1 gingersnap crumb crust baked and cooled
3/4 cup sugar
1/4 cup chopped crystallized ginger
8 ounces cream cheese, softened
2 large eggs
1/4 cup whole milk
1 tablespoon all-purpose flour
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon salt
1 cup canned solid-pack pumpkin (from a 15-ounces can)

Steps:

  • Make gingersnap crumb crust and reserve.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Pulse sugar and ginger in a food processor until ginger is finely chopped, then add cream cheese and pulse until smooth. Add eggs, milk, flour, nutmeg, and salt and pulse until just combined.
  • Reserve 2/3 cup cream cheese mixture in a glass measure. Whisk together remaining 1 1/3 cups cream cheese mixture and pumpkin in a large bowl until combined.
  • Pour pumpkin mixture into gingersnap crumb crust. Stir reserved cream cheese mixture (in glass measure) and drizzle decoratively over top of pumpkin mixture, then, if desired, swirl with back of a spoon. Put pie on a baking sheet and bake until center is just set, 35 to 45 minutes. Transfer to a rack and cool to room temperature, about 2 hours, then chill, loosely covered with foil, at least 4 hours. If necessary, very gently blot any moisture from surface with paper towels before serving.

I made this recently as a test-run for the holidays and found it to be one of the best cheescakes I have made and I have made many over the years, I am so happy to have this recipe given to me! I did increase the brown sugar to 3 tablespoons in the crust and also increased the white sugar slightly for the filling, just personal taste.

1/4 cup butter, melted
3/4 cup graham cracker crumbs
1/2 cup crispy crushed gingersnaps
1 tablespoon brown sugar
1 teaspoon cinnamon
1 cup whipping cream, unwhipped
24 ounces cream cheese, softened
1 1/2 cups sugar
3 large eggs
1 1/2 cups pumpkin puree
3/4 teaspoon cinnamon
3/4 teaspoon ginger powder
3/8 teaspoon clove
1/3 cup pecan halves

Steps:

  • Set oven to 350 degrees (300 degrees for convection-bake oven).
  • Prepare a 10-inch springform pan.
  • To make the crust; in a bowl place the melted butter with graham cracker crumbs, crushed gingersnaps, brown sugar and cinnamon; mix with a fork until combined.
  • Line bottom and side with parchment paper or wax paper, then spray with nonstick spray.
  • Press the mixture into the bottom of the pan.
  • For the filling; pour the whipping cream into a medium bowl and beat just until soft peaks form; refrigerate until ready to use.
  • In a bowl beat the cream cheese with electric mixer until fluffy; gradually add in sugar, beating well until combined.
  • Add in eggs one at a time and beat the mixture until fluffy.
  • Stir in pumpkin puree, ginger, cinnamon and cloves.
  • Remove the whipped cream from the refrigerator and lightly whisk to reblend.
  • Using a spatula or a flat spoon fold in the whipped cream into the cream cheese-pumpkin mixture.
  • Pour the mixture into preapred crust.
  • Wrap one continuous sheet of heavy foil around the springform pan then press firmly against the pan.
  • Place the wrapped pan in a baking pan and fill with hot water to halfway up the spring form pan.
  • Bake for 60-70 minutes.
  • Cool the cheesecake to room temperature, the chill for at least 5 hours or until the cake is thoroughly chilled.
  • Remove the sides of the springform pan.
  • Just before serving place the pecan halves on top of the cheescake in a ring around the edges.

150 g digestive cookies
75 g butter, unsalted, melted and cooled
50 g candied ginger, finely cut
675 g Philadelphia cream cheese, at room temperature
1 jar of condensed milk, at room temperature
850 g pumpkin, no seeds or skin, cut in little cubes
3 eggs, bio
60 ml maple syrup
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp salt
240 ml double cream
180 ml maple syrup
60 g walnuts
2-3 tbsp pumpkin seeds

Steps:

  • Vapor cook the pumpkin, until soft. Let it cool to room temperature.Preheat the oven to 160 degrees Celsius. Prepare a ring tray, with removable bottom, brush it with some butter and then put baking paper in it. Transform the cookies in rough crumbles, mix it with the candied ginger and the melted butter, then press it strongly on the bottom of the tray. This way we prepare a good support for the cream cheese filling. Mix well the cheese, until creamy, then slowly add the condensed milk. When the composition is homogenous, add eggs, maple syrup (60 ml), the pumpkin, salt, cinnamon and nutmeg. Mix slowly, without trying to hard to puree the pumpkin. Pour it in the prepared tray, over the crumb crust. Bake the cake for almost 1 hour and 15 minutes, take it out of the oven and let it cool to room temperature, then refrigerate it for a couple of hours, or better, overnight. Just before serving, prepare the maple caramel: heat the double cream and maple, bring to a boil, then let it boil on a medium fire for around 20 minutes, mixing rarely. When the syrup is more consistent, add the walnuts and pumpkin seeds. Set aside. Let cool a little. Serve with the cheesecake. Just perfect :)

