FOR THE CRUST:
1 3/4 c. Graham Cracker Crumbs (about 10-12 Whole Crackers)
1/2 c. Salted Butter, Melted
2 tbsp. Powdered Sugar
FOR THE PUMPKIN FILLING:
4 tsp. Cold Water
1 tsp. Gelatin
4 oz. weight Cream Cheese
1/2 c. Powdered Sugar
3/4 c. Pumpkin Puree
1/2 tsp. Cinnamon
1/4 tsp. Nutmeg
1/4 tsp. Ginger
1/8 tsp. Cloves
1 pinch Salt
1 tsp. Pure Vanilla Extract
3/4 c. Whipping Cream
FOR THE TOPPING:
4 oz. weight Cream Cheese
3 tbsp. Powdered Sugar
2/3 c. Whipping Cream
1/4 c. Chopped, Toasted Pecans

Steps:

  • Preheat oven to 350°F. Line an 8x8 square baking dish with parchment paper and set aside.
  • Place graham cracker crumbs, melted butter, and powdered sugar in a mixing bowl and mix until well combined. Press firmly into the bottom and partway up the sides of the prepared baking dish.
  • Bake in preheated oven for 10-12 minutes, or until crust is just starting to change color. Set aside to cool completely.
  • Place the water in a small saucepan. Sprinkle the gelatin on top. Set aside for 10 minutes.
  • Meanwhile, in a large mixing bowl beat the cream cheese and powdered sugar until smooth. Add pumpkin, cinnamon, nutmeg, ginger, cloves, salt, and vanilla and beat again until smooth.
  • Heat the gelatin mixture over the stove, whisking often, until gelatin completely dissolves. Pour into the pumpkin mixture and beat well.
  • In a separate mixing bowl, beat whipping cream until stiff peaks form. Gently fold into the pumpkin mixture in 3 even additions. Be careful not to deflate the whipped cream too much.
  • Cover with plastic wrap and place in the fridge while you make the topping.
  • In a mixing bowl, beat cream cheese and powdered sugar together until smooth. Gradually add whipping cream. Beat until stiff peaks form.
  • Spread over the pumpkin filling with an offset spatula. Cover with plastic wrap and chill the bars in the refrigerator until they are set, about 4-6 hours. Just before serving, sprinkle with the toasted pecans. Serve chilled.

An easy to make graham cracker crust forms the foundation for cream cheese and pumpkin layers topped with whipped cream. This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

½ cup butter
⅓ cup white sugar
24 graham crackers, crushed
2 eggs
¾ cup white sugar
1 (8 ounce) package cream cheese, softened
1 envelope (1 tablespoon) unflavored gelatin
¼ cup water
1 (15 ounce) can pumpkin
3 eggs, separated
½ cup milk
½ cup white sugar
½ teaspoon salt
2 teaspoons ground cinnamon
½ pint whipped cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a medium saucepan over medium heat, melt butter. Stir in the sugar and mix well. Stir in graham cracker crumbs. Pat the mixture into baking dish.
  • In a medium mixing bowl, beat together the eggs, sugar and cream cheese. Pour the mixture over crust.
  • Bake 20 minutes in the preheated oven. Remove from heat and allow the mixture to cool.
  • In a small bowl, dissolve the gelatin in water.
  • In a medium saucepan over medium heat, mix the pumpkin, eggs, milk, sugar, salt and cinnamon. Reserve the egg whites. Stirring constantly, cook until thick, about 4 minutes. Remove from heat and mix in the gelatin. Allow the mixture to cool for approximately 20 minutes.
  • In a small bowl, beat the 3 egg whites until stiff. Gently fold the egg whites into the cooled pumpkin mixture. Pour the pumpkin mixture over the cream cheese mixture. Top with whipped cream. Cover and refrigerate approximately 2 hours.

1 teaspoon ground cinnamon

CREAM CHEESE FILLING:
12 ounces cream cheese, softened
1 cup sugar
3 large eggs
PUMPKIN FILLING:
1 can (15 ounces) solid-pack pumpkin
3 large eggs, separated
3/4 cup sugar, divided
1/2 cup 2% milk
2 teaspoons ground cinnamon

TOPPING:
1 cup heavy whipping cream

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count)
1 cup sugar
3 tablespoons Gold Medal™ all-purpose flour
1 package (8 oz) plus 1 package (3 oz) cream cheese, softened
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
3 eggs
1 can (15 oz) pumpkin (not pumpkin pie mix)
1 tablespoon milk

Steps:

  • Heat oven to 375°F. Place pie crust in 9-inch glass pie plate as directed on package for one-crust filled pie. Bake about 8 minutes or until light golden brown.
  • In large bowl, beat sugar, flour and cream cheese with electric mixer on low speed until smooth; reserve 1/2 cup in small bowl. Add remaining ingredients except milk to cream cheese mixture. Beat on medium speed, scraping bowl constantly, until smooth. Pour into crust.
  • Stir milk into reserved cream cheese mixture. Spoon over pumpkin mixture. Cut through cream cheese and pumpkin mixtures with knife in S-shaped curves in one continuous motion for marbled design. Turn pie plate one-fourth turn and repeat.
  • Cover edge of crust with 2- to 3-inch strip of foil to prevent excessive browning; remove foil for last 15 minutes of baking.
