1/2 cup plus 2 tablespoons water (70° to 80°)
1/2 cup canned pumpkin
1/4 cup butter, softened
1/4 cup nonfat dry milk powder
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 to 1 teaspoon ground nutmeg
3/4 teaspoon salt
1/8 teaspoon ground ginger
2-3/4 cups bread flour
1 package (1/4 ounce) active dry yeast
Honey cinnamon whipped cream cheese, optional

Steps:

  • In bread machine pan, place all ingredients in order suggested by manufacturer. Select basic bread setting. Choose crust color and loaf size if available. , Bake according to bread machine directions (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). If desired, serve with honey cinnamon whipped cream cheese.

3 cups whole wheat flour
2 cups quick-cooking oats
2/3 cup packed brown sugar
2 packages (1/4 ounce each) active dry yeast
2-1/2 teaspoons pumpkin pie spice
1-1/2 teaspoons salt
1 teaspoon sugar
4-1/2 to 5 cups bread flour
1-1/2 cups warm water (120° to 130°)
1 cup canned pumpkin
1/3 cup canola oil
1/3 cup unsweetened applesauce
2 large eggs
1/2 cup raisins
FILLING:
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 cup butter, softened

Steps:

  • In a large bowl, mix first 7 ingredients and 2 cups bread flour. In a small saucepan, heat water, pumpkin, oil and applesauce to 120°-130°. Add to dry ingredients; beat on medium speed 2 minutes. Add eggs; beat on high 2 minutes. Stir in raisins and enough remaining bread flour to form a firm dough., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover; let rise in a warm place until doubled, about 1 hour., Mix brown sugar and cinnamon. Punch down dough. Turn onto a lightly floured surface; divide in half. Roll each portion into an 18x9-in. rectangle. Spread each with 2 tablespoons butter to within 1/2 in. of edges and sprinkle with 1/4 cup brown sugar mixture. Roll up jelly-roll style, starting with a short side; pinch seam to seal. ½ cup warm water
1 cup canned pumpkin
1 cup milk
¼ cup shortening

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a bowl and 2 loaf pans.

Yeast breads require a bit of expierence in judgement as to proper amount of flour to add at the end, so yeast recipes are not easy for first time bakers. But expierience has to start some where and this one is not that difficult.

3 1/4-3 3/4 cups all-purpose flour
2 packages active dry yeast
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8-1/4 teaspoon ground cloves
3/4 cup milk
1/4 cup packed brown sugar
2 tablespoons margarine or 2 tablespoons butter
1/2 teaspoon salt
1/2 cup canned pumpkin
3/4 cup walnuts or 3/4 cup pecans
3/4 cup chocolate chips
milk (for brushing on top)

Steps:

  • In a large mixing bowl stir together 1-1/2 cups of the flour, the yeast, ginger, nutmeg, and cloves; set aside.
  • In a 1-quart saucepan heat and stir milk, brown sugar, margarine or butter, and salt just until warm (120ºF to 130ºF) and margarine is almost melted.
  • Add to the flour mixture; add pumpkin.
  • Beat with an electric mixer on low speed for 30 seconds, scraping the sides of the bowl constantly.
  • Beat on high speed for 3 minutes.
  • Using a wooden spoon, stir in nuts, chocolate chips and as much of the remaining flour as you can while still keeping a pliable dough.
  • Turn dough out onto lightly floured surface.
  • Knead in enough of the remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total).
  • Shape into a ball.
  • Place in a lightly greased bowl; turn once to grease the surface.
  • Cover and let rise in warm place until double (30 to 45 minutes).
  • Punch dough down.
  • Turn out onto a lightly floured surface.
  • Cover and let rest for 10 minutes.
  • Lightly grease an 8x4x2-inch loaf pan.
  • Shape dough into a loaf; place in the prepared pan.
  • Cover and let rise until double (25 to 30 minutes).
  • Brush top with milk.
  • Bake in a 375ºF oven for 35 to 40 minutes or until loaf sounds hollow when tapped.
  • If necessary, cover with foil the last 10 to 15 minutes to prevent overbrowning.
  • Remove from pan.
  • Cool on a wire rack.

