- Calienta el horno a 325ºF.
- Esparce los frijoles sobre 6 tortillas; colócalas en charolas (bandejas) para hornear, forradas con papel para hornear (parchment paper). Agrégales el jamón y el queso; tápalas con las tortillas restantes.

- In a large skillet, cook the beef over medium heat until no longer pink; drain. Stir in the beans, chilies, oregano, cumin and salt. Cook over medium-low heat for 3-4 minutes or until heated through. , Brush one side of each tortilla with butter. Spoon 1/2 cup of the meat mixture over half of unbuttered side. Sprinkle with 1/3 cup cheese; fold in half. , Place on a lightly greased baking sheet. Sprinkle with paprika. Bake at 475° for 10 minutes or until crisp and golden brown. Cut into wedges.

- Heat coals or gas grill. Place 1 tortilla on 30x12-inch piece of heavy-duty aluminum foil. Top with one-fourth of the tomato and chilies. Sprinkle with one-fourth of the cheese. Top with another tortilla.
- Wrap foil securely around tortillas; pierce top of foil packet once or twice with fork to vent steam. Cover and grill foil packet, seam side up, 4 to 6 inches from medium heat about 15 minutes or until cheese is melted.
- Repeat with remaining tortillas, tomato, chilies and cheese. Cut each quesadilla into 6 wedges. Top with sour cream.
