2 lbs frozen broccoli florets (defrosted)
1/2 cup butter
12 ounces Velveeta cheese
1 (10 3/4 ounce) can cream of mushroom soup
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 cup Ritz cracker (crushed)

Steps:

  • Preheat oven to 350°F.
  • In a microwave safe bowl place butter, Velveeta cheese, cream of mushroom soup, garlic powder and pepper.
  • Heat in 1 minute increments. Stir well between heatings until all ingredients are combined.
  • Combine broccoli florets and sauce.
  • Place in an oven safe casserole dish.
  • Sprinkle crushed crackers on top.
  • Bake at 350°F for 45 minutes or until heated through and the cracker crumbs are golden and crispy.

Steps:

  • Preheat oven to 350F/170C/Gas 5 adjust for fan assisted. Boil Broccoli 5 mins, then drain and set aside.
  • Combine remaining ingredients, except crumbs, and half the fried onions. Heat until cheese melts. Remove from the heat and add the broccoli. Once the broccoli is combined with the sauce,transfer to a casserole dish.
  • Finally top the casserole with the remaining fried onions and crumbs. Bake in the oven for 20-25 minutes or until bubbly.

One of my friends tried it with frozen spinach and loved it, so either broccoli or spinach will bring you a fabulous vegetable dish minus the cheese, but if you must have cheese add about 1/2 cup Cheddar cheese on the top of the casserole before baking.

  • 1. Mix all ingredients except crushed Ritz crackers and put into a greased 2 quart casserole. Top with 1 cup of crushed Ritz crackers.

1/4 cup chopped onion
10 ounces frozen chopped broccoli
2 tablespoons butter or 2 tablespoons margarine
1 (10 3/4 ounce) can cream of chicken soup
2 cups chopped ham
1 cup uncooked instant rice
1/2 cup Velveeta cheese, cubed
1/4 cup milk
1/2 teaspoon Worcestershire sauce

Steps:

  • Saute onion and broccoli in butter in a large skillet until onion is tender.
  • Remove from heat.
  • Stir in remaining ingredients.
  • Spoon mixture into a lightly greased 1 1/2 quart casserole.
