Easy, delicious, and hearty breakfast casserole loaded with eggs, sausage, and potatoes. Perfect for family brunch or meal-prep.

1 pound ground pork
½ teaspoon ground thyme
½ teaspoon garlic powder
½ teaspoon onion powder
1 ½ teaspoons salt (divided)
1 teaspoon black pepper (divided)
2 medium russet potatoes (diced)
2 bell peppers (diced)
1 small yellow onion (diced)
12 eggs
1 ½ cups half-and-half
1 teaspoon baking powder
2 cups cheddar cheese (grated)
fresh parsley (chopped (optional))

Steps:

  • Add ground pork to a large skillet and season with thyme, garlic powder, onion powder, 1 teaspoon salt, and ½ teaspoon pepper. Cook over medium-high heat about 5-7 minutes or until cooked through. Using a slotted spoon, remove the pork from the skillet and transfer to a plate, while leaving the fat drippings in the skillet.
  • Add potatoes, bell peppers and onions to the same skillet. Cover and cook for about 10-15 minutes, stirring occasionally, until vegetables are tender. You should be able to insert a fork into the potatoes, but you also don't want them falling apart. Once done, set aside.
  • Preheat the oven to 350° F. and grease a 9x13 inch casserole dish.
  • Crack the eggs into a large bowl and whisk together for a couple minutes; this makes the eggs fluffy, giving the casserole a good body. Whisk in the half-and-half, baking powder, ½ teaspoon salt, and ½ teaspoon pepper. Stir in 1 cup of cheddar cheese, ground pork, and vegetables. (Optional: Set aside a small portion of the ground pork and vegetables for sprinkling on the top).
  • Pour egg mixture into the casserole dish and bake for 35 minutes. Then sprinkle with remaining 1 cup of cheese (and any pork and vegetables you may have set aside) and bake for an additional 10-15 minutes until cheese is melted and casserole is set and puffy.
  • Garnish with fresh parsley, slice, and serve!

2 teaspoons canola oil
1 cup sliced mushrooms
½ cup broccoli florets, chopped
2 cups frozen shredded hash brown potatoes, thawed
½ cup grape tomatoes, quartered
3 green onions, sliced
1 cup shredded Cheddar cheese
1 teaspoon chopped fresh parsley
1 teaspoon salt
½ teaspoon pepper
8 large eggs
½ cup milk

Steps:

  • Preheat oven to 350 degrees F. In a large non-stick skillet over medium heat, heat oil, then brown the sausage patties on both sides, 2 to 3 minutes per side. Transfer to a plate and let cool.
  • Meanwhile, add mushrooms and broccoli to the same pan and cook for 5 minutes, or until mushrooms are browned. Transfer to a large bowl. Add hash browns and next 6 ingredients.
  • In a separate bowl, whisk together eggs and milk. Add to bowl of vegetable mixture.
  • Cut cooked sausage patties into quarters. Add to bowl. Gently fold mixture together to combine.
  • Pour mixture into a 1 1/2-quart casserole dish. Bake for 30 to 35 minutes or until eggs are set and top is lightly browned. Remove from oven and serve.

Layer the ingredients in a baking dish the night before, then cover and refrigerate. In the morning, pop the casserole into the oven about an hour before serving. Serve with melon wedges, fresh strawberries, and orange wedges.

3 cups frozen hash brown potatoes
¾ cup shredded pepperjack cheese
1 cup cooked ham, diced
¼ cup chopped green onions
4 eggs, beaten
1 (12 fluid ounce) can evaporated milk
¼ teaspoon ground black pepper
⅛ teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • Arrange hash brown potatoes evenly in the bottom of the prepared dish. Sprinkle with pepperjack cheese, ham, and green onions.
  • In a medium bowl, mix the eggs, evaporated milk, pepper, and salt. Pour the egg mixture over the potato mixture in the dish. The dish may be covered and refrigerated at this point for several hours or overnight.
  • Bake for 40 to 45 minutes (or 55 to 60 minutes if made ahead and chilled) in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving.