2/3 cup chopped walnuts, toasted
3 tablespoons sugar
3/4 cup sugar

1/4 cup whipping cream
1 tablespoon pumpkin pie spice

Steps:

  • Preheat oven to 350 degrees. Place cookie crumbs, walnuts, and 3 tablespoons sugar in a food processor and pulse 3 or 4 times until combined; add butter and pulse 4 or 5 times, or until crumbly. Wrap the outside of a 10-inch springform pan with aluminum foil, then press cookie mixture into the bottom and 1 inch up the sides. Bake 8 to 10 minutes. Cool crust completely on a wire rack. Reduce oven heat to 325 degrees.
  • Beat cream cheese with an electric mixer at medium speed 3 minutes, or until creamy. Gradually add brown sugar and the remaining 3/4 cup sugar, beating 4 minutes, or until blended.
  • Add eggs, one at a time, beating just until yellow disappears. Add pumpkin, whipping cream, and pumpkin-pie spice. Beat on low speed of an electric mixer just until blended. Do not overbeat. Pour batter over prepared crust.
  • Bake 1 hour and 15 minutes, or until almost set (it will still jiggle in the center). Remove from oven; run a knife around edge of pan. Cool on a wire rack 1 hour. Chill 8 hours or overnight. Garnish with walnut halves and serve with Caramel Sauce.
  • Caramel Sauce: Melt butter in a heavy saucepan over medium heat; add brown sugar and corn syrup, then cook, stirring constantly, until mixture comes to a boil. Gradually add cream, stirring constantly. Cook, stirring constantly, until mixture comes to a boil. Remove from heat. Cool to room temperature.

6 ounces cream cheese, at room temperature
3 tablespoons canned pumpkin (not pumpkin pie filling)
1 teaspoon vanilla extract
1/2 teaspoon pumpkin pie spice
3 cups powdered sugar
1/2 cup pecans, chopped
Nonstick baking spray with flour
1/3 cup cake flour
3 tablespoons cornstarch
1 tablespoon ground ginger
1/4 teaspoon kosher salt
2 large eggs plus 3 large egg yolks plus 2 large egg whites
1/2 cup plus 1 tablespoon granulated sugar
1 teaspoon vanilla extract
Red, orange and brown gel food coloring
Powdered sugar, for rolling

Steps:

  • For the pumpkin cheesecake filling: Make the filling ahead of time and chill while you are making your cake. Add the cream cheese to the bowl of a stand mixer fitted with the paddle attachment and beat on medium-high speed until light and fluffy, 2 to 3 minutes. Add the pumpkin, vanilla and pumpkin pie spice and beat on medium speed just until incorporated. Change the mixer speed to low and add the powdered sugar 1/2 cup at a time until all the sugar is incorporated, then increase the mixer speed and beat for 2 more minutes. Fold in the pecans. Chill while you bake the cake. (See Cook's Note.)
  • For the cake: Preheat the oven to 450 degrees F. Spray a 16-by-11-inch jelly roll/sheet pan with nonstick baking spray. Line the pan with parchment paper and spray again lightly with baking spray. Set aside.
  • Whisk together the cake flour, cornstarch, ginger and salt in a large bowl.
  • Put the eggs, egg yolks and 1/2 cup granulated sugar in the bowl of a stand mixer fitted with the paddle attachment. Beat on medium-high speed until pale in color and thickened, around 5 minutes. Add the vanilla extract and beat a few more seconds to combine.
  • Sift the flour mixture over the egg and sugar mixture and gently fold with a spatula until combined.
  • Add the egg whites and remaining tablespoon granulated sugar to a separate grease-free bowl and whip until stiff peaks form.
  • Gently fold the whipped egg whites into the egg yolk mixture with a spatula. Remove 1/4 cup batter to each of 3 separate bowls and add a couple drops of orange food color to one, red to another and brown to the last. Stir just to incorporate.
  • Brush an abstract pattern with the colorful batter onto the parchment. Freeze at least 10 minutes, and up to 30 minutes. Pour the remaining plain batter over the top of the design and smooth gently to even out. Bake until lightly golden brown and the cake pulls away from the edges, 6 to 7 minutes.
  • Let the cake sit at room temperature for 5 minutes. Sift the entire surface with powdered sugar. Cover with a clean towel and use the bottom of a sheet pan to flip the cake out of pan onto the towel. Remove the pan and parchment paper. Cover the exposed top of the cake with a second clean kitchen towel and again use the bottom of a sheet pan to flip the cake back over. Remove the towel from the top of the cake and use the towel that is underneath the cake to help roll it into a tight roll, rolling short end to short end. Set aside to cool completely.
  • Gently unroll the cake and spread the filling in an even layer over it. Roll the cake back up using the towel as a guide. Place on a sheet pan or your serving platter and refrigerate for 2 hours before slicing and serving.

