GOLDEN FRUIT PUNCH WITH ICE RING

- Arrange fruit in a 5-cup ring mold; add 3/4 cup water. Freeze until solid. Add enough water to fill mold; freeze until solid., Just before serving, in a punch bowl, combine juice concentrates with 2 cups water. Stir in ginger ale. Unmold ice ring by wrapping the bottom of the mold in a hot, damp dishcloth. Invert onto a baking sheet; place fruit side up in punch bowl.

HOLIDAY PUNCH BOWL ICE RING
A pretty ice ring in your punch bowl adds a festive touch to a holiday gathering. Think about one of the many punch recipes on the site, and how the individual parts of the ice ring will enhance your choice. This ice ring uses lots of red and green, with some bits of gold, thrown in for contrast. This is more of a craft than a dish, so use your imagination! If not using right away, place the frozen ice ring into a plastic bag and store in the freezer until ready to use.

- Clear a spot in your freezer that is level and measures at least 14x14-inches.
- Place maraschino cherries in a pleasing design around the bottom of a 10- to 12-inch gelatin mold. Arrange mint leaves around the cherries, right-sides down (facing out and touching the mold).
- Combine maraschino cherry juice in a bowl with 2 cups water; pour 1/2 inch into the mold on top of cherries and mint, reserve remaining liquid. Place mold in the freezer until partially frozen, about 1 hour.
- Remove mold from the freezer and arrange green and gold kiwis on top of cherries. Use ice cubes and grapes to hold kiwi slices in place. Top with remaining ice and grapes. Carefully fill the mold with remaining water-juice mixture, and add more water as necessary to fill to the top edge of the mold. Place in the freezer until frozen solid, about 24 hours.
- To unmold the ice ring, fill a bowl that is larger than the mold with 1 inch of hot water. Place the mold into the hot water until ice ring separates from the mold, about 1 minute. Transfer ice ring into your punch bowl and serve immediately.

- Pour all juices and water into lg. container.
- Thaw,mix and chill.
- When ready to serve, pour chilled punch in bowl, gently pour in ginger ale and soda water.
- Add ice ring and garnish w/ strawberry slices and sprig of mint.
- Ice Mold: Place lemon, lime and oranges slices in bottom. of 8 inch ring mold, add a thin layer of juice mix and freeze.
- When fruit is solidly frozen add more punch mix and freeze.
- When solid, unmold by dipping ring in warm water.
- To make ahead:Place ice ring in air-tight plastic bag and store in freezer.
- Make as many as you need.
- Keeps well for weeks.

- Pour 3/4 of the ginger ale into a fluted tube pan (such as Bundt®). Place scoops of sherbet evenly around pan. Sprinkle blueberries randomly around pan and pour remaining ginger ale on top.
- Cover with plastic wrap and place in the freezer until frozen solid, 4 hours to overnight. Remove pan from freezer and allow to sit for about 30 minutes, then slide ice ring out of pan and into punch bowl.

- Decoration suggestions:.
- Apricot halves.
- mint leaves.
- orange peel.
- green grapes.
- strawberries.
- Mix ginger ale with lemon juice.
- Pour 2 1/2 cups of the mixture into a 1 quart ring.
- Freeze.
- Arrange desired decorations on top of the ice.
- Slowly, pour remaining juice mixture over the top so that you don't disturb your decorations.
- Freeze -- To unmold, run cold water over the bottom; it will then slip out.
- Float in the top of your punch bowl for a very pretty presentation.

CITRUS ICE RING FOR PUNCH
This is the companion ice ring for Sparkling Party Punch (non-alcoholic), posted here at Recipezaar. I have, on occasion, replaced one lemon with a small orange to give it a very colourful look. Prep time includes overnight freezing, although this will last in the freezer for a few days.

Steps:
- It is best if the lime is as close in size to the lemons as possible.
- Cut lemons and lime in half lengthwise; with cut side down, cut into 1/4-inch slices.
- You will need a ring mold, preferably the kind with grooves in the bottom-- I use my tupperware jello mold and it's perfect.
- With the rind edge down, stand slices up around circle-- 1 lime, 2 lemon, 1 cherry, 2 lemon, all close together.
- Repeat five more times.
- Pour in enough water to be 1/2-inch deep.
- Freeze.
- When frozen, pour in an inch more water; freeze.
- When frozen, repeat.
- Keep doing this until mold is full.
- The reason you do this in stages is to prevent the fruit from floating.
- To unmold, run cold water over the bottom; it will then slip out.

- Fill a 4 cup metal ring mold with 3/4 inch water; freeze until solid.
- Place enough fresh cranberries on the ice to fill the mold. Fill completely with water and freeze until solid, at least 6 hours or up to 1 week.
- To remove the ice ring, briefly dip the bottom of the mold in a bowl half-filled with warm water.
- Immediately float the ring in the punch.
