MAPLE PUMPKIN SPICE POPCORN

I ran across this today and think I'm going to try this for a fall treat. Haven't tried it yet, but it sounds wonderful! Came across it on www.popcorn.org. I kind of estimated and put the cooling time as the cooking time and everything else is preparation. Let me know if you find something more accurate.

Number Of Ingredients 6

2 tablespoons brown sugar
2 tablespoons maple syrup
1 1/2 teaspoons pumpkin spice
1 tablespoon butter or 1 tablespoon margarine
1/2 cup pecans, chopped (optional)
5 cups popcorn, popped

Steps:

  • In a large saucepan or pot, heat brown sugar, maple syrup and pumpkin pie spice mix over medium heat.
  • Cook, stirring, 3 minutes or until sugar is dissolved and mixture is bubbling.
  • Stir in butter until melted and well blended.
  • Add pecans, if desired, and popcorn and stir until well coated.
  • Allow mixture to cool before serving. Serve immediately or store in an airtight container.

I fixed a double batch of this for six of us as we vacationed in Branson. It was a perfect ending in front of the fireplace after a long day of shopping!

One 3.2 ounce bag microwave kettle-corn-style popcorn
1 cup caramel-flavored baking chips
2 teaspoons pumpkin pie spice

Steps:

  • Pop the popcorn according to the package instructions. Spread the popcorn on a parchment-lined baking sheet, discarding any unpopped kernels. Place one cup of caramel baking chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until the mixture is melted and smooth. Transfer to a resealable plastic bag and snip the corner with scissors. Drizzle the caramel over the popcorn and immediately sprinkle with 1 teaspoon pumpkin pie spice. Let the coated popcorn stand until the candy is set, about 15 minutes. Break the popcorn mixture into pieces using a wooden spoon or your hands. Sprinkle with 1 additional teaspoon pumpkin pie spice. Transfer to a serving bowl. Store leftover popcorn in an airtight container.