I bought some little pie pumpkins, and cooked them tonight to use in various dishes for Thanksgiving. They made quite a lot of pureed pumpkin, so I adapted a bread recipe to use 1 cup of the pumpkin. It's rising right now - can't wait to try it!

1 c pureed pumpkin
1 egg
1 1/2 tsp salt
3 Tbsp softened butter
3 Tbsp sorghum, honey, or molasses
4 oz warm water
3 3/4 c unbleached bread flour
1 Tbsp pumpkin pie spice
2 1/4 tsp active dry yeast

Steps:

  • 1. I used a bread machine for this recipe. You could also use a stand mixer. I also used fresh cooked, drained and pureed pumpkin. I used the juicy water that drained off as the water in my recipe.
  • 2. Measure all ingredients into the bread machine pan in the order given. Make a well in the flour on top to put the yeast in, making sure the yeast does not touch the liquid ingredients. Set the machine for the dough only setting.
  • 3. When risen, shape into rolls or into long baguette-style loaves. Place into lightly greased pan(s). Allow to rise again until doubled in size. This could take anywhere from 30 minutes for rolls to 1 1/2 hours for loaves, depending on how warm your rising area is.
  • 4. Bake at 375°F about 25 minutes for rolls or 30 minutes for baguettes. Turn out of pans onto racks to cool.
  • 5. Serve rolls warm, or slice baguettes into 1-inch slices to serve. These are not too sweet and can be used for dinner or breakfast. REALLY good toasted with butter and orange marmalade!

This is not a tea loaf type of bread - but rather meant to be a hearty loaf for sandwiches. The pumpkin should provide tenderness, color, and moisture - but I would not expect this to taste very pumpkiny.

2 teaspoons dill seeds
1 teaspoon fennel seed
1/4 cup minced onion
2 teaspoons instant espresso powder

5 teaspoons active dry yeast
2 cups fresh pumpkin puree or 1 (16 ounce) can solid pack pumpkin
2 1/2 cups rye flour

Steps:

  • In a small pan,bring water to a boil, then boil the fennel and dill seeds and onion for 1 minute.
  • Let cool to room temperature.
  • Combine water mixture and espresso powder, coca powder, salt, butter, and yeast in a mixing bowl and let rest 5-10 minutes until it starts to get frothy.
  • Beat in pumpkin using an electric mixer.
  • Gradually add rye flour, wheat flour, and only 3 cups of the all-purpose flour, mixing well.
  • Add enough of the remaining 1 cup of all-purpose flour to form a sticky mass that is just starting to come away from the sides of the bowl.
  • Knead on a floured board 10 minutes, adding a bit more flour if needed to make a soft, pliable ball of dough.
  • Place into a greased bowl, flip over once to coat top, then cover with greased plastic wrap and let rise until doubled in bulk (about 1 hour).
  • Punch dough down and divide in half.
  • Shape each half into loaves, then place into 2 greased loaf pans (9x5x3").
  • Let rise (covered as before) in a warm place for about 1 hour (or until doubled).
  • Bake in a preheated oven at 350 F for 50-55 minutes, or until they sound hollow when tapped on the bottom.
  • Let cool on racks completely before slicing.

2 tablespoons canola (or vegetable) oil

1/4 teaspoon ground nutmeg
Dash of ground cloves
6 1/2 cups bread flour (approximately)
Filling
1 tablespoon unsalted butter, melted
1/4 cup sugar
1 tablespoon ground cinnamon

Steps:

  • Add the water and yeast to the bowl of a stand mixer fitted with the paddle attachment. Mix briefly to combine. Add the milk, eggs, pumpkin, oil, brown sugar, salt, and spices and beat until the mixture is uniform, about 30 seconds. Add 4 cups of the flour to the mixer bowl, and beat until the flour is incorporated and a sticky dough forms. Remove the paddle attachment and switch to the dough hook. With the mixer on low speed, gradually add enough of the remaining flour as is necessary to create a dough that is smooth and elastic. Transfer the dough to a well-oiled bowl, turning once to coat. Cover the bowl with a piece of plastic wrap and let the dough rise until doubled in bulk, about 1 hour. While the dough rises, make the filling by combining the sugar and cinnamon in a small bowl. Also, spray two 9 x 5 inch loaf pans with cooking spray. Turn the dough out onto a lightly floured work surface and divide it in half. 1 tablespoon sugar
2 1/4 teaspoons yeast

