, celery, carrots and often ham or bacon.

3 tablespoons olive oil
1 onion, chopped
1 carrot, grated
1 celery rib, 6-8 inch long finely chopped
1 teaspoon minced garlic clove
3 cups cubed ham
6 cups idaho potatoes, peeled and cut into 1 inch cubes. (6-8 potatoes depending on size)
3 (15 ounce) cans low sodium chicken broth
1 teaspoon dried thyme leaves
1/2 teaspoon fresh ground pepper
salt

Steps:

  • Heat the olive oil in a Dutch oven or soup pot.
  • Saute the chopped onions and celery for 2 minutes.
  • Add the garlic, grated carrot and ham.
  • Continue sauting until the onion is golden.
  • Add the chicken broth, thyme and pepper and simmer for 20 minutes.
  • Add the potatoes simmer uncovered until the potatoes are soft.
  • Add salt to taste and more pepper if needed.
  • Note: Do not salt the soup until the potatoes are cooked. The amount of salt needed will vary depending on the the amount of salt in the chicken broth.

3 tablespoons butter or 3 tablespoons margarine
1/2 cup diced celery
1/2 cup diced onion
3/4 cup diced carrot
3 tablespoons flour
1 teaspoon dried thyme
1 (17 ounce) can cream-style corn
2 cups milk
1 (7 ounce) can light tuna, drained
1 cup bottled clam juice or 1 cup chicken broth
salt and pepper

Steps:

  • Melt butter in a medium saucepan, add celery, onion and carrots.
  • Saute over medium high heat for 5 minutes.
  • Reduce heat to low, add flour and thyme, cook and stir 2 minutes.
  • Add corn, milk, tuna and clam juice, increase heat to medium high stirring constantly until mixture reaches a simmer.
  • Reduce heat to low, add salt and pepper, and gently simmer until vegetables are tender, adding more milk or clam juice if necessary.

1 lb lean ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup celery
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1 (8 ounce) can tomato sauce
6 cups water
1 box Kraft macaroni and cheese
1/4 cup parmesan cheese
1 (16 ounce) box frozen peas and carrots

Steps:

  • In a large soup pot brown the beef with the onion, celery and minced garlic.
  • Drain the fat from the beef and stir in the dried spices, tomato sauce and the water.
  • Simmer for about 5 minutes.
  • Add the macaroni and cheese, parmesan cheese.
  • Cook until noodles are al dente (cooked but firm).
  • Add the peas and carrots and cook 2 minutes more.
