I used this speedy microwave recipe the first time I made chicken cordon bleu. Although I've since tried other recipes that bake in the oven, this remains the quickest...and the best. 4 boneless skinless chicken breast halves (6 ounces each)
2 teaspoons Dijon mustard
1/2 teaspoon paprika
4 thin slices fully cooked ham
1 cup soft bread crumbs
1/4 cup grated Parmesan cheese
1/4 teaspoon pepper
3 to 4 tablespoons mayonnaise
SAUCE:
1 tablespoon butter
1 tablespoon all-purpose flour
1 cup milk
1/4 teaspoon salt
1/2 cup shredded Swiss cheese
2 tablespoons white wine

Steps:

  • Flatten the chicken to 1/2-in. thickness. Spread mustard on one side; sprinkle with paprika. Top each with a ham slice. Roll up tightly; secure with toothpicks. , In a small bowl, combine the bread crumbs, Parmesan cheese and pepper. Brush chicken with mayonnaise; roll in crumb mixture. , Place in a shallow 2-qt. microwave-safe dish; cover loosely. Microwave on high for 7 minutes; turn chicken. Cook 5-1/2 minutes more or until meat is no longer pink; keep warm. , In a 1-qt. microwave-safe dish, heat butter on high for 20 seconds; stir in flour until smooth. Cook, uncovered, on high for 20 seconds. Add milk and salt. Cook 2-3 minutes longer or until thickened. Stir in cheese until smooth. Add wine. Discard toothpicks from chicken; serve with sauce.

What makes this more special than the traditional cordon bleu rolls is the delicious combination of proscuitto and swiss. They complement one another perfectly. Serve this dish with rild rice and asparagus or a nice risotto for a quick - yet elegant - weeknight meal. I adapted this recipe from a crockpot cookbook I once had.

6 chicken breasts, pounded to 1/4 inch thickness
6 pieces prosciutto
6 slices swiss cheese
salt and pepper
1 (10 1/2 ounce) can cream of mushroom soup
1/2 cup milk
1/2 cup dry white wine

Steps:

  • On each chicken breast, place one piece of prosciutto and cheese. Roll up each chicken breast and secure with a toothpick. Season each roll with salt and pepper. Place in the Crock-Pot slow cooker.
  • In a small bowl, whisk together the soup, milk and white wine. Pour half of this mixture over the chicken breast rolls, placing the other half in the refrigerator for later. Cover and cook on Low for 4 to 6 hours or on High for 3 to 4 hours.
  • Before serving heat up the remainder of your sauce and put over the chicken breast when serving (also tastes wonderful over rice or risotto).

1 (8 ounce) package wide egg noodles
3 (4.5 ounce) cans chunk chicken, drained
8 ounces cooked ham, diced
8 ounces shredded Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
½ cup 2% milk
½ cup sour cream
2 tablespoons butter
⅓ cup seasoned bread crumbs
¼ cup grated Parmesan cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Add egg noodles and cook at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Combine drained noodles, chicken, ham, and Swiss cheese in a large mixing bowl; mix until well combined.
  • Stir together cream of chicken soup, milk, and sour cream in a separate bowl until smooth. Pour sauce over noodles and mix until sauce is well distributed. Transfer mixture to a large microwave-safe casserole dish.
  • Place butter in a microwave-safe bowl. Cook on high until melted, about 30 to 45 seconds. Add bread crumbs and Parmesan cheese. Mix until well blended and crumbly and sprinkle on top of casserole.
  • Microwave casserole uncovered for 10 minutes. Allow to cool for 5 minutes before serving.

1/2 teaspoon pepper, divided
1/4 teaspoon salt
1/3 cup gruyere, or, Swiss cheese
2 tablespoons reduced-fat cream cheese
1/4 cup whole wheat breadcrumbs
1 tablespoon fresh parsley, chopped
4 teaspoons extra virgin olive oil, divided
1/4 cup ham, chopped

Steps:

  • Preheat oven to 400°F.
  • Sprinkle chicken with 1/4 t pepper and salt. Combine cheeses in a bowl. And the remaining 1/4 t pepper, breadcrumbs, parsley and 2 t oil in another bowl.
  • Heat the remaining oil in a large ovenproof nonstick skillet over medium heat. Cook the chicken until browned on both sides, about 2 minutes per side. Move the chicken to the center so all pieces are touching. Spread with cheese mixture, sprinkle with ham, then top with breadcrumb mixture.
  • Bake until the chicken is no longer pink and registers 165F internally, 5-7 minutes.
