CINNAMON PUMPKIN SOUP

3 lb pumpkin ((1.5 kg))
2 cups carrots (peeled and chopped into medium sized chunks (420g))
1 large red onion
1 tsp fennel seeds
1 tsp paprika (plus extra for sprinkling on pumpkin seeds)
1 tsp ground cumin
1 tsp cinnamon
4 cups chicken stock ((1 litre))
3 - 4 tbsp olive oil
salt and pepper (to season)

Steps:

  • Preheat the oven to 400°F/200°F.
  • Cut the pumpkin into rough medium-sized chunks, removing the stringy flesh and seeds. Save the seeds in a bowl and set aside.
  • Add the chopped squash, carrots and onion to a large baking tray (or divide between two trays if needed).
  • Sprinkle all of the spices over the vegetables with a pinch of salt and pepper. Drizzle over olive oil and rub over the vegetables so everything is evenly coated with spices. Roast in the oven for 40-45 minutes or until tender.
  • Remove the veg from the oven and allow to cool slightly. Remove the pumpkin from its skin using a spoon, it should be very easy to scoop out. Add the carrot, pumpkin and onion to the pot.
  • Add the chicken stock to the pot, bring to a bowl then simmer for 10 minutes.
  • Turn off the heat then blitz the soup until completely smooth using an immersion blender.

FOR THE SOUP:
1 c onion, chopped
2 Tbsp butter, melted
2 can(s) chicken broth, undiluted (10 3/4 ounce cans)
1 can(s) cooked, mashed pumpkin (16 ounce can)
1 tsp salt
1/4 tsp ground cinnamon
1/8 tsp ground ginger
1/8 tsp pepper
1 c whipping cream
FOR THE CINNAMON CROUTONS:
3 Tbsp butter, softened
1 Tbsp brown sugar
1/4 tsp ground cinnamon
4 slice whole wheat bread

Steps:

  • 1. For the soup: saute onion in butter in a medium saucepan until tender. Add 1 can chicken broth; stir well. Bring to a boil; cover, reduce heat, and simmer 15 minutes.
  • 2. Pour the broth mixture into the container o an electric blender, and process until smooth. Return the mixture to the saucepan.
  • 3. Add the remaining 1 can chicken broth, pumpkin, and the next 4 ingredients; stir well. Bring to a boil; cover, reduce heat, and simmer 10 minutes, stirring occasionally.
  • 4. Stir in the cream, and cook until thoroughly heated (do not boil). Ladle into individual soup bowls. Top each serving with Cinnamon croutons.
  • 5. For the croutons: Combine the butter, brown sugar, and cinnamon; stir well. Spread butter mixture evenly over one side of the bread slices.
  • 6. Place the bread, buttered side up, ona baking sheet. Bake at 400° for 8 to 10 minutes or until bread is crisp and the topping is bubbly. Cut each slice of bread into 8 small triangles or squares.

6 cups chicken stock
1 ½ teaspoons salt
4 cups pumpkin puree
1 teaspoon chopped fresh parsley
1 cup chopped onion
½ teaspoon chopped fresh thyme
1 clove garlic, minced
½ cup heavy whipping cream
5 whole black peppercorns

Steps:

  • Heat stock, salt, pumpkin, onion, thyme, garlic, and peppercorns. Bring to a boil, reduce heat to low, and simmer for 30 minutes uncovered.
  • Puree the soup in small batches (1 cup at a time) using a food processor or blender.

4 slices SARA LEE® Soft & Smooth™ Whole Grain White Bread, cubed
1 cup chopped onion

2 (14.5 ounce) cans chicken broth
1 (15 ounce) can pumpkin puree
1 teaspoon salt
¼ teaspoon ground cinnamon
⅛ teaspoon ground ginger

1 cup fat-free half-and-half

Steps:

  • Preheat oven to 400 degrees F(200 degrees C). In a small bowl, mix together melted butter, brown sugar, and cinnamon. In a large bowl, toss bread cubes with melted butter mixture to coat. 4 pounds pumpkin or other winter squash such as butternut or Hubbard, halved and strings and seeds discarded
2 tablespoons unsalted butter
3 large carrots, chopped
4 celery ribs, chopped
2 large onions, chopped
1 leek (white and pale green part only), halved lengthwise, washed well, and chopped
12 cups chicken broth or water
2 teaspoons cinnamon
1/2 teaspoon freshly grated nutmeg
1/4 cup pure maple syrup
1 cup heavy cream
Garnish: apple Schnitz "croutons":
1 tart apple such as Granny Smith
1/4 cup firmly packed light brown sugar

Steps:

  • Preheat oven to 350°F.
  • In a shallow baking pan arrange squash, cut sides up, and bake 45 minutes, or until soft. Spoon out pulp (there should be 6 to 8 cups) and purée in a food processor.
  • In a large heavy kettle heat butter over moderate heat until foam subsides and cook remaining vegetables, stirring occasionally, until they begin to soften, 10 to 12 minutes. Add broth or water, squash purée, cinnamon, and nutmeg and simmer, covered 40 minutes. Stir in syrup and cream and simmer, uncovered, 5 minutes. Season soup with salt and pepper.
  • Cool soup slightly and in a food processor or blender purée in small batches until smooth, transferring to a large bowl. Return soup to kettle and reheat if necessary. Serve soup garnished with croutons.
  • Preheat oven to 300°F.
  • Peel and core apple and halve lengthwise. In a food processor fitted with 2-millimeter slicing disk or with a mandoline or other hand-held slicing device cut apple into paper-thin slices. On a large non-stick baking sheet or a large baking sheet lined with parchment paper spread slices in one layer and sprinkle evenly with brown sugar. Bake slices in middle of oven 20 minutes, or until crisp and golden, and transfer immediately to racks to cool. Makes about 12 "croutons."
