QUICK CUBE STEAKS
The recipe I cut out from the Miami newspaper (many years ago) calls this "German Quick Steaks"--not too sure where the "German" part comes from. Makes cube steaks tender and easy. Serve with mashed potatoes or egg noodles.

Steps:
- Chop onion.
- Melt butter in a heavy skillet over medium heat.
- Add the steaks and onions, browning steaks on both sides.
- While steaks are browning, mix gravy mix according to to package directions.
- Add vinegar and brown sugar to gravy.
- Pour gravy over steaks and lower heat. Cover and simmer 20 to 30 minutes until meat is tender. Check periodically to make sure liquid does not evaporate. Add water as necessary as the gravy cooks down and get very thick. I have simmered for up to an hour with good results. Just keep an eye on the gravy--don't want it all to evaporate.
EASY CUBE STEAK
I love to experiment with different ways to cook meat. This is the best way I found to make cube steak. Plus it is quick easy and inexpensive.

Steps:
- Melt butter in skillet, add minced onions and cook 1-2 minutes.
- Mix flour, paprika, & grill seasoning together and place on a plate.
- Season steak with salt and pepper then dredge through flour mixture making sure not to coat the meat too heavily
- Cook for 3-5 minutes on each side depending on size of meat. Serve immediately.

CUBE STEAKS AU POIVRE
This is just plain good. I cannot remember where I had found this recipe, but I thank whoever came up with this!!!

Steps:
- Sprinkle steaks with salt and pepper to taste (not included in ingredients above).
- In a large skillet, melt butter and cook steaks 2 at a time on medium-high heat until browned on both sides, about 4 minutes for each set of steaks.
- Reserve drippings in pan.
- Arrange steaks on a platter and keep warm.
- Into pan drippings, over medium high heat, add remaining ingredients; stirring often to losen brown bits on bottom of skillet, heat until warm.
- Pour over steaks and serve.

- In a small 1 qt saucepan melt butter over medium heat, and mix in Worcestershire sauce, garlic, lemon juice, celery salt, and parsley.
- Brush over steaks.
- Place on grill, brush more sauce on the steaks.
- Cook 5 minutes (the steaks cook fast).
