I wanted to whip up a quick dessert and had a graham cracker pie crust on hand along with pudding mix, bananas, whipped topping and milk. This was the end result. Easy and yummy.

1 (9-inch) graham cracker pie crust
2 ripe bananas
1 3/4 c cold milk
1 (3.5 ounce) package instant banana pudding mix
1/2 c frozen whipped topping, thawed

Steps:

  • 1. Slice 1 1/2 of the bananas and arrange in bottom of pie shell.
  • 2. Pour cold milk into a medium bowl. Add pudding mix. With an electric mixer beat on lowest speed for 2 minutes. Gently fold in 1/2 cup of the whipped topping; mix until well blended. Pour into pie shell.
  • 3. Place in freezer and freeze at least 2 hours before serving. Allow to thaw slightly before cutting slices.
  • 4. Garnish with slices of the remaining banana and whipped topping if desired.

This one is quick and still has great flavor. Try it with either a graham cracker crust or a traditional pastry crust. Feel free to use regular pudding and milk in the recipe.

1 cup nonfat milk
1 (1 ounce) package sugar-free instant vanilla pudding mix
1/2 teaspoon vanilla
12 ounces Cool Whip Lite, thawed and divided
1 (9 inch) reduced fat graham cracker crust
2 medium firm bananas, sliced
additional sliced banana, if desired

Steps:

  • In a mixing bowl, beat pudding mix and milk on low speed for 2 minutes; beat in vanilla.
  • Fold in 3 cups of the cool whip. Pour 1 1/3 cups of the pudding mixture into the prepared pie crust.
  • Layer with banana slices and top with remaining pudding mixture.
  • Top with remaining cool whip and garnish with additional banana slices if desired. Store in refrigerator before serving.
