Got this from another board, easy Autumn recipe that will impress anyone. This is a nice change from Pumpkin Pie.

Number Of Ingredients 8

29 ounces canned pumpkin
12 ounces evaporated milk
1 cup granulated sugar
1 1/2 teaspoons cinnamon or 1 1/2 teaspoons pumpkin pie spice
1/2 teaspoon ginger
3 eggs, beaten
1 (18 ounce) box French vanilla cake mix or 1 (18 ounce) box spice cake mix
3/4 cup butter, melted

Steps:

  • Grease bottom of 9 X 13 inch pan.
  • Combine 1st six ingredients.
  • Pour into pan.
  • Sprinkle, then pack cake mix over top evenly.
  • Drizzle butter over entire cake.
  • Bake at 350 F for approximately 50 - 60 minutes (test for doneness).
  • For extra elegance top slices with whipped cream sprinkled with the spices used in cake.

This is one recipe that is to die for. Sweet and moist, it's like a pie and a cake as one! Use more pecans, if desired, and top it with ice cream.

1 (29 ounce) can pumpkin
1 (12 fluid ounce) can evaporated milk
1 cup white sugar
3 eggs
3 teaspoons ground cinnamon
1 teaspoon salt
1 (18.25 ounce) package yellow cake mix
¾ cup butter, melted
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a medium bowl, mix the pumpkin, evaporated milk, sugar, eggs, cinnamon and salt. Pour the mixture into the baking dish. Sprinkle cake mix over the pumpkin mixture. Drizzle with butter. Top with pecans.
  • Bake in the preheated oven 50 to 60 minutes. Cool before serving.
