Number Of Ingredients 19

3-1/2 cups all-purpose flour
3 cups sugar
1-1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
4 eggs
1 can (15 ounces) solid-pack pumpkin
1 cup canola oil
1/3 cup water
1/2 teaspoon vanilla extract
1 package (8 ounces) pitted dates, chopped
1-1/2 cups chopped pecans
CARAMEL GLAZE:
1/4 cup packed brown sugar
1/4 cup sugar
1/4 cup butter, cubed
1/4 cup heavy whipping cream
2/3 cup confectioners' sugar
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon, baking soda and salt. In a small bowl, whisk the eggs, pumpkin, oil, water and vanilla. Stir into dry ingredients just until moistened. Fold in dates and pecans., Transfer to two greased 9x5-in. loaf pans. Bake at 350° for 60-70 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks., For glaze, in a small heavy saucepan, combine the brown sugar, sugar, butter and cream. Cook and stir over low heat until sugar is dissolved., Increase heat to medium. Do not stir. Cook for 3-6 minutes or until bubbles form in center and syrup turns amber brown. Remove from the heat; transfer to a small bowl. Cool to room temperature. Add confectioners' sugar and vanilla; beat until smooth. Drizzle over loaves.

1/2 cup butter
1 1/2 cups sugar
2 eggs
1 cup cooked pumpkin
3 tablespoons orange zest
1/4 cup orange juice
2 1/4 cups flour
1/2 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1 teaspoon pumpkin pie spice
1/2 cup chopped walnuts
1/2 cup chopped pitted dates

Steps:

  • Preheat oven to 350° and grease a 9x5 inch loaf pan.
  • In large bowl, cream together the butter, sugar and 1 egg, then beat in second egg until batter is smooth.
  • Stir in pumpkin, orange zest and orange juice.
  • In another bowl, combine flour, baking powder, salt, and spices, then add nuts and dates.
  • Pour all at once into batter in mixing bowl and stir by hand only to moisten.
  • Pour into prepared loaf pan.
  • Bake for 60 minutes or until toothpick inserted comes out clean.
  • Cool in pan for 10 minutes, them remove loaf to rack to cool completely.

1/3 cup packed brown sugar
1/3 cup chopped pecans
1 tablespoon butter or margarine, softened
1 2/3 cups granulated sugar
2/3 cup vegetable oil
2 teaspoons vanilla
4 eggs
1 can (15 ounces) pumpkin (not pumpkin pie mix)
3 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon ground cloves
1 cup chopped dates

Steps:

  • Move oven rack to low position so that tops of pans will be in center of oven. Heat oven to 350°F. Grease bottoms only of 2 loaf pans, 8 1/2x4 1/2x2 1/2 inches, or 1 loaf pan, 9x5x3 inches, with shortening.
  • Mix all Praline Topping ingredients until crumbly; set aside.
  • In large bowl, mix granulated sugar, oil, vanilla, eggs and pumpkin. Stir in remaining Date Bread ingredients except dates until well blended. Stir in dates. Pour batter into pans. Sprinkle with topping.
  • Bake 8-inch loaves 50 to 60 minutes, 9-inch loaf 1 hour 10 minutes to 1 hour 20 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaves from pans; remove from pans to wire rack. Cool completely, about 1 hour, before slicing.

This is my favorite recipe around the holidays. The combinations I thought up work very well together. The recipe originally was my grandmother's. I added the dates and everyone was wild about it.

1 ¾ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon baking powder
¼ teaspoon ground cloves
⅓ cup buttermilk
½ teaspoon vanilla extract
1 ⅓ cups raw sugar
⅓ cup shortening, softened
2 eggs
1 cup pumpkin puree
⅓ cup chopped dates

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Sift flour, baking soda, salt, cinnamon, baking powder, and cloves together in a bowl.
  • Mix buttermilk and vanilla extract together in a small bowl.
  • Beat sugar and shortening in a large bowl with an electric mixer until light and fluffy. Beat in eggs. Beat in pumpkin puree. Add flour mixture in 3 batches, alternating with buttermilk mixture, beating batter briefly after each addition.
  • Fold dates into the batter. Pour batter into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

1/2 c butter or margarine, melted
1 c canned pure pumpkin (not pie filling)
2 eggs
1/2 c water
1 1/2 c granulated sugar
1 3/4 c all purpose flour
1/4 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp salt
1/2 c chopped dates
1/2 c chopped nuts
1/2 c chocolate chips (or more)

Steps:

  • 1. Preheat oven to 350. Grease a 9X5 loaf pan & set aside.
  • 2. Beat together the butter, pumpkin, eggs and water. Set aside.
  • 3. Sift together the sugar, flour, baking powder, baking soda, spices and salt. Stir into this the dates, nuts and chocolate chips to coat well.
  • 4. Combine the two mixtures and blend well. Pour into prepared pan and bake @350 for 1 1/4 to 1 1/2 hours. Check for doneness at 1 1/4 hours.
  • 5. Note: this bread will be moist and it freezes well.
  • 6. Tip: You can use self rising flour instead of all purpose but please remember to omit the baking powder, baking soda and salt if you do this.

