APPLE OR CHERRY OR BLUEBERRY PIE QUESADILLA

Apple or Cherry or Blueberry Pie Quesadilla image

A quick and easy dessert that is quite tasty. You can change the fruit filling and cheeses to suit your mood or use fresh fruit in season. If using fresh fruit, you may have to cook atop the stove for a few minutes to help break down the fruit. Add 1/4 C sugar for each 2 C fruit. You may end up with extra fruit, so make 2 Quesadillas. Use cream cheese with cherry and top with sugar. Use provolone with blueberry or blue cheese with blueberry. Very inexpensive, too.

CREAM CHEESE APPLE PIE QUESADILLA

Cream Cheese Apple Pie Quesadilla image

This is so good! The cream cheese melts into the apple pie filling, and tastes almost custardy. I usually use wheat tortillas and light cream cheese because that's what we have in the house.

Provided by 89240

Categories     Dessert

Time 5m

Yield 1 quesadilla

Number Of Ingredients 8

1/2 teaspoon butter, melted
1 medium white flour tortillas or 1 medium wheat flour tortilla
1 tablespoon cream cheese or 1 tablespoon light cream cheese
1/3 cup apple pie filling
cinnamon (optional)
whipped cream (optional)
powdered sugar (optional)
vanilla ice cream (optional)

Steps:

  • Spread cream cheese on one side of the tortilla, completely covering it, using more around the edges, as this will help seal in the pie filling.
  • Pour the filling on top of the cream cheese layer and cut apple slices into 1/2 inch pieces with a spoon or butterknife.
  • Sprinkle pie filling with cinnamon, if desired.
  • Fold tortilla over, gently pressing the edges to seal.
  • Brush one side with the melted butter, and put the tortilla, butter side down, into a skillet pre-heated to medium.
  • While that side is grilling, brush the unbuttered side with the remaining butter.
  • Grill until golden, flip, and grill the other side until golden.
  • Remove from skillet and serve with powdered sugar, whipped cream, ice cream, and additional cinnamon, if desired.

Categories     Other Desserts

Time 10m

Number Of Ingredients 5

1 can of a good brand of apple pie filling.
2 large white tortillas
dusting of powdered sugar
light sprinkle of cinnamon and nutmeg
vanilla or carmel delight ice cream if desired

Steps:

  • 1. Take one tortilla and lay it flat on a small cutting board. Spoon the apple pie filling onto the tortilla to within a half inch from the edge of the tortilla. Put the second tortilla on top of the first one, like a sandwich.
  • 2. Heat up your quesadilla maker and slide the apple quesadilla onto the griddle and close the lid and cook for 5 minutes. If you don't have a quesadilla maker, you can melt a little butter in a large skillet, not too much, over medium heat and slide the quesadilla into the skillet and brown, then carefully flip the quesadilla and brown the other side. Remove hot quesadilla to the cutting board. Cut the quesadilla in 6 pieces, and dust with powdered sugar, and lightly sprinkle cinnamon and nutmeg. Serve hot with or without ice cream. Enjoy!

Time 55m

Number Of Ingredients 19

BASIC INGREDIENTS
4 4 large flour tortillas (9-10 inches diameter)
butter
1/2 pound grated cheese, either mild or sharp cheddar, or monterey jack
POTENTIAL FILLING INGREDIENTS
beans, cooked (black beans, pinto beans)
tomatoes, chopped
summer squash, chopped
onions (green onions, red onions, onion greens)
mushrooms (if using a lot, sauté first, to remove moisture)
cooked shredded chicken, pork, or beef
chiles, either from cooked green chiles, chopped pickled jalapenos, or salsa
cumin and/or chili powder for extra heat
GARNISHES
chopped avocado
chopped cilantro
thinly sliced iceberg lettuce dressed with vinegar and salt
sour cream
salsa

Steps:

  • 1. Preheat oven to 350°F. Butter the bottoms and sides of a pie dish, approximately the same size as your tortillas (I used a 10-inch pyrex pie dish for 10-inch wide tortillas).
  • 2. Place one tortilla on the bottom of the pie dish. Sprinkle some shredded cheese over the tortilla. At this point, you will begin to add your chosen filling ingredients, and start layering the tortillas. Make sure each layer has a generous sprinkling of cheese. I use cheese, black beans, and onion greens on the first layer. Then I added another tortilla on top of that and put chopped zucchini, chopped tomato, chopped pickled jalapenos, and more shredded cheese. I also sprinkled a little cumin and chili powder on this layer. I added another tortilla and put more shredded cheese, more black beans, tomatoes and onions. Top off your stacked layers with one last flour tortilla. Spread a little butter over the surface of this tortilla.
  • 3. Cover the dish with aluminum foil. Put in oven for 30 minutes on 350°F. Then remove the foil and increase the heat to 400°F. Cook for another 15-20 minutes, until the top is lightly browned and cheese is bubbly. Remove from oven. Let cool for 10 minutes before serving. Cut into quarters. Serve with chopped avocados, shredded lettuce, cilantro, salsa, and/or sour cream.
