Easy vegan cheese sauce, ready in 3 minutes! A super simple and nut-free plant-based recipe which requires only a handful of ingredients. This vegan queso is perfect for pizza, nachos, Mac and Cheese, burgers, pasta bake, toast, and more savory recipes. The sauce doesn't contain cashews!

3/4 cup coconut milk (canned (*see notes ))
3 tbsp nutritional yeast flakes
2 tbsp tapioca flour (OR arrowroot flour/starch (*see notes))
1/2 tsp sea salt ((or to taste))
1/2 tsp onion powder ((optional))
1/4 tsp garlic powder ((optional))
Pinch of smoked paprika ((optional))

Steps:

  • Put all ingredients into a saucepan and stir with a whisk. Once everything is combined, turn on the heat and bring the mixture to a boil while stirring constantly.
  • Let simmer on low to medium heat for about one minute until the sauce is stretchy.

This is a somewhat simplified recipe from a great vegan website, http://ohsheglows.com/. It tastes amazing, with very little effort! Add in some vegan ground round, and you've got cheeseburger sauce for macaroni. We did that, and added frozen veggies, too. Awesome instant supper.

Number Of Ingredients 6

1 tablespoon margarine (I recommend Earth Balance, as it's vegan and delicious!)
1 tablespoon Bisquick (the original recipe called for all-purpose flour)
3/4 cup almond milk (make sure it's unsweetened and unflavored, I used a hodgepodge of what needed to be used up... 1/2 r)
6 tablespoons nutritional yeast
2 teaspoons Dijon mustard (or to taste)
1/2 teaspoon garlic salt (or to taste)

Steps:

  • In a 2-cup measuring cup, whisk together the Bisquick and milk until all clumps are gone.
  • In a skillet or pot, melt the Earth Balance over medium heat. Pour in the milk and Bisquick mixture, and add the nutritional yeast. Whisk well. Reduce heat to low-medium.
  • Add Dijon and garlic salt to taste, and whisk frequently until the sauce thickens up, for about 2-5 minutes. Don't let the sauce burn!
  • If the sauce ends up too thin, you can add more Bisquick. Or if it's too thick, you can add more "milk" as needed.
  • Store in an air-tight container for up to 5-7 days. Reheat in the microwave or on the stove-top (add a splash of milk if it's too thick) and whisk well.

I've tried so many vegan cheese recipes and they all taste, well, not like cheese. So I gave up and made my own. You can mix the sauce into macaroni, drizzle over fries, or use it in any other deserving dish.

2 small russet potatoes, peeled and cubed
½ cup carrots, chopped
⅓ large yellow bell pepper, chopped
¼ large yellow onion, peeled and chopped
5 tablespoons prepared garlic hummus
⅓ cup coconut milk, or more as needed
½ tablespoon nutritional yeast
1 ½ teaspoons lemon juice
1 teaspoon garlic powder
black pepper to taste
2 pinches salt, or to taste

Steps:

  • Fill a pot with water and bring to a boil. Add potatoes, carrots, bell pepper, and onion and cook until potatoes are tender, 15 to 20 minutes. Cook 1 more minute. Drain.
  • Combine potatoes, carrots, bell pepper, onion, hummus, coconut milk, nutritional yeast, lemon juice, garlic powder, black pepper, and salt in a blender or food processor; blend until smooth and creamy.
