4 ounces whipped cream cheese, room temperature
1 1/2 tablespoons fresh chives
4 slices honey-baked ham, very thinly sliced
watercress leaf, stems removed
4 slices white bread, cut thin (slice regular pieces in half if you have to)

Steps:

  • Mix cream cheese and chives together well.
  • Spread bread slices with the cream cheese mixture. Cover half the slices with watercress leaves, pressing them into the cream cheese. Top the watercress with the ham slices. Cover with the remaining bread slices.
  • Cut the crusts off each sandwich and then cut them in quarters or thirds.

Nonstick cooking spray
4 eggs
4 egg whites
1/4 cup minced chives
1/4 cup minced parsley
4 whole-wheat English muffins
4 1/2-inch round slices Canadian bacon
1 large beefsteak tomato, sliced into 1/2-inch thick slices

Steps:

  • Crack eggs and egg whites into a bowl and whisk. Add chives and parsley and stir to incorporate. Spray a large nonstick skillet with cooking spray. Ladle 1/4 egg mixture into skillet and cook, omelet style, until eggs are cooked through, about 1 to 2 minutes per side. Slide omelet onto a plate and repeat with remaining eggs; cover with foil to keep warm. In same skillet, heat Canadian bacon until warm, about 1 to 2 minutes per side. Toast English muffin. Fold omelet in to fit English muffin, then place omelet on 1 muffin half. Top with a bacon slice, then tomato, then top with other muffin half.

10 thin slices white bread
10 thin slices whole wheat bread
10 thin slices pumpernickel bread
Butter or margarine
1 large cucumber, peeled, thinly sliced
1 package (3 oz) cream cheese, softened
1/4 cup chopped fresh watercress, finely chopped
1 1/2 cups finely chopped cooked ham
1/4 cup finely chopped fresh parsley
3 tablespoons mayonnaise or salad dressing
1 tablespoon Dijon mustard
Edible flowers, fresh dill weed, radish slices, if desired

Steps:

  • Cut breads into shapes with 2- to 3-inch cookie cutters (or remove crusts from breads and cut each slice into triangles or squares).
  • Spread butter over white bread shapes; top each with cucumber. In small bowl, mix cream cheese and watercress until well blended. Spread over pumpernickel bread shapes. In another small bowl, mix ham, parsley, mayonnaise and mustard until well blended. Spread over whole wheat bread shapes.
  • Arrange sandwiches on serving platter. Garnish with edible flowers, fresh dill weed or radish slices. Store in refrigerator.

3 thin slices smoked ham
Green leaf lettuce

Steps:

  • In a small bowl, combine mayonnaise, mustard, lemon juice, and dill. Season with salt and pepper; set dill spread aside.
  • Place cheese on both slices of bread; top with dill spread. Place ham and lettuce on one slice; top with other slice. Refrigerate, wrapped in parchment or waxed paper, up to overnight.
