Transform Betty Crocker™ Super Moist™ yellow cake mix into a Halloween or fall celebration dessert with this pumpkin cupcake recipe.

1 box Betty Crocker™ Super Moist™ yellow cake mix
1 can (15 oz) pumpkin (not pumpkin pie mix)
1/4 cup canola oil
1/2 teaspoon pumpkin pie spice
2 whole eggs
1 egg white
1/2 cup pumpkin seeds (pepitas)
2 tablespoons granulated sugar
2 tablespoons packed light brown sugar
4 oz (half of 8-oz package) cream cheese, softened
1/4 cup butter, softened
2 cups powdered sugar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • In large bowl, beat cake mix, pumpkin, oil, pumpkin pie spice and whole eggs with electric mixer on low speed 30 seconds, then on medium speed 2 minutes, scraping bowl occasionally. Divide batter evenly among muffin cups.
  • Bake 24 to 29 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely.
  • Meanwhile, line cookie sheet with cooking parchment paper. In small bowl, beat egg white with whisk until foamy. Stir in pumpkin seeds; drain. Return seeds to bowl; stir in granulated sugar and brown sugar. Spread seeds on cookie sheet. Bake 7 to 9 minutes, stirring once, until toasted and dry. Cool 30 minutes. Break seeds apart.
  • In medium bowl, beat cream cheese and butter with electric mixer on medium speed 30 seconds. Reduce speed to low. Add powdered sugar, 1 cup at a time, beating until blended. Stir in vanilla. Frost cupcakes. Sprinkle with sugared pumpkin seeds.

  • Preheat oven to 350°. Line 12 muffin cups with paper or foil liners. Beat first six ingredients until well blended. In another bowl, whisk flour, baking powder, baking soda, salt and spices; gradually beat into pumpkin mixture., Fill prepared cups two-thirds full. Bake until a toothpick inserted in center comes out clean, 25-30 minutes. Cool in pans 10 minutes before removing to wire racks to cool completely., Mix frosting, whipped topping and cinnamon. 1 box yellow cake
1 3oz box pumpkin spice pudding
3/4 c milk
1 c cinnamon applesauce
4 eggs
FROSTING
1 container whipped topping
1 3oz box pumpkin spiced pudding
1 c milk

Steps:

  • 1. Wisk wet ingredients in bowl. In another bowl stir together cake mix and pudding mix. Blend wet ingredients into dry. Blend for 2-3min till lumps are gone.
  • 2. Fill cupcake papers 3/4 way full (i use icecream scoop) Bake at 350 for 15-17min. Let cool.
  • 3. FROSTING Wisk milk into pudding. Let set for 5min in refrigerator. Fold in whipped cream. Frost or pipe frosting to each cupcake. Decorate with candies or dust with cinnamon sugar.

1 box duncan hines yellow cake mix
3 oz canned solid pack pumpkin
1 c water
3 eggs
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground nutmeg
4 oz butter
4 oz canned solid pack pumpkin
1 tsp vanilla extract
2 Tbsp whole milk
24 - 32 oz powdered sugar
1/4 tsp ground cinnamon
1/4 tsp ground ginger
1/8 tsp ground nutmeg

Steps:

  • 1. Preheat oven to 350 degrees, and line muffin pans with cupcake papers.
  • 2. To a large mixing bowl, add cake mix, 3 oz. of pumpkin, water, eggs, 1/4 tsp. cinnamon, 1/4 tsp. ginger and 1/8 tsp. nutmeg. Beat on low speed of electric mixer for 30 seconds. Increase speed to medium and beat for two minutes, scraping down sides of bowl as needed.
  • 3. Fill cupcake papers 1/2 to 2/3 full and bake in preheated oven until cupcakes test done by springing back when touched lightly with fingertip in center. Remove to racks to cool.
  • 4. While cupcakes cool, make the frosting. To achieve the best and lightest frosting, you're going to need to beat it for a long period of time. This is best done with an electric stand mixer so you can do other things while your frosting continues to beat.
  • 5. For the frosting: Use the paddle attachment for your mixer. To the mixing bowl, add the softened butter and 4 oz. of pumpkin and beat until well combined. Next, add 1/4 tsp. cinnamon, 1/4 tsp. ginger and 1/8 tsp. nutmeg and beat until combined. Next, add 24 oz. of powdered sugar, vanilla extract and milk and beat on low until combined. Once there is no risk of dry powdered sugar flying out of the bowl, increase speed to medium or medium-high and beat for at least 5 minutes. Scrape down the sides of the bowl and the paddle and continue to beat for 10 minutes. Check to see if you like the consistency of the frosting or if you need to add more powdered sugar. Add more if you need it. There is no hard and fast rule here. If you are satisfied with the frosting at this stage, then use it. I personally beat my frosting for at least 30 minutes. In that 30 minutes I check the frosting and scrape the bowl and paddle about 3 times. I like my frosting to be lighter, and the extra time beating it helps to achieve this lightness.
  • 6. Put the frosting on your cooled cupcakes. I use a 1M star tip with a pastry bag to get that bakery look. But if you prefer to use a butter knife or offset spatula, go for it! They still taste just as yummy!
  • 7. If you would like, you can add a festive touch by topping the cupcake with a piece of candy corn or holiday sprinkles. Eat, share and enjoy!!

Water, vegetable oil and eggs called for on cake mix box
1/3 cup canned pumpkin (not pumpkin pie mix)
24 plain mini cake doughnuts
2 containers Betty Crocker™ Rich & Creamy vanilla frosting
1 can (6.4 oz) Betty Crocker™ Easy Flow orange decorating icing
24 pieces (1 1/2 inch) green candy apple licorice twists or black licorice
Small green spearmint gumdrop leaves or green gumdrops

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • Make cake mix as directed on box, using water, oil and eggs and stirring in pumpkin. Bake as directed for cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely.