1 cup 4% cottage cheese
1/4 cup all-purpose flour
1 teaspoon ground cinnamon

TOPPING:
1-1/2 cups (12 ounces) sour cream

  • In a small bowl, combine cookie crumbs, sugar and butter. Press onto the bottom and 2 in. up the sides of greased 9-in. springform pan; set aside. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese, pumpkin, sugar, cottage cheese, flour, cinnamon, vanilla, salt, nutmeg and cloves until blended. For the gingersnap crust:
About 40 gingersnap wafers (to yield 2 cups cookie crumbs)
1/4 cup packed light brown sugar
2-1/2 oz. (5 Tbs.) unsalted butter, melted and cooled
For the filling:
2 lb. (four 8-oz. packages) cream cheese, at room temperature
1 1/3 cups packed light brown sugar
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground allspice
1/4 tsp. freshly grated nutmeg
1/4 tsp. table salt
4 large eggs
2 large egg yolks
1 Tbs. pure vanilla extract
One 15-oz. can pure solid-pack pumpkin (not pumpkin pie filling)

Steps:

  • Position a rack in the middle of the oven and heat the oven to 350°F. Make the crust: Pulse the cookies and brown sugar in a food processor until well combined and the crumbs are uniform. Transfer to a medium bowl; add the melted butter. Combine thoroughly, first with a spoon and then with your fingers, until the mixture is evenly moist, crumbly, and holds together when you squeeze a handful. Press the mixture evenly over the bottom and partway up the sides of a 9-inch springform pan. Chill for 5 minutes and then bake for 10 minutes. Let cool. Make the filling: Heat a kettle of water. With an electric mixer or a wooden spoon, beat the cream cheese until smooth. In a separate bowl, whisk together the brown sugar, cinnamon, ginger, allspice, nutmeg, and salt. Add this mixture to the cream cheese. Beat until well blended, scraping down the sides and bottom of the bowl as needed. Add the eggs and yolks one at a time, making sure each is thoroughly incorporated before adding the next, and scraping down the bowl after each. Blend in the vanilla and pumpkin. Scrape the batter into the cooled crust. The batter will come up past the crust and will fill the pan to the rim. Tap the pan gently once or twice on the counter to release any air bubbles. Set the pan in a larger baking dish (a roasting pan is good), and add enough hot water from the kettle to come about halfway up the sides of the springform pan. Bake until the top of the cake looks deep golden and burnished and the center is set (the cake may just barely begin to crack), 1 hour 35 minutes to 1 hour 45 minutes. The cake will jiggle a little bit when tapped. The top may rise a bit but will settle as it cools. Remove the cheesecake from the oven and run a thin-bladed knife between the crust and the pan sides (this will prevent the cake from breaking as it cools). Let the cheesecake cool to room temperature in the pan on a wire rack. Cover and chill overnight.

GINGER PUMPKIN CHEESECAKE

This recipe is super easy, and very good. I did note, however, on my hard copy, that while the original recipe called for gingersnap crumbs I used graham cracker crumbs, and next time I would double the pumpkin pie spice and maybe even add more pumpkin!

16 oz graham cracker crumbs (or gingersnap crumbs)
6 Tbsp butter, melted
4 Tbsp sugar
16 oz cream cheese
3/4 c light brown sugar, packed firm
3 large eggs
2 tsp vanilla
29 oz canned pumpkin
1 Tbsp flour
4 tsp pumpkin pie spice
whipped cream (or good old cool whip)
pecans

Steps:

  • 1. Oven to 325 degrees. Combine crumbs, melted butter and 4 T sugar and press into bottom and a little up the sides of a 9" Springform pan. Bake 15 min and set aside.
  • 2. Beat cream cheese and brown sugar with mixer until fluffy. Add eggs, one at a time, beating between each addition. Add vanilla, pumpkin, flour, and pie spice and beat smooth. Pour into crust and bake 50 min or until lightly browned and almost set.
  • 3. Cool completely in pan on wire rack, cover and refrigerate overnight. Garnish with pecans and whipped cream.
