Creamy coleslaw isn't for everyone. For this version, we toss shredded cabbage and carrots with a cider vinegar-based dressing that's flavored with a little sugar and celery salt for a tangy, sweet and sour kick. Parsley leaves and scallions are tossed in before serving for a refreshing finish.

1/2 cup apple cider vinegar
2 tablespoons superfine sugar
1 teaspoon celery salt
3 tablespoons vegetable oil
8 cups shredded green cabbage (about 1/2 head)
1 cup shredded carrots
Kosher salt and freshly ground pepper
1 cup chopped fresh parsley
2 scallions, thinly sliced

Steps:

  • Whisk the vinegar, sugar and celery salt in a large bowl to dissolve the sugar. Whisk in the vegetable oil. Add the cabbage and carrots and toss to combine. Season with kosher salt and pepper.
  • Cover the slaw and refrigerate at least 1 hour. Toss again and season with salt and pepper. Stir in the parsley and scallions.

This healthy Apple Cider Vinegar Dressing recipe is one of my favorite homemade salad dressing recipes to make. It's made with Braggs apple cider vinegar, lemon juice, Dijon mustard, garlic, oregano and olive oil. This apple cider vinaigrette has a delicious flavor and goes with just about any salad you might want to toss it with.

1/4 cup Bragg Apple Cider Vinegar with mother
2 tablespoons Dijon mustard
1-1/2 tablespoons lemon juice
1-1/2 teaspoons dried oregano
2 cloves garlic
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • Add all of the ingredients to a mason jar.
  • Seal the lid tightly and give a good shake.
  • Season with salt and freshly ground black pepper to taste.
  • Store the apple cider vinaigrette dressing in the refrigerator.
  • You can also add the ingredients to a blender and blend until creamy. Or simply whisk all of the ingredients together in a bowl.
  • Store in refrigerator for up to a week. If you don't add garlic, it will keep in the refrigerator for up to 2 weeks without added garlic.

This is a salad dressing I came up with while following Dr. Simeons HCG Protocol. It is "legal" meaning it complies with all aspects of VLCD for those following the protocol. Anyone on this plan knows the VLCD phase is restrictive and can get boring - so spices are our friends! Great on spinach, lettuce, cucumbers, tomatoes, onions - you name it. Add your protein and away you go! You can really vary your flavor depending on the combination of spices you use - this is a basic grouping...I add/adjust depending on the flavors I crave when. I love this with grilled shrimp to make my salad...on cucumbers .... with grilled chicken. Even with lettuce and a grilled burger (4% Laura's lean beef in a lettuce wrap) and a side salad.

1/2 cup water, to taste (will depend on how "strong" you like the cv flavor)
1/2 teaspoon sea salt, to taste
1/2 teaspoon black pepper, to taste
3/4 teaspoon garlic, to taste

1 teaspoon dried oregano, to taste
1/2 teaspoon cumin, to taste

  • **I use a dressing shaker that I can mix and store in and keep it in the fridge until I use it up. :).

100ml olive oil
2 tbsp white wine vinegar
small pinch sugar

Steps:

  • Spoon the mustard into a bowl and slowly whisk in the oil with a small whisk. Gradually add the vinegar and 1 tsp of water to make a creamy looking dressing. Season with the sugar and a generous pinch of salt. Will keep in a sealed jar for up to a month, but must be whisked again before serving.