4 teaspoons baking soda
1-3/4 teaspoons ground cinnamon

3/4 teaspoon ground cardamom
2 large eggs, room temperature
1 can (29 ounces) solid-pack pumpkin
1 cup 2% milk
1 cup canola oil
1 teaspoon vanilla extract
2 cups chopped hazelnuts
2 cups chopped dates

Steps:

  • Preheat oven to 350°. In a large bowl, whisk the first 7 ingredients. In a stand mixer, beat eggs, pumpkin, milk, oil and vanilla until blended. Beat in flour mixture just until moistened. Fold in hazelnuts and dates. , Transfer to 3 greased 8x4-in. loaf pans. Bake until a toothpick inserted in center comes out clean, 50-55 minutes. Cool in pans 10 minutes before removing to wire racks to cool. Freeze option: Securely wrap cooled loaves in foil, then freeze. To use, thaw at room temperature.

nonstick cooking spray
2 cups all-purpose flour
1 1/3 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup egg substitute or 4 eggs
1 (15 ounce) can pumpkin
1/2 cup sugar
1/4 cup Splenda sugar substitute, for baking
1/3 cup honey
3 tablespoons cooking oil
7 teaspoons unsweetened applesauce
1 teaspoon finely shredded orange peel
1/3 cup orange juice
1/2 cup chopped walnuts or 1/2 cup pecans
1/2 cup pitted dates, diced

Steps:

  • Preheat oven to 350 degrees. Prepare two loaf pans with a light coating oc cooking spray.
  • In a large bowl, stir together all-purpose flour, whole wheat flour, baking powder, nutmeg, salt, and baking soda. Set aside.
  • In a medium bowl, stir together pumpkin, sugar, egg, honey, oil, applesauce, orange peel, and orange juice.
  • Using a spoon, stir pumpkin mixture into flour mixture just until combined. Take care not to overmix as that will toughen the bread. Stir in nuts and dates (or raisins). Divide mixture between the prepared pans.
  • (Tip: Dates can be quite sticky and hard to chop. Give your knife a quick shot of cooking spray. Once chopped, mix about 2 tablespoons of the flour mixture with the dates to help the bits separate and become evenly distributed in the bread.).
  • Bake about 50 minutes or until a toothpick inserted near centers comes out clean.
  • Cool in pans on wire racks for 10 minutes. Remove from pans. Cool completely on wire racks.
  • This bread freezes well.

1/2 cup egg substitute
1 cup canned pumpkin
1 cup whole wheat flour

1/2 teaspoon ground nutmeg

1/2 cup buttermilk
1 cup quick-cooking oats

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Beat in egg substitute and pumpkin. Combine the dry ingredients; add to creamed mixture alternately with buttermilk. Stir in oats and dates. Pour into an 8x4-in. loaf pan coated with cooking spray. , Bake at 350° for 75 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool.

29 ounces pumpkin
4 cups Splenda sugar substitute
2 eggs
1/2 cup oil
1/2 cup applesauce
1 tablespoon cocoa
1 teaspoon vanilla
4 cups whole wheat flour
1 cup white flour
4 teaspoons baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 cups chopped dates
2 cups chopped nuts

Steps:

  • In large mixing bowl, whip eggs.
  • add oil and continue mixing.
  • add the splenda sugar substitute and mix well.
  • Add the applesauce, pumpkin, and vanilla.
  • Sift together the dry ingredients and add to the pumpkin mixture.
  • Stir in the dates and nuts.
  • Batter will be very stiff.
  • Grease and flour 8 small loaf pans or 4 larger loaf pans.
  • Bake in a preheated 350 degree oven for 1 hour or until toothpick inserted in center of loaf comes out clean.
  • Remove from pans and cool on wire rack.
  • When completely cool, store in plastic bags.
  • This bread freezes nicely and is a great Thanksgiving gift to friends.

...This recipe found a place in the "Taste of Home Christmas 2012" cookbook! YaY Me! This is one of those breads people are happy to receive as a gift. The yummiest pumpkin bread I've ever had. When I got this recipe from a dear friend, she told me the most important thing to do was to wrap the loaves in plastic wrap and don't eat until the next day. Anyone whom loves quick breads, knows the best thing about them is slicing into them fresh out of the oven... Waiting until the next day is the hardest part...BUT it is sooo worth it!!! So have patience!!!

Steps:

  • For Bread: combine eggs and sugar in large bowl. Stir in pumpkin, oil, water and vanilla until blended. In another bowl, whisk together flour, cinnamon, salt and soda. Add to pumpkin mixture stirring until just combined. Fold in dates and nuts. Pour into 4 greased 7x3 or 2 greased 9x5 loaf pans. Bake at 350 for 55-65 minutes. Or until toothpick inserted comes out clean. Cool in pans for 10 minutes then remove from pans and cool completely on wire racks. While still on wire racks drizzle with carmel glaze, let glaze set. Wrap with plastic wrap and store over night before serving.
  • For Glaze: Place butter, white sugar, brown sugar and cream in saucepan and cook over medium heat until sugars are dissolved. Cool 20 minutes then stir in powdered sugar and vanillla until smooth. Drizzle over pumpkin bread.
  • the caramel glaze is good on many things...especially banana bread, muffins or bars!
