You can mix this puree into pastas, soups, and use it make garlic bread.

1 head garlic, cloves separated and peeled
olive oil, to cover garlic in jar

Steps:

  • Place the garlic cloves in the bowl of a food processor. Process until chopped to desired size, rough or fine. Transfer pureed garlic to an airtight glass or plastic jar, and cover it with olive oil. Store in the refrigerator.

PUREED GARLIC POTATOES



Pureed Garlic Potatoes image

6 russet potatoes, about 1 3/4 pounds
Salt to taste
6 whole garlic cloves, peeled
1 1/3 cups milk
2 tablespoons butter
1/2 cup finely chopped parsley
Freshly ground pepper to taste
1/4 teaspoon freshly grated nutmeg

Steps:

  • Peel the potatoes and cut them crosswise into 3/4-inch cubes. Put the pieces in a saucepan and add water to cover. Add salt and the garlic.
  • Bring to a boil and simmer 15 minutes or until the potatoes are tender. Do not overcook. Drain the potatoes and garlic and put them through a food mill or potato masher, then back in the saucepan.
  • Meanwhile, heat the milk and add the butter to the milk. Blend well with a wooden spatula. Add the milk and butter mixture, a little at a time, to the potato mixture. Add the parsley, pepper, nutmeg and salt. Blend well. Keep warm until ready to serve.

PUREED WHITE BEANS WITH ROAST GARLIC AND OLIVE OIL



Pureed White Beans With Roast Garlic and Olive Oil image

1 whole head garlic
6 tablespoons extra-virgin olive oil
1 pound dried white beans, soaked overnight
Coarse salt and freshly ground pepper
2 tablespoons fresh thyme leaves
2 sprigs of thyme to garnish

Steps:

  • Preheat oven to 350 degrees. Cut off the top of the head of the garlic and pull away any loose papery skin. Put the garlic on a piece of foil and sprinkle it with two tablespoons olive oil and wrap it up. Bake it for one hour, or until the cloves are tender.
  • Meanwhile, simmer the beans in water to cover for about one hour, or until they are tender. Halfway through cooking time, season them with salt and pepper.
  • Put the beans in a food processor. Squeeze six cloves of garlic out of their skins and add them, along with the olive oil (reserve the rest of the garlic for using in salad dressings or on vegetables like baked tomatoes). Process the beans until they are smooth, adding more oil if needed. Correct seasoning and add more garlic if it seems needed. Stir in the thyme leaves and serve in a bowl garnished with sprigs of thyme.