  • First, make sure your yeast is active: combine the water, tablespoon of sugar, and the yeast, stir, and set aside until you see it begin to foam. Your yeast is alive, so proceed.
  • Add the remaining ingredients except for 1/2 cup of the flour and those for the filling. Thoroughly combine your dough and knead using your preferred method: a bread machine "dough" setting, your trusty stand mixer, or your own hands. Whatever method you choose, you're done kneading when the dough is springy and smooth to the touch. If it's a bit sticky, add that reserved 1/2 cup of flour a bit at a time until the stickiness goes away. If it seems a bit dry/clumpy, you can add water by the tablespoon until the dough is more elastic.
  • Place the dough in a greased bowl and cover with plastic wrap or a towel, then set aside to rise in a warm place for 60 minutes.
  • Prep your swirl filling by combining the sugar and cinnamon in a small bowl.
  • Make your swirl! Retrieve that risen dough, then roll it to a rectangular shape using a rolling pin. Spread the cinnamon-sugar over the rectangle leaving a thin border around all edges. Roll the bread up like a jelly roll to create the swirl, then tuck under the left and right sides to seal the edges.
  • Place the rolled dough seam-side down in a greased loaf pan and allow it to rise for another 60 minutes, or until the loaf rises above the lip of the loaf pan.

Though it might sound a little weird this is a really good bread here. I made if off of another bread recipe on recipezaar called yeast free sugar free bread recipe. I skipped the salt and used 1/4 cup of pumpkin per batch and it turned out just great! If you want to add salt, you can add 1 tsp. of celtic sea salt but it is not necessary. To make a ricer bread, use rice milk or some other natural nut milk for the liquids.

4 teaspoons baking powder

  • Mix dry ingredients.
  • Do not sift the flour!
  • Mix liquids and add to dry. Stir until there is no more dry flour.
  • Depending on the humidity of the air where you live you may need a little bit more or less liquid.
  • The dough should be moist but not sticky. It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
  • Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
  • It is important not to overwork the dough.
  • Shape into a ball or an oval, with oiled hands.

Inspired by both the fall and my favorite Quest for Glory game that had garlic and avocado sandwiches made on pumpkin wheat bread, I wanted to make my own pumpkin wheat bread in my bread machine...that's an actual yeast bread made with pumpkin, not a quickbread or sweet type of tea loaf. Hence, the coriander for savory flavor instead of cinnamon or the other traditional pumpkin pie spices. Sage or thyme would make nice additions to this bread too that go with pumpkin. I use my own homemade bread flour that's AP flour and vital wheat gluten, and I always have lots of canned pumpkin on hand no matter what time of year it is! Prep time is the dough cycle, mine takes about 90 minutes.

Favorite Pumpkin Yeast Bread (Machine) image

Warm bread out of the bread machine is one of my family's simple pleasures. I like to make this Pumpkin Yeast Bread on cold, rainy days. With butter spread on it's warm slices, my family couldn't be happier!

Number Of Ingredients 11

1/2 c plus 2 tablespoons of water. (70 - 80 degrees)
1/2 c canned pumpkin
1/4 c soft butter or margarine
1/4 c instant dry milk powder
1/4 c brown sugar, firmly packed
1 tsp ground cinnamon
1/2 to 1 teaspoon of ground nutmeg (your liking)
3/4 tsp salt
1/8 tsp ground ginger
2 3/4 c bread flour (i have also used all purpose flour)
1 pkg active dry yeast

Steps:

  • 1. Place in order of manufacturer's directions. Choose crust color.
  • 2. Yields 1 loaf. Enjoy!
